Two Peas and Their Pod

Creamy Avocado Pasta

We had a few ripe avocados leftover after making our Guacamole Grilled Cheese Sandwiches and I didn’t want them to go to waste, so I made one of our favorite pasta dishes-Creamy Avocado Pasta. It may not be the prettiest pasta dish, but it might be the tastiest. Trust me on this one. If you are an avocado lover, you will go crazy for this pasta.

You can have this delicious pasta dish on your table in 15 minutes. All you have to do is cook your pasta (we use whole wheat spaghetti, but any pasta will work) and make the simple sauce.  To make the sauce you combine avocado, garlic, fresh lime juice, cilantro, salt, and pepper in a food processor or blender and process until smooth. Mix the sauce with the hot pasta and you are good to go. I told you it was easy. The pasta is rich, thick, and creamy. I love that there is no butter or cream involved. The avocados create a smooth and creamy sauce without any help. This recipe is vegetarian, vegan, and can be gluten-free-if you use gluten-free pasta.

I could eat this pasta dish every night of the week. It is one of our “go to” meals when we are rushed, but still craving good home cooking. If you are looking for an easy healthy recipe that will wow your tastebuds, make this Creamy Avocado Pasta.

Creamy Avocado Pasta

Yield: Serves 2

Prep Time: 5 minutes

Cook Time: 10 minutes

This delicious Creamy Avocado Pasta can be on your table in 15 minutes. It is one of our "go to" meals.

Ingredients:

6 ounces pasta, we used whole wheat spaghetti
1 large ripe Avocado, pitted and peel removed
1 tablespoon fresh lime juice
1 clove garlic, minced
1/4 cup chopped fresh cilantro
1/2 teaspoon kosher salt, or to taste
Freshly ground black pepper, to taste

Directions:

1. Bring water to a boil in a medium sized pot. Salt the water and add in your pasta, reduce heat to medium, and cook until Al Dente, about 8-10 minutes.

2. While the pasta is cooking, make the sauce by placing the avocado, garlic, lime juice, cilantro, salt and pepper into a food processor or blender. Process until smooth and creamy.

3. When pasta is done cooking, drain and place pasta into a large bowl. Add the sauce to the pasta and toss until pasta is well coated. Season with additional salt and pepper, if desired. Serve immediately.

Note: This pasta dish is best eaten the day it is made.

I’ve never thought of adding avocado to pasta, but it totally makes sense! It’s healthier than cream sauce and gobbs of cheese.

This will be a must in my recipe book. Since I was forbidden to eat dairy products I have a lot of things that I cann’t eat, one of them is our peruvian pesto, it’s a pesto but with fresh cheese and milk., and it’s one of my favorites, and I can’t have it.
But this one, made with avocado, in addition to have no dairy should be a light version of a pasta.

this was AMAZING! i was a little worried my kids wouldn’t like it because they ‘claim’ to not like avocados. so i didn’t tell them what was in it until they were ‘ooing’ and ‘awing’ at the table. my 5 year old said, “mom, i guess i do like avocados sometimes’. thank you so much for posting this recipe. i am a total fan now! thank you, thank you!

Yes, I’ve got to get this on the regular roster in our house. I love everything in here and I also love how easy and quick it is. We were at Costco today and I passed up buying a large bag of avocados and am now kicking myself.

Yum! In your professional opinion, do you think this would still be good if I put in a thermos for my kids lunch? Do you think the avocado would turn brown?

I made this the other night for dinner. It was quick, easy, and delicious! My husband thought it was a pesto sauce when he looked at his plate – haha! He liked it better with some parmesan cheese sprinkled on top but I liked it just the way it was. I had such a light refreshing flavor. Thanks so much for another great recipe! I will definitely make this again.

We tried your recipe last week and it was AWESOME! A huge hit for our whole family and my six year old who normally eats like a mouse gobbled it up. Then, she grabbed the bowl for seconds. Thank you especially for helping me find something my girls love!

This was sooo good!!! I made a huge batch… defiantly recommend a food processor as my blender couldn’t make this so I had to hand cream! But I made enough to have extra for work the next day thinking my husband wouldn’t like it.. When I woke up he had eaten both containers when he got home from his shift!!! Can’t wait to make again!

Tried this recipe last night. Great use of avocados. I did find, however, that my blender didn’t do that smooth, creamy like it should have. Ended up adding some extra virgin olive oil and water from the pasta boil to make it blend up.
