Open-Faced Enchilada Veggie Quesadillas

Do you have a case of the Mondays? And if you are’t sure what that means, watch Office Space. Such a good flick! Mondays are always hard for me. Even though I work from home, it’s still difficult to get back to the grind.

Mondays usually consist of catching up on emails, grocery shopping, laundry, and planning the rest of the week. By the time dinner rolls around, I am usually too tired to make dinner. If we are lucky, we eat leftovers from Sunday dinner, but sometimes I open the fridge to nothing. Sure, our fridge is stocked with the groceries we just bought, but I am usually not in the mood to do anything with them.

Sometimes we just eat cereal, but I try to throw something together. It has to be easy though. Mondays are easy nights. My new favorite easy meal are these Open-Faced Enchilada Veggie Quesadillas.

Enchiladas and quesadillas are always welcome at our dinner table. I love them both and would have a hard time picking a favorite. Good thing you don’t have to choose because you can have the best of both worlds.

These crisp quesadillas are covered with enchilada sauce, topped with veggies, and smothered in cheese. Garnish with fresh cilantro, sour cream (or Greek yogurt) and you have a delicious and healthy meal in minutes.

I am not going to lie, I am kind of excited for Monday now…as long as Open-Faced Enchilada Veggie Quesadillas are on the dinner menu.

  1. Monday’s are always such a bummer. Definitely hard to get back in the mood to work! I love these easy open faced enchilada quesadillas!! I’m on a huge veggie kick lately so these would be perfect for dinner!

  2. I think I will make these with some corn tortillas as well as the flour tortillas. I like corn better and they are a bit healthier for a diabetic. They look delicious. There is no end to the veggies one could put on them like sautéed mushrooms, sliced jalapenos, for some kick, and spinach for some greens and fiber. And if you wanted to make these breakfast pizzas, you could add some scrambled eggs, and or another protein. Looks great and I will try it for sure.

  5. First of all, and I have said this before on other comments, but I love your cooking blog! I always love everything I make from your site. We definitely have the same cooking/eating style. Healthy vegetarian with some sweets mixed in! But, I also wanted to say, thank you for saying that some nights you just eat cereal or heat up left overs! That just gave you more credibility and respect for me than 100s of beautiful perfect recipes! I love to cook homemade and healthy, but I am also a working mom, (and a normal human being) and sometimes I just don’t feel like cooking a stinking thing and I have finally started learning to say it’s ok if we have cereal once a week for dinner, or chinese takeout! Sometimes, looking at picture perfect blogs makes me feel less adequate as a mother/woman because it can make other people’s lives seem more perfect and interesting than my own. So, right now instead of wondering how it is another working mother found time to make homemade tortillas for her enchiladas and I didn’t, I am saying THANK YOU!

  6. Instant hit! So easy and yummy. My only drawback was that the toppings kept sliding off the tortilla. I guess you could put the cheese underneath would that help?
