Happy Cinco de Mayo! What are your party plans? We hope you are celebrating with good food and fun. If you need a few last minute menu ideas, check out our favorite Cinco de Mayo recipes.

Yes, I am posting another lime recipe. My Baking Addiction made me do it. When I saw her post that started out with, “Are you a lime lover?” I knew I was in trouble. Especially because it was a cookie recipe.  I tried to ignore the post, but it kept popping up in my mind at the most random times. These cookies were begging to be baked.

Over the weekend, I made a batch and I don’t know if I should love these cookies or hate them. They are DIVINE! So divine that I didn’t want to share. I took one bite and immediately knew I was in big trouble. Josh was outside doing yard work, so the question was-do I hurry and hide the cookies or share my divine discovery?

Josh ended up coming in the house to grab a drink and smelled the cookies. He quickly grabbed a freshly baked cookie from the cooling rack. Of course he loved them. They are soft, chewy, with a hint of toasted coconut, and the perfect kick of lime. What is not to love? Especially for lime lovers, like us.

I could go on and on about how fabulous these cookies are, but instead, go make a batch. You will see! Make them today to end your Cinco de Mayo party with a sweet bang!

And if you are wondering if I would of shared the cookies with Josh if he didn’t come inside-of course I would of:)

Instructions

  • 1. Preheat oven to 350 degrees. Line cookie sheets with parchment paper or Silpats.
  • 2. In a small bowl, whisk together flour, baking soda, baking powder and salt. Set aside.
  • 3. Using a mixer, beat together the butter and sugar until smooth and very fluffy. This will take a couple of minutes.
  • 4. Beat in the egg, vanilla extract, lime juice and lime zest. Mix until well combined.
  • 5. Gradually add in the dry ingredients and toasted coconut. Mix until combined, don’t over mix.
  • 6. Roll rounded teaspoonfuls of cookie dough into balls. Put sugar in a small bowl and roll cookie dough balls in the sugar. Place on lined cookie sheets about 1 ½ inches apart.
  • 7. Bake 8 to 10 minutes or until lightly browned. The cookies will start to crack a little bit.
  • 8. Let stand on cookie sheet two minutes. Move cookies to a cooling rack.
  • *Note-to toast the coconut-place coconut on lined baking sheet. Bake for 5-8 minutes at 350 degrees. Tossing a couple of times. Remove from oven when coconut is light brown.*

  28. I would love the soft and chewy element of these. They sound wonderful with the lime as well.

  29. “He put the lime in the coconut he drank-put them in a cookie and ate-them both up.”

Great cookies and you definitely don’t need to be celebrating CDM to eat them.

I didn’t celebrate I’m afraid. I attended a going-away barbecue for a friend and had hoped it might have a few 5/5 festivities – in the form of margaritas, but it was not to be.

  30. Coconut and lime!! This is the way to do it. Josh is so lucky he scored some of these! xo

  31. So glad to see that everything went so well with the bake sale and that y’all earned so much! I’m sure that was crazy trying to put it all together but so awesome that you took that on. I just need to live close so that I can try some of your cookies too. I’d rather eat them than bake them. 🙂

  32. How clever! I’m loving this lime zest in cookies thing — kind of like a tropical beverage in dessert-form! Which, incidentally, is basically what those tropical beverages are! 😉

    Happy Cinco de Mayo!

  33. These look delicious! I’m having one of those need a cookie days too, but like you no cookies in the house. Still debating if it’s worth making some right now. 🙂

  34. Yum! These cookies look wonderful! I made some coconut and lime cookies last year, but yours look so much better.

  35. These cookies look fantastic. I’m definitely going to try them. Strange question: Do you have any idea what makes a cookie chewy vs. cake like? Is it ingredients? Process?

    1. El-I am guessing the chewiness comes from under baking the cookies a little. You take these out a little early and let them set up for a couple minutes on the cookie sheet. The lime juice might help with the chewiness, but I really don’t know. Good question. Anyone know?

  36. Thanks for the under baking tip. That may be right. I’ve been trying to make a good thin chewy oatmeal cookie for years and have probably tried 25- 30 recipes to no avail. A few people have said corn syrup but that doesn’t seem right. Thank you!

  37. I am loving those photos! They’re beautiful. And of course the cookies look swell too 🙂

  38. Oh my! My husband is a huge key lime fan and I bet he would go nuts for these. The coconut makes them look magical. BTW, looking forward to our ventures

  39. The men chowed these cookies down at lunch today. Yes, they are on the make again list. One son suggested maybe a frosting on them….with just a hint of lime.

  40. These look sooo yummy thank you for posting the recipe! I have all the ingredients, except I could not find unsweetened coconut. Can I toast sweetened coconut, or just skip the toasting and use as is? I am drooooling to make these :o)

    1. Kath-Yes, you can use sweetened coconut, just toast it and add it in the mix. Let me know if you like them!

  41. I love the tropical ingredients, lime and coconut, in this recipe. It’s an intriguing combination wrapped up in a comforting chewy cookie. Great job!

