This Sweet Potato Turkey Black Bean Bake has been one of those weeknight wins that just keeps showing up in our dinner rotation because it’s EASY and my family loves it! It’s hearty, satisfying, and made from simple ingredients I always have on hand.
I love how everything comes together here. The sweet potatoes roast until they’re soft and a little caramelized, which adds the best natural sweetness. Then there’s a simple ground turkey and black bean mixture that’s seasoned with taco spices and fire-roasted tomatoes…nothing fancy, just really good flavor. Everything gets layered together and finished with melty cheese and fresh toppings.

Ingredients (with Helpful Notes)

- Taco seasoning: Use my homemade taco seasoning or your favorite store-bought seasoning.
- Cheese: Monterey Jack melts beautifully, but cheddar works great too. Pepper Jack is delicious if you want a little heat.

- Avocado or guacamole: Creamy avocado balances the smoky, savory flavors perfectly.

Tips for Making the Recipe

Sweet Potato Turkey Black Bean Bake
Ingredients
For the sweet potatoes:
- 2 medium sweet potatoes, cut into 1/2-inch cubes (about 5 cups)
- 1 tablespoon olive oil
- Kosher salt and black pepper, taste
For the turkey bean mixture:
- 1 lb ground turkey, can use ground beef or chicken
- 1 red bell pepper, stemmed, seeds removed, and diced
- 1/2 yellow onion, diced
- Kosher salt and black pepper, to taste
- 3 cloves garlic, minced
- 1 (15 oz) can fire roasted tomatoes, with juices
- 1 (15 oz) can black beans, rinsed and drained
- 3 tablespoons taco seasoning
- 1/4 cup chopped cilantro
- 1 1/2 cups shredded Monterey jack or cheddar cheese
For the toppings:
- Cilantro
- Sliced green onions
- Sliced Avocado or Guacamole
- Jalapeño ranch
Instructions
- Preheat oven. Preheat oven to 400°F.
- Roast the sweet potatoes. Place the sweet potatoes in a greased 9×13-inch baking dish. Toss with olive oil, salt, and pepper. Spread in an even layer, it’s ok if some of the potatoes are overlapping a little. Roast for 20 to 25 minutes, tossing once halfway through, until tender.
- Cook the turkey mixture. Meanwhile, heat a large skillet over medium heat. Add the ground turkey, onion, and bell pepper. Season with salt and pepper. Cook, breaking up the meat, until the turkey is cooked through, and the vegetables are softened.
- Add garlic & simmer. Stir in the garlic and cook for 1 minute. Add the fire-roasted tomatoes, black beans, and taco seasoning. Stir to combine and simmer for 5 minutes. Remove from heat and stir in the cilantro.
- Assemble. Spoon the turkey and bean mixture evenly over the roasted sweet potatoes in the baking dish. Sprinkle with cheese.
- Bake. Bake for 10 minutes, or until the cheese is melted.
- Finish & serve. Top with cilantro, avocado, and jalapeño ranch. Serve warm.
