Vegetable Lime Chickpea Chili

Jump to Recipe

Last week packed up our mini-van and drove to Illinois to visit my family. Josh helped my dad with a home renovation project while I spent most of my time in the kitchen. I was much more useful in the kitchen. I don’t do so well with sheetrock, sanding, and painting. I don’t think the guys minded because every time they came into the kitchen they had something yummy to sample.

One night, we had family and friends over for a soup and chili party. I made Vegetable Lime Chickpea Chili from our good friend Jenny’s new cookbook, The Picky Palate Cookbook. When I saw this chili recipe in Jenny’s book, I immediately bookmarked it. I love a chili that is packed with vegetables. Plus, this recipe has chickpeas, cilantro, and lime-all of my favorites.

This chili can be made in about 30 minutes, which makes it perfect for a weeknight meal. All of the ingredients get tossed into one large pot so there isn’t a lot of clean-up. I also love this recipe because it is vegan, gluten-free, and vegetarian-which makes it perfect for serving a crowd. And if you are a meat lover, I promise you won’t miss the meat. This chili is full of flavor and very satisfying. And the kiddos will love all of the colorful vegetables. Caleb devoured his bowl of chili.

Everyone at the party loved the Vegetable Lime Chickpea Chili. It was actually the first thing to go! We are going to make this chili all winter long. It’s already a family favorite. Thanks Jenny for the fabulous recipe!

Make sure you check out Jenny’s new book, The Picky Palate Cookbook. It is filled with over 100 delicious family friendly recipes-starting with breakfast and ending with dessert. Almost all of the recipes can be made with ingredients you already have in your kitchen. We started bookmarking recipes in the book, but stopped because we were bookmarking them all! We can’t wait to cook, bake, and eat our way through The Picky Palate Cookbook. We love Jenny’s simple and creative style. Her recipes are easy to follow and a hit every time! Congratulations Jenny! We are loving the book!

  5. Our favorite weeknight meal is called “Pasta Mama” – it’s a dish with pasta, egg, garlic and parmesan cheese. It’s really quick to make, we add some veggies and I don’t feel as bad about eating pasta for dinner because at least we’re getting some protein from the egg!

  15. I have lots of weeknight recipes I fall back on. But really my favorites are anything I can put in a crock pot the night before, stow in the frig overnight, and start the next morning. That way dinner’s waiting on me, not the other way around.

  16. Well for me I have not favorite … I’m always busy with work and everyday life so what I discovered is that cooking your dishes that you provide or grabbing a cookbook opening a page and just making that helps keep everyone happy and we never eat the same foods …. I try to always keep staples that ate most common used to avoid not having everything needed for the meal and usually I enjoy what I make better if its not planned I feel that I have more options following others ideas

  17. My favorite weeknight meal is tacos!! We love all kinds, but especially black bean and rice….with a healthy scoop of homemade guacamole!!

  18. I am new to your blog and I love reading your stories. My 20 yr old daughter sent me your pumpkin french toast recipe and it will be the first recipe we conquer together. She is in college in DC and loves food. We did a wonderful cooking class with Sidney and Ali in France at Le Calabash, and ever since then my daughter is obsessed with reading restaurant menus and recipes.
Thank you for sharing your treasures!
    Happy Thanksgiving!

  19. Chicken tortilla soup–practically the only thing everyone in the family will eat with no complaints. My kids call it “chip soup” because they add crushed tortilla chips as a topping.

  20. My favorite weeknight meal is something that was prepared on the weekend and is waiting to be reheated on a week night. I’m usually too lazy to make a meal on a weeknight, so if I have to I go with something easy – a fried egg sandwich, frozen veggie burger, etc.

  21. my favorite (in cold weather) is thick, hearty, spicy chili served over vetkoek (said FET-cook). It’s a South African fried bread that my Afrikaaner husband introduced me to. So yummy! So filling! So perfect after a biting cold day!

  22. grilled cheese is probably my fave weeknight meal πŸ™‚ or i’ll make a giant batch of veggie burgers on sunday and freeze them for throughout the week! πŸ™‚

  23. One of my favorites is quinoa and chick pea salad. In the summer time, I add cucumber and tomatoes and use a curried vinaigrette. It is packed with protein and a great main dish salad. When the temperatures drop, I swap out the cucumbers and fresh tomatoes with grilled eggplant and sun dried tomatoes. I can eat it chilled as a salad with curried yogurt dressing or I serve it warm as a pilaf.

  24. My favorite weeknight meal is my quick and easy jambalaya! It’s so simple, my husband can even make it. And it takes less than 10 minutes to cook (unreal, I know). It makes enough food for not only dinner but also a lunch each for my husband and me.

