Guacamole Grilled Cheese Sandwich
Josh’s brother is visiting us from California and we are having a great time. Caleb sure loves having his uncle around and I love having another person to feed:) The other day the guys wanted a snack so I whipped up a bowl of guacamole and made homemade baked tortilla chips. The guys were still hungry so I offered to make grilled cheese sandwiches. There was still some guacamole left so I asked them if they wanted a Guacamole Grilled Cheese Sandwich. I don’t know if they were crazy about the idea, but agreed to try it. Guacamole Grilled Cheese Sandwiches sounded good to me:)
I used crusty white bread to make the sandwiches. I spread a thick layer of guacamole on each slice of bread and topped it with cheddar cheese. I buttered the outside of the bread and grilled the sandwiches to perfection. The guys loved the sandwiches and so did I-Josh shared his sandwich with me:) I mean, really, what is not to love-bread, melted cheese, and creamy guacamole? The best grilled cheese sandwich I have ever had. Once you try a Guacamole Grilled Cheese Sandwich, your life will be changed forever. So get going and make yourself a sandwich, you all need to experience the best grilled cheese on the planet.

Makes a great lunch, huh?
I just made this and it’s fabulous — the only substitution I used was fresh sourdough bread because it’s what I had on hand and everything still tasted great!

What a great idea! I’ll be making mine with Cabot Seriously Sharp Cheddar (from Vermont, like me!) and avocados from our family farm in California! The Fuerte avocados are in season now…they’ll be scrumptious in this sandwich!
This looks so incredibly delicious!

Now that grilled cheese has my name all over it! All my favorite flavors!
Now this is my kind of sandwich! I can’t believe I have never thought of this before. Bookmarked.
Oooh yes. I love when there are extra people around to cook for, too. I’d love it even more if I was making this divine sandwich!!
Holy Yum! Just decided what we’re having for dinner! Thanks!
I think this looks fantastic!
I’ve tried so many different varieties of grilled cheese. Why haven’t I thought of adding Avacado to it?! Amazing recipe. Can’t wait to try!
I never imagine we can use Guacamole in a sandwich, we eat it as a dip, but never inside a bread. And it’s strange because here in my country avocado sandwish is very common, in fact, is one of my favorites. There is a sandwish we caled “Triple” and is made with one slice of bread, mashed avocado, bread, egg, bread, tomato and bread.
This sandwich looks amazing! I wish I wasn’t allergic to avocado! I just love guacamole!
What a simple, awesomely do-able idea! This is why I love you

Between this sandwich, which is a combination I never would have thought of, and the polenta dish, which I am planning to try next week, wow. Thank you for such a lovely and inspiring blog. And congratulations again on your little one.