  42. Oh. My. Goodness.
    These came out fantabulous!!!!
They would be perfect for a luncheon or a tea party, or just sitting and eating while watching TV :o)
I think next time, I will make them smaller though…

    1. Kath-Glad you liked the cookies. They really are perfect for anytime and all the time:)

  43. Thanks for posting the recipe! Loved the scent of lime, but I’m not sure I would bake these again. They were too soft for my taste (maybe not using an air-insulated baking sheet would help with that!) I substituted lime zest with lime oil and lowered the amount of sugar. I would also add more coconut if I bake them again. Almond extract is usually a nice combo with coconut so I’d probably add some of that too. Oh and using a tablespoon cookie scoop yielded me 50 cookies!!!

  44. Okay, we made these tonight and they were a hit! Not over-the-top lime-tasting at all. I think next time I might roll them in coconut as well as the sugar. I love coconut and can never have enough. But super chewy and a huge hit with the entire family!

  45. Just made these! They are SOOOO good! Really chewy and delicious. I would add a bit more lime juice/zest for more lime flavor.

  46. I made these this afternoon, and they were delicious! I could barely keep my hands out of the dough, and after I made them, I kept reaching back into the cookie jar. I loved the soft chewiness (when I first took them out of the oven they seemed WAY underdone, but firmed up really nicely after cooling, while keeping their chewy texture) and the subtle coconut lime flavor. I’ll definitely make them again!

  47. Oh my goodness…..does it get any better than this?? I love those combo of lime and coconut! Can’t wait to try it!

  48. Barry here from Rock Recipes. Glad you guys had so much success with this recipe. It is an original idea my wife and I came up with that has proven to be very very popular with readers of my blog. Looks like it is pretty popular here too!

  49. I made these and they are delightful. The texture if perfect with just a hint of lime and coconut. Hmmm Heaven! Thanks for sharing

  50. Just made these minutes ago and they were divine. A perfect mix of flavors and something to spice up the ole chocolate chip routine. Yum-my!

  51. WOW these are fantastic! Just made them 2 nights in a row! They are best cooled since they get this nice little crunch on the outside & are still soft & chewy inside! Thanks!

  52. Hey Maria,

I have been reading your blog for a while. I saw these cookies and I have been meaning to make them for a long time! I finally did it – they are good but I didn’t find the lime taste to be that strong. {I used the zest of 4 limes too] Any tips to fix that? Other than that they were good.

  53. I’ve never considered myself any good at cooking or baking. Usually when I try to make something I end up being disappointed because something went wrong…even when I follow recipes exactly. BUT…I got some motivation to try some new things when I stumbled across your blog. This coconut lime cookie was the first recipe of yours I decided to try. And oh my word….delicious! They were perfect and a huge hit with all my co-workers. They probably think I bake all the time now haha. Thank you for inspiring me, these were absolutely amazing. I’m so anxious to try more of your recipes….gotta run. Headed for some groceries. 😉

  54. I made these and they turned out PERFECT. Everybody loved them and they were the kind of cookies that melt in your mouth. Will definitely be making again.

  55. This sounds scrumptious, will definitely serve these for 4th of July.
I realize this was posted 3 years ago, but I just wanted to bring to your attention a spelling error in your blog entry about these cookies:
“If you’re wondering if I would of shared.” It’s would’ve or would have.
Just FYI. Thanks for the recipe.

  56. Lay the chicken pieces skin side down in your baking dish.
Preparation method: Take finely chopped onions in a bowl
and add yogurt, grated coconut, green chili and salt to taste.
The final decision to use a roasting method to cook the chicken is a good
one because this type of cooking will allow us to compose the item in
one large single batch and place them on sheet pans for the oven.

  57. It is lovely recipe thanks for that u have spread this on net.For mine kind information it was too essential for me that i should know we can use in cookies chewy lime….it would have been great experiment for me.Thanks for sharing.

Made these the other day. Excellent LIME cookie. Love the texture, but they lacked the coconut flavor. The lime flavor is great, but I really wanted more coconut flavor. I will make these again, maybe experimenting with coconut butter (or coconut oil) in place of some of the butter.

I converted this recipe to vegan by using Melt margarine and a flax seed egg.

The dough was very light.   The cookies are tasty.  I found a full 10 minutes worked best.  Otherwise they were too soft for the cooling rack, even after 2 minutes on the sheet after baking.

Also, I rolled them in Demerra sugar, because I had some to use.  It added a nice look and a crunch!

I made these cookies but used only one cup of sugar also I didn’t roll them in sugar. I did end up flattening them and adding more coconut before baking. They were outstanding and perfectly sweet enough for my husband  and I…

  61. Hi
Love these cookies….I did some of the cookies according to the recipe, but I found the sugar to be to much….so I frosted some with pd. sugar and lime juice and peel. Excellant.
Love the chewy bottom and the burst of lime.