  25. I can’t wait to try this recipe. Just love Chili for a weeknight meal because it’s quick and easy and usually something that can be setup in a slow cooker and it’s ready when you walk in the door. That’s the best part.

  26. One of my favorites is stir fry! It’s so easy to put chicken (or beef) in a marinade the night before, put the rice cooker on a timer setting – then when you get home from work the next day, cook up a bag of frozen stir fry veggies (fresh is best, but time isn’t always there) and the meat and it’s all set! πŸ™‚

  27. My favorite meal is one similar to this. It’s a tomato chickpea soup – vegetarian, vegan, and so very healthy! I love it!

  28. Definitely seasonal. I would say our current go to meal is stir fry salad. Stir fry veggies on a bed of lettuce rather than rice.

  31. I’m making this tonight…it could possibly turn into out favorite weeknight meal!

We love soup this time of year. Our current favorites are a simple Lemon Chicken Orzo and another easy one, Santa Fe Soup. They are totally different, but equally yummy!

  32. We do a fair share of crockpot meals on the week days, including a lot of soups. However, our favorite foods lately are international cuisine – mainly indian or Chinese. It is amazingly quick and healthy to put together from meat (or sometimes beans) and veggies with all of those exotic spices!

  33. My favorite week night meal is anything fast and easy to make. A lot if times I cook on the weekends so eating during the week is a no brainer.

  34. My favorite weeknight meal is turkey sausage and peppers! We throw them in crockpot with tomato sauce and let it simmer all day long. With toasty whole grain bread, and a side salad, it’s a perfect, warm, & easy weeknight dinner!

I am looking forward to trying this Chili!!! Chickpeas are my favorite and I love finding new ways to use them! Thanks for the recipe!

  35. My favorite weekday meal is a huge bowl of homemade vegetable soup. The more vegetables, the better! Can’t wait to make your “Vegetable Lime Chickpea Chili”.

  37. I have been making chili every couple of weekends: 3 bean chili, veggie chili, meat chili. Then I have left-overs for my long day at work, Tuesdays. All chilis work for me!

  38. One of our favorite week night meals is crepes! The topping choices are the best and include raspberry jam, peanut butter, chocolate drizzle or maple syrup. Why just choose one! We love breakfast for dinner.

  39. My favorite weeknight meal is anything gluten free and vegan that doesn’t take hours to prepare AND tastes delicious, so this chili is right up my alley. I eat less healthy meals too but since cancer struck, it feels wonderful to fuel my body with “clean” food. That’s why I appreciate your blog recipes so much. Thanks!

  40. Even though I am a pan Asian chef by trade and training, my family loves my husband’s Spaghetti and Meatballs during the week. We always make enough for leftover’s. Thanks for the Chili recipe too. I make a similar one with Lime. lemongrass and some hot chili’s to give it a real Thai flavor.

  41. My favorite weeknight meal which I unfortunately don’t make often is a recipe I call tuxedo chicken. Combining chicken breasts, bowtie pasta, a white sauce, broccoli, garlic and mushrooms, it is so delicious and very filling.

  42. My favorite weekend meal is some kind of taco’s. Fish taco’s and brisket taco’s are my two favorites!!! This soup looks divine! I couldn’t find her cookbook in our local bookstore this weekend!! Can’t wait to get a peek!!!

  43. My favorite weeknight meal is super easy and very satisfying! I take whatever veggies I have on hand, dice everything fine, sautee with garlic and some spices (whatever I’m in the mood for), make a batch of Farro, then combine it all, add breadcrumbs and lots of cheese, then bake in the oven until I get a nice crispy top. Delicious and healthy!!

  44. My favorite weeknight meal is simple, easy to put together things like lentil tacos, omlettes or roasted veggies topped with an over easy egg.

  45. I love making soup on a weeknight. I can throw things in a pot whenever I get time in the afternoon and let it simmer away until everyone’s home and actually ready to eat.

  46. The favorite changes depending on the season. Right now with winter being upon us, our favorites are chicken enchilada soup and loaded baked potato soup.

  54. This looks sooooo good. Especially since Texas finally got hit with a slight cool spell πŸ™‚ One of our favorite weeknight meals is actually Jenny’s Shredded BBQ Chicken Ranch Spaghetti. It’s one of the first of many recipes that I tried of hers and became an instant family favorite. It’s super easy to make and packed full of flavor. Our two year old gobbles it up.

  55. Pasta and cheese. Easily adaptable for the non-vegetarian who likes to add pepperoni or chicken, and for the vegetarian (me) I add some vegetables like broccoli or spinach.

  56. Favorite weekday meal includes fish or shellfish – especially when its freshly caught. Lots of salmon and crab here in the NW!

  57. Our favorite weeknight meal starts with a big salad then pasta with meat sauce or meatballs (depending on my mood and ambition) and garlic bread.

