Fresh Summer Couscous Salad with Honey Lime Dressing

Every summer I end up making this couscous salad on repeat. It has everything I love about summer produce in one bowl…sweet peaches, juicy corn, crunchy cucumbers, fresh herbs, and a bright homemade honey lime dressing that brings everything together.

One of my favorite parts is the quick pickled jalapeños and red onion. Don’t let the jalapeños scare you! Once they’re quickly pickled (which only takes about 20 to 30 minutes), they lose most of their bite and become bright, tangy, and just slightly spicy. They add the perfect little kick without overpowering the salad, and they’re especially delicious with the sweet peaches. It’s one of those flavor combinations that surprises people in the best way.

I also love using pearl (Israeli) couscous because it gives the salad a hearty, satisfying texture without feeling heavy. Toasting the couscous before cooking adds a subtle nutty flavor that makes a big difference.

This is the kind of salad that belongs at every summer gathering. Serve it with grilled chicken, burgers, salmon, steak, or shrimp, pack it for picnics, bring it to potlucks, or enjoy it for lunch throughout the week. It’s fresh, colorful, and always one of the first dishes to disappear.

For the Quick Pickled Jalapeños & Red Onion

  • Jalapeño: Remove the seeds if you want even less heat. The quick pickling mellows the pepper so it adds just a gentle warmth instead of being overly spicy.
  • Red onion: Thin slices soften as they pickle and add a sweet, tangy bite.
  • Apple cider vinegar: Gives the vegetables a bright, lightly sweet tang.
  • Sugar & kosher salt: Balance the vinegar and help mellow the vegetables.
  • Water: Softens the acidity so the pickled vegetables aren’t too sharp.

For the Salad

  • Pearl (Israeli) couscous: Its chewy texture makes the salad hearty and satisfying. Toast it first for extra flavor.
  • Sweet corn: Fresh summer corn is best. Charring it adds smoky sweetness that pairs beautifully with the peaches.
  • Peach: Choose a ripe but still slightly firm peach so it holds its shape in the salad.
  • Bell pepper: Red, orange, or yellow all work well and add sweetness and crunch.
  • Cucumber: Adds cool, crisp texture. English or Persian cucumbers are great because they have fewer seeds.
  • Feta cheese: Adds a creamy, salty finish that balances the sweet fruit.
  • Fresh cilantro: Adds brightness and fresh flavor.
  • Fresh mint: Makes the salad taste extra fresh and summery.

For the Honey Lime Dressing

  • Olive oil: Use a good-quality extra virgin olive oil.
  • Fresh lime juice: Freshly squeezed is best for bright flavor.

  • Kosher salt & black pepper: Season to taste.

Tips for Making Summer Couscous Salad

Toast the couscous first. Toasting the pearl couscous in a little olive oil before cooking gives it a delicious nutty flavor that’s worth the extra few minutes.

Cool the couscous completely. Warm couscous can soften the vegetables and herbs, so let it cool before assembling the salad.

Don’t skip the quick pickles. The quick pickled jalapeños and red onion are easy to make and add bright, tangy flavor that takes this salad to the next level. The pickled jalapeños aren’t overly spicy—they just add a subtle kick that pairs perfectly with the sweet peaches.

Char the corn. A little char adds smoky sweetness and extra depth of flavor. You can grill the corn, cook it in a grill pan, or char it directly over a gas flame.

Use ripe but firm peaches. They should be sweet and juicy, but still firm enough to hold their shape when tossed with the salad.

Wait to add the dressing if making ahead. You can prep all of the components in advance, but for the freshest texture, toss everything together with the dressing just before serving.

Taste before serving. Depending on how sweet your peaches are and how salty your feta is, you may want an extra squeeze of fresh lime juice or a pinch of salt to brighten the flavors.

Summer Couscous Salad

Ingredients
  

For the pickled jalapeño and red onion:

  • 1 jalapeño thinly sliced and seeded
  • 1/4 cup thinly sliced red onion
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 2 teaspoons granulated sugar
  • 1/2 teaspoon kosher salt

For the salad:

  • 8 oz pearl couscous, Israeli couscous
  • 1 ear sweet corn, husked
  • 1 large peach, diced (about 1 cup)
  • 1 red or yellow bell pepper, seed and diced
  • 1 cup diced cucumber
  • 1/3 cup feta cheese
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint

For the dressing:

  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 2 teaspoons honey
  • 1 clove garlic, minced
  • Kosher salt and pepper, to taste

Instructions
 

  • Pickle the Jalapeño & Onion: In a small jar or bowl, combine the jalapeño, red onion, apple cider vinegar, water, sugar, and salt. Stir until the sugar and salt dissolve. Let sit for at least 20 to 30 minutes while you prepare the salad.
  • Toast & Cook the Couscous: Heat 1 tablespoon olive oil in a medium saucepan over medium heat. Add the pearled couscous and cook, stirring frequently, for 2 to 3 minutes, or until lightly toasted and fragrant. Add water according to the package directions and bring to a boil. Cook until tender. Drain any excess water, if needed, and let cool.
  • Char the Corn: Char the corn on a grill, grill pan, or directly over a gas flame until lightly blackened in spots. Let cool, then cut the kernels off the cob.
  • Make the Dressing: In a small bowl or jar, whisk together the olive oil, lime juice, honey, garlic, salt, and pepper until smooth.
  • Assemble the Salad: In a large bowl, combine the cooled couscous, corn, peach, bell pepper, cucumber, feta, cilantro, and mint. Drain the pickled jalapeño and red onion and add them to the salad.
  • Toss & Serve: Pour the dressing over the salad and toss until evenly coated. Taste and season with salt, if necessary. Serve immediately or chill until ready to serve.

Notes

  • Toasting the pearl couscous adds extra flavor and is worth the extra few minutes.
  • The quick pickled jalapeños are not overly spicy. Pickling mellows their heat so they add just a subtle kick that pairs perfectly with the sweet peaches.
