Grilled Fajita Chicken

On Saturday we had some friends over for a cookout. It was our first cookout of the season and the weather was perfect. It was nice to enjoy our new patio with good food and friends. Josh took the lead and made Grilled Fajita Chicken. We served the chicken with Bush’s Black Bean Fiesta Grillin’ Beans. They were the perfect side to the fajita chicken.

Josh created a spicy fajita seasoning to marinate the chicken. He cut up peppers and onions to go with the chicken. He grilled up the chicken, peppers, and onions and then served a piece of chicken with the veggies on top.

We served Black Bean Fiesta Grillin’ Beans, grilled pineapple, and salad with the Grilled Fajita Chicken. Everyone enjoyed the meal. It was nice to be outside. I love grilling season!

Grilled Fajita Chicken

Ingredients

  • For the fajita seasoning:
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon cumin
  • 1/4 teaspoon cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • Juice of 2 large limes
  • 1/4 cup water
  • 1 teaspoon corn starch
  • 8 small chicken breasts seasoned with salt and pepper
  • 1/4 cup chopped green onion
  • 5 large bell peppers use a mix of colors, cut into strips
  • 2 small red onions cut into strips

Instructions

  1. 1. In a small pan, mix together fajita seasoning ingredients. Heat over medium low until hot. Let seasoning cool to room temperature. Pour seasoning over chicken breasts, reserving a little of the seasoning for the peppers and onions. Sprinkle chicken with green onions and let marinate for 30 minutes. Toss the peppers and onions with remaining seasoning.
  2. 2. Preheat the grill to high heat. Place the chicken directly on the grill. Cook each side for about 6 minutes, depending on the thickness of your chicken breasts. While the chicken is cooking, grill the onions and peppers on a grill pan. Grill until vegetables are tender.
  3. 3. Serve chicken breasts with pepper and onions. If desired, serve Bush's Black Bean Fiesta Grillin' Beans on the side.

  1. Everything looks AWESOME. How amazing is grilled pineapple? Peaches are also pretty rocking. Glad you guys had fun. And what a perfect way to try out the new patio!!

  2. What a nice, simple meal on the BBQ. I would have added mushrooms but that’s probably the vegetarian in me. Love grilled pineapple especially if it gets a little brown and crunchy. Add a little vanilla yogurt on top; nothing better.

  3. Guess what I already had thawing in the refrigerator? Mmmmhmmm….chicken strips. Fate? I believe so.

    Also, I LOVE black beans. I bet the Bush’s ones are amazing. I will definitely be trying them out!!

  5. Yum! Now all we need is an actual grill–can you believe my husband gave ours away when we moved from Kansas!!! sigh (He wants something bigger and better, but I tried explaining to him that until then, we have nothing!) He bought a little indoor grill pan to get by.
    This meal looks great! Now back to more rain! 😉 Saturday WAS awesome though.

  6. Moroni Turkey on the grill is INCREDIBLE! And a little BBQ Corn on the Cob does my taste buds good! I am now drooling! I think I need to get working on that! Have you ever tried BBQed Fruit? I wonder what that is like!

  7. My hubby just saw this walking by and said “those peppers look awesome!” I’m totally making this for him. Those peppers do look awesome! I need to get a veggie rack like that!

    I actually sauteed peppers and onions in a pan this weekend and used the leftovers with hummus in a flat out wrap today. Yummy!

  9. I absolutely love fajitas but have never tried them on the grill. That might be my task of the summer! Your grill looks so pretty with everything on it 🙂

  10. I thought I made the best fajita marinade, but with cocoa in the mix, you clearly win! Then again I use tequila, so maybe it’s a tie 🙂