  58. I try to stick to easy stuff – tilapia, turkey burgers, chicken sausage. I also do simple sides like baked potatoes and steamed veggies in the bag.

  59. If I’m going for quick and easy, pasta, veggies pulled from the freezer, and a veggie burger. If I have a little bit more time, then pasta, pan seared fish (salmon, tilapia), and veggies – and if I have any left (I make a batch and freeze in ice cube trays at the end of the summer), I’ll add some pesto to the dish. Otherwise, it’s usually a red sauce on the pasta and a little s&p or a pre-made spice blend on the fish.

  60. In the winter our favorite weeknight meal is definitely a baked potato bar with lots of toppings. Sometimes the toppings include chili, broccoli cheese soup, a homemade sauce with cream cheese and ham or maybe just cheese sauce but always with sour cream or ranch dressing, grated cheese and bacon bits or chunked ham. Everyone can have their favorite meal.

  69. Hmmm…. I love pasta so as boring as it sounds, the kids and I love spaghetti or tortellini night with some homemade breadsticks. The husband? Not so much but he eats it anyway.

  70. One of my favorite weeknight meals is a quick “kitchen sink” skillet sautΓ©. I call it “kitchen sink skillet” because I am looking around in my kitchen and refrigerator to see what needs to be used up while it’s still fresh, and it often feels like I toss in everything but the kitchen sink!

Really, I don’t. I am comfortable with my knowledge when it comes to what pairs well with what, and when I come up with a winner, I am supremely happy… and if it’s less than a homerun, it’s still rib-sticking, lip-smacking good. End result? My belly is delighted, no matter what.

This chili recipe looks totally doable and fun.. will most definitely give it a try, thank you!

  71. This chili looks delicious! My favorite thing to make on weeknights is soup of any kind. And there are always leftovers to take to work for lunch the next day!

  77. We love chili in my house. Our favorite weeknight dinner is chicken Parmesan.
Can’t wait to make that chili, it looks so delicious!

  78. My favorite weeknight meal is pizza. I make the dough and sauce ahead and freeze them. I simply pop in the fridge in the morning and when I get home from work, roll a pizza out and use what we have in the house as toppings. Always a winner with the family.

  79. Favorite weeknight meal is definitely pasta. I change it up with what vegetables are in season. Lately I’ve been loving adding chili oil for heat and flavor!

  84. My favorite, easy weeknight meal is oven baked chicken fajitas. They are delicious and so quick to put together! They only take about 25 minutes to bake & are very kid-friendly!

  85. Anything that can be made in one pot or pan! Lately it has been a spicy pasta with Turkey sausage where the pasta doesn’t require bring cooked separately.

  86. Comforting ham & potato cheesy soup. I know that doesn’t sound like a prize winning recipe title but that’s what my family calls it.

  87. I love homemade pizza on the grill. Even when it’s nugget outside it only takes a few minutes and each kid can customize how they want it!

  88. My favorite weeknight dinner is grownup grilled cheese. I switch up what type of cheese I use but load it up with vegetables and sometimes meat. It is so quick and easy that whenever I’m running behind for the night, I always fall back on that.

  94. It depends on the time of the year. In the fall, I enjoy mashed squash, saucy and spicy lentils, and mushrooms sauteed in olive oil with a splash of acid and salt. The summer is tempeh and lettuce and peppers on rye bread with hummus. The winter leaves me craving for gulyas leves. Spring is a lovely time for vegetable sautes.

  95. If I don’t care about being good it would be PASTA, PASTA, PASTA…..love pasta dishes, but at this stage of life trying to cut back. OY!

  96. My favorite weeknight meal is anything I can make in the crockpot such as the cola-braised pot roast we had tonight. Yum!

  97. My son loooooves spaghetti, so it is a weekly item on our menu. I make one big pot and we have enough for a couple of dinners plus my lunch. I add fresh zucchini and carrots, diced very small, into the meatsauce. If I don’t have fresh veggies, I toss in some frozen veggies (my fave: Trader Joe’s Organic Foursome). I add a green salad and “garlic” bread… there is no garlic involved, just toasted baguette w/ butter, but he says it’s garlic bread so I roll with it.

  98. We love a good soup or chili with a chunk of homemade whole wheat bread. It’s simply satisfying! I’d love to win a cookbook to find more recipes of yummy food for my family.

  99. My favorite weeknight meal is pizza – made by me. I have no shame in using Boboli pizza crusts to save time, but the toppings are all me. My favorite is red onion and yellow pepper – I swear, it is the best sauteed combination! Try it sometime!

Thanks for your creativity and your generosity to share on your site!!

  103. My family pretty much eats anything I put out during the week… I like pasta for its convenience, but soups are good too. If my son had his way, he’d eat paninis!
