We are taking a break from sweets today, are you shocked? I tend to go a little sugar crazy in December. I think Josh was getting a little tired of my cookie baking extravaganza because he asked if he could make a savory recipe:) I said sure and let him make dinner while I made another batch of cookies:)

Josh whipped up Loaded Baked Gnocchi. This dish has all of the wonderful flavors of a loaded baked potato, but in a baked gnocchi casserole! Josh nailed this recipe! It is ultimate comfort food and perfect for a cold night!

When we first got married, we used to make homemade gnocchi, but then we discovered DeLallo’s gnocchi and haven’t made it since. DeLallo’s gnocchi is SO good and only takes minutes to make! It is perfect for quick and easy meals! One of our favorite gnocchi recipes is our Crispy Gnocchi with Basil Pesto…and now we have a new favorite! This Loaded Baked Gnocchi is awesome!

Loaded Baked Gnocchi Recipe

This Loaded Baked Gnocchi dish is a mix between baked mac and cheese and a loaded baked potato. Josh made a cheesy sour cream sauce to pour over the potato gnocchi and topped it with more cheese, green onion, and bacon. Is your mouth watering? Yeah, you need to make this one! And the best part? It is super easy which makes it perfect for weeknight meals or entertaining. If you are looking for a recipe to feed your holiday guests, make them Loaded Baked Gnocchi. Warning, they might not leave though. They will want you to cook for them every day:)

And if you are a vegetarian, like me, you can leave off the bacon. Josh made me a little dish without the bacon and it was really tasty! You can add your favorite baked potato toppings! It really does taste like a loaded baked potato!

Loaded Baked Gnocchi

This baked gnocchi dish tastes just like a loaded baked potato! It is easy, cheesy, and comforting!

Instructions
 

  • Preheat oven to 350˚F. Spray a 9" x 9" baking dish with nonstick spray. Set aside.
  • Boil a pot of water and cook gnocchi according to package instructions. Drain and arrange in a single layer at the bottom of the prepared dish.
  • In a saucepan over medium heat, melt the butter. Stir in garlic and cook until lightly golden, about 1 minute. Whisk in flour until mixture thickens. Add the milk and whisk until the sauce thickens, about 3 minutes. Whisk in 1 cup of the cheese. Whisk until smooth. Remove from heat and stir in the sour cream. Season with salt and pepper, to taste.
  • Pour sauce over gnocchi. Sprinkle remaining cheese, green onions, and bacon over the gnocchi.
  • Bake for 25 minutes, or until bubble and cheese is melted. Remove from oven and let sit for 5 minutes. Serve warm.
  • Note-to make this dish vegetarian, leave out the bacon! It is still good:)

  1. I’m in love! My tongue is suffering from a serious case of “sugar tongue” right now, you know the feeling. When you’ve eaten too much sugar and your tongue actually hurts! This looks magnificent. But with your permission, might add a little extra bacon, ok?!

  3. You know what is crazy? I haven’t tried gnocchi! Pretty sure the worst food blogger award goes to moi!
    But, you’re really tempting me to change that at the sight of all the ooey gooey, cheesy yummyness! Pinned!

    1. I haven’t tried freezing it, but I am sure it would be fine. I would freeze it after baking.

    2. It does freeze well! After it has chilled in the fridge, cut it into individual serving size pieces and vacuum seal them. When you want the gnocchi just take a piece or two out of the freezer and heat them in simmering water until heated through! I actually like it better after heating it this way.

    1. Yes, you can double it and use a 9×13 pan! And I guess it depends on how hungry everyone is:) It is a filling recipe!

  15. made it this evening. put a layer of spinach between the gnocchi and adding the sauce. used shredded gouda. left out the bacon. soooo good.

    I added onions and cooked them in the butter before adding the garlic.
    I only had one piece of bacon.
    I didn’t have any green onions (which is why I added the onions and cooked them).

    DELICIOUS!!! simple and definitely filling!!!

  18. So funny — I was working on a menu for Christmas dinner. We usually have blue cheese potatoes (my mom has the BEST recipe ( http://real-food-real-life.com/2016/09/creamy-blue-cheese-potatoes/ ) but I was trying to think of something different this year and had a flash of loaded baked gnocchi. Turned to our friend Google and up popped this recipe, first thing. It was just funny since I was just here on your site a little while ago drooling over (and commenting on) your eggnog bread recipe. Clearly on the same wavelength today.

    I don’t  know how closely you monitor comments on older posts, so you might not see this in time — but where have you found the DeLallo gnocchi locally? (We’re in SLC too.) I think this will be a great side to our cranberry-chipotle glazed pork loin. (And I promise I’m not stalking you — no more comments from me today!!)  😉

  19. You really should try Gia Russa gnocchi. It is THE BEST. I order it from Walmart 4 or 5 packages at a time, as I cannot find it in stores where I live. Pick it up at the store so there is no shipping. It really is superior.

  21. Eating this tonight with a salad. It’s like having a salad with a loaded baked potato. I was as little worried making the sauce. Felt like I was doing it all wrong. But I just kept whisking till it all smoothed out. I’m all for convenience and this dish tasted like it took hours to make. All four of my picky eaters approved!

  23. Oh this looks amazing! I was pretty sure that I was going to make some sort of cheesy potatoes for Christmas Day but this may Jane changed my mind. Any chance that this could be put together minus the bacon and onions the night before and baked the next day?

    It was very good. Wish I could load up the photo.

    1. I made this tonight and added sliced grilled chicken to it and substituted ranch dressing in place of sour cream. OMG!! Was amazing!!

    Made this for the first time tonight…it was a hit!!! I think the green onion really helped pop the flavor! I used extra bacon that I slow-cooked to be very crisp, garlic was a nice touch. It was so light that the flavor was NOT overpowering. Will definitely make this again! Wish I could post a photo. It looked lovely!

  26. Probably should be a 1 pound package of gnocchi. I had 10lb sack of taters visions when I read that. My roommate is new fan of gnocchi and baked potato so seems like a match maid in heaven.

    My daughter asked me to make gnocchi so I Googled and found this recipe. Only ingredient I left out was the spring onion and I added a bit more bacon. It turned out well. Easy to make and very yummy.

  31. This was ridiculously good! I used GF gnocchi and cornstarch instead of flour. No bacon but found Canadian bacon in the fridge. It far eclipsed the main dish!

    Holy smokes this is good! I am not a cook but somehow I followed along and was fine. Will admit to a bit of terror when adding the flour but I must have done okay because it is amazing! Thanks for the wonderful recipe!

  36. This was amazing!! Used TJs Cauliflower Gnocchi and absolutely loved it! Followed recipe exactly except added a couple extra cloves of garlic.
