The weather is finally cooler here in Utah. We had a good rainstorm over the weekend that brought cooler temperatures and it looks like they are here to stay. I am not a fan of the cold, but I don’t mind the fall’s chilly, brisk air. I love wearing jeans, sweatshirts/sweaters, and wrapping up in blankets.
I also like making foods that warm the soul and this soup certainly does that. I just made this recipe up on the spot. I used the veggies we had at home, added in some broth, canned tomatoes, fresh rosemary, and cheese tortellini. It turned out really great. It is Josh’s new favorite! He ate it all and is begging for more:)
Heat olive oil in a large pot over medium/high heat. Add onion and garlic. Cook until tender. Stir in red pepper flakes. Add in zucchini, squash, red pepper and cook until soft. Add in chopped fresh tomatoes. Cook briefly.
Stir in canned tomatoes, broth, and water.
Add in rosemary. Let simmer for 10-15 minutes.
Stir in tortellini and spinach. Cook until the tortellini is soft and cooked all the way through.

So funny — we are going on a family trip to the lake this weekend, and I just bought everything I need to make your black bean soup to bring up with us. And now I see this recipe, and I am thinking that I should make this instead!! Oh well, let’s see if I have time to make both before we leave — you can never have too much soup, right?
Oh good! I was just going to ask everyone if they knew some good soup recipes. Ben’s decided he wants to cook huge batches on the weekend and eat them during the week…

Looks like a good, comforting soup. I love making bruschetta as a starter though I usually get so full because I can’t stop. Eating it with soup is the perfect solution.
The only thing I like about winter in Utah is eating good soup. Can’t wait to try this one. Your pumpkin rolls look amazing too. I’m going to try that one as well!
I just had to jump back to let you know that I made the black bean soup this afternoon — OMG, it is AMAZING!!!! Far and away the best black bean soup I’ve had. It is going to be a huge hit at the lake this weekend! If this tortellini soup is even half as good as your black bean soup, I just can’t wait to make it!
