And I sneak in some shredded zucchini because it cooks right into the turkey mixture—you really don’t notice it, but it adds extra vegetables and keeps the turkey nice and tender.
The crispy roasted potatoes are a great base and very satisfying. They get golden and crisp around the edges while staying fluffy inside, and they are so good with the cool, creamy tzatziki. - Yukon Gold potatoes: Yukon Golds are my favorite for roasting because they get beautifully golden and crispy on the outside while staying creamy inside. Cut them into evenly sized pieces so they cook at the same rate.
- Olive oil: A little olive oil helps the potatoes crisp up beautifully in the oven.
- Ground turkey: I use lean ground turkey, but ground chicken or ground beef work well too.
- Bell pepper: Red bell pepper adds sweetness, color, and a little extra vegetable goodness to the turkey mixture.
- Onion: Yellow or white onion will work here. Cook it until softened before adding the turkey.
- Zucchini: Shredded zucchini cooks right into the turkey and adds moisture without making the mixture heavy. No need to squeeze out the zucchini first.
- Garlic: Fresh garlic gives the turkey that savory Mediterranean flavor.
- Paprika and oregano: These simple seasonings give the turkey a warm, Greek-inspired flavor. Fresh oregano can also be used if you have it.
- Fresh parsley: Stir it in at the end for a fresh pop of flavor.
- Romaine lettuce: I love the crunch of chopped romaine as the base of these bowls.

Tips for Making Greek Ground Turkey Bowls
Cut the potatoes evenly. Try to keep the potato pieces around the same size so they roast evenly. Give them plenty of room on the sheet pan—overcrowding can cause them to steam instead of getting crispy.
Flip the potatoes halfway through. This helps them brown on multiple sides and gives you those delicious crispy edges.
Cook the vegetables first. Give the bell pepper and onion a few minutes in the skillet before adding the turkey. This builds flavor and makes sure the vegetables are tender.
Break up the turkey well. Use a wooden spoon or spatula to break the turkey into small pieces as it cooks. You want little bites of seasoned turkey throughout the bowls.
Don’t overcook the turkey. Once it is cooked through, add the zucchini, garlic, and seasonings and cook just until everything is tender and fragrant.

How to Store

- When you are ready to eat, reheat the turkey and potatoes in the microwave or in a skillet or oven until warmed through. Add the lettuce, cucumber, tomatoes, olives, feta, tzatziki, and hummus after reheating.
- For meal prep, I recommend keeping the fresh vegetables and sauces separate from the warm ingredients and assembling the bowls just before serving.


Greek Ground Turkey Bowls
Ingredients
For the potatoes:
- 2 lbs Yukon potatoes, cut into 1-inch cubes
- 2 tablespoons olive oil
- Kosher salt and black pepper, to taste
For the ground turkey:
- 1 tablespoon olive oil
- 1 red bell pepper, chopped
- 1/2 onion diced
- 1 lb ground turkey, or ground chicken or ground beef
- 1/2 cup shredded zucchini
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon kosher salt
- 1/2 teaspoon oregano
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh parsley
Instructions
- Roast the potatoes: Preheat the oven to 425°F. Line a large sheet pan with parchment paper. Toss the potatoes with olive oil, salt, and pepper. Spread in an even layer and roast for 25 to 30 minutes, flipping halfway through, until golden and crispy on the outside and tender inside. Set aside.

- Cook the Veggies. While the potatoes are roasting, heat the olive oil in a large skillet over medium heat. Add the bell pepper and onion and cook for 4 to 5 minutes, stirring occasionally, until softened.

- Cook the Ground Turkey. Add the ground turkey and cook, breaking it up with a wooden spoon, until browned and cooked through, about 5 to 7 minutes.

- Add Zucchini and Season: Stir in the shredded zucchini, garlic, paprika, salt, oregano, and black pepper. Cook for 2 to 3 minutes, until the zucchini is tender and the garlic is fragrant. Remove from the heat and stir in the fresh parsley.

- Assemble the Bowls. Divide the romaine lettuce among serving bowls. Top with the roasted potatoes and turkey mixture. Add the tomatoes, cucumber, olives, red onion, and feta cheese. Drizzle with tzatziki, add a dollop of hummus, and serve with pita bread, if desired.

- Potato tip: Don’t overcrowd the pan. Spread the potatoes out in an even layer so they have room to roast and crisp.
