A Fresh Twist on Classic Potato Salad

Potato salad is one of those timeless side dishes that always has a spot at my summer gatherings. Over the years, I’ve made so many versions, from my family’s favorite Classic Potato Salad to my fresh and flavorful No-Mayo Potato Salad, my crispy Smashed Potato Salad, and my colorful Potato and Green Bean Salad. I love how a simple bowl of potatoes can take on completely different flavors depending on the ingredients you add.

This Cauliflower Potato Salad is my newest favorite. It takes the comforting flavors we love in traditional potato salad and adds roasted cauliflower for extra flavor, texture, and freshness. Instead of a mayo-based dressing, this version is tossed with a bright Dijon vinaigrette made with lemon juice, garlic, fresh herbs, and a touch of honey.

The secret is roasting the cauliflower until it’s golden and caramelized. Those crispy edges add so much flavor and pair perfectly with creamy Yukon gold potatoes, crunchy celery, tangy dill pickles, and plenty of fresh dill and parsley. It’s familiar enough for classic potato salad lovers but unique enough to stand out at your next gathering.

I love making this salad for summer BBQs, picnics, and easy dinners because it can be made ahead and tastes delicious served chilled or at room temperature. Ingredients (with Helpful Notes)

For the Salad

  • Cauliflower: Roast until tender and caramelized for the best flavor. Roasting completely transforms cauliflower and adds delicious depth.
  • Olive oil: Helps the cauliflower brown and caramelize.
  • Kosher salt & black pepper: Season the cauliflower before roasting and adjust again before serving.
  • Petite Yukon gold potatoes: Their creamy texture holds up beautifully after cooking. Leave the skins on for extra color and texture.

For the Dressing

  • Olive oil: Creates a light, flavorful vinaigrette instead of a heavy mayo dressing.
  • Red onion: Finely dice so it blends evenly into the dressing.
  • Fresh lemon juice: Brightens all of the flavors.
  • Red wine vinegar: Adds a tangy bite that balances the richness of the potatoes.
  • Dijon mustard: Helps emulsify the dressing while adding savory flavor.
  • Honey: Just enough to balance the acidity.
  • Garlic: Fresh garlic gives the dressing bold flavor.

For Finishing

  • Celery: Adds fresh crunch.
  • Dill pickles: The salty, tangy bite makes the salad irresistible.
  • Fresh dill: One of the signature flavors in this salad.
  • Fresh parsley: Adds freshness and color.

Tips for Making Cauliflower Potato Salad

Roast the cauliflower until golden. Don’t pull the cauliflower out as soon as it’s tender. Let it roast until the edges are lightly browned and caramelized. Those golden bits add so much flavor and make this salad extra special.

Salt the potato cooking water. Potatoes absorb flavor as they cook, so seasoning the water is an easy way to build flavor from the beginning.

Use petite Yukon gold potatoes. They have a naturally buttery texture and hold their shape well, making them perfect for potato salad. You can leave the skins on for extra color and texture.

Don’t overcook the potatoes. You want them fork tender but not falling apart. They should hold their shape when tossed with the dressing and other ingredients.

Dress the potatoes while they are slightly warm. Warm potatoes soak up the Dijon vinaigrette beautifully, which means more flavor in every bite.

Let the flavors come together. This salad is delicious right away, but I recommend letting it chill for at least 30 minutes before serving. The potatoes, cauliflower, herbs, and dressing have time to really meld together.

Taste and adjust before serving. Potatoes can handle plenty of seasoning, so give the salad a final taste and add more salt, pepper, lemon juice, or fresh herbs if needed.

Serve it your way. This cauliflower potato salad is delicious cold straight from the fridge or served closer to room temperature, making it an easy option for entertaining.

How to Store

  • Store leftover cauliflower potato salad in an airtight container in the refrigerator for up to 4 days.
  • Because this salad is made with a vinaigrette instead of mayonnaise, it holds up especially well. If it has been refrigerated for several hours, let it sit at room temperature for 15 to 20 minutes before serving and give it a gentle stir. You can also add a small drizzle of olive oil or squeeze of fresh lemon juice to freshen it up if needed.
  • I don’t recommend freezing this salad because the potatoes and cauliflower become mushy after thawing.

Cauliflower Potato Salad

This fresh Cauliflower Potato Salad combines roasted cauliflower, buttery Yukon gold potatoes, crunchy celery, dill pickles, and fresh herbs tossed in a bright homemade Dijon vinaigrette. It's an easy make-ahead side dish that's perfect for BBQs, potlucks, picnics, and summer dinners.

Ingredients
  

For the cauliflower and potatoes:

  • 1 medium head cauliflower, cut into florets
  • 1 tablespoon olive oil
  • Kosher salt and black pepper, to taste
  • 1 1/2 lbs petite Yukon gold potatoes

For the dressing:

  • 1/2 cup olive oil
  • 1/4 cup diced red onion
  • 2 tablespoons lemon juice
  • 1 1/2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey, (can use pure maple syrup)
  • 1 clove garlic, minced
  • Kosher salt and black pepper, to taste

For the salad:

  • 1/2 cup chopped celery
  • 1/2 cup diced dill pickles
  • 1/3 cup chopped dill
  • 1/3 cup chopped parsley

Instructions
 

  • Roast the Cauliflower: Preheat the oven to 400°F. Place the cauliflower florets on a large baking sheet. Drizzle with the olive oil and season with salt and pepper. Toss until evenly coated. Roast for 25 minutes, or until tender and lightly golden. Let cool slightly.
  • Cook the Potatoes: Meanwhile, place the potatoes in a large pot and cover with cold water. Bring to a boil and add a generous pinch of salt. Cook until fork-tender, about 15 to 20 minutes. Drain and let cool to room temperature. Cut the potatoes in half.
  • Make the Dressing: In a large bowl, whisk together the olive oil, red onion, lemon juice, red wine vinegar, Dijon mustard, honey, garlic, salt, and pepper until well combined.
  • Assemble the Salad: Add the roasted cauliflower, potatoes, celery, dill pickles, dill, and parsley to the bowl with the dressing. Toss gently until everything is well coated.
  • Serve: Taste and season with additional salt and pepper, if needed. Serve. You can also Refrigerate for at least 30 minutes before serving to allow the flavors to meld. The salad is good chilled or at room temperature.

Notes

  • Roast the cauliflower until lightly browned for the best flavor.
  • Salt the potato cooking water well.
  • Toss the potatoes with the dressing while they’re still slightly warm so they absorb more flavor.
  • This salad can be served chilled or at room temperature.
  • The flavor improves after chilling for 30 minutes.
  • Fresh dill really makes this salad shine, don’t skip it!
  • Leftovers keep well for up to 4 days in the refrigerator.
