Christmas Morning Breakfast Casserole
Christmas morning isn’t Christmas morning unless I am eating one of my dad’s famous homemade cinnamon rolls. They are a family tradition. Josh loves my dad’s cinnamon rolls, everyone does, but Christmas morning for Josh means BACON! Josh loves bacon and insists on making his favorite breakfast casserole: my Bacon, Potato, and Egg Casserole every Christmas. I don’t mind because he does all of the work and there is always room for another tradition, especially a food tradition. The more the merrier on Christmas!
The “B” in Breakfast Casserole is for…Bacon!
This is the perfect egg casserole for Christmas morning because it is easy to make, feeds a crowd, and everyone loves it! And, it has bacon. Loads of it. Our boys’ eyes light up like the lights on our Christmas tree when they hear the word bacon:)
This easy breakfast casserole is filled with Wright Brand Naturally Smoked Applewood Bacon, cheddar cheese, and potatoes. Josh also adds onion, red pepper, and garlic for flavor.
Josh loves using Wright Brand Bacon because it is hand selected, hand trimmed, and hand smoked. Every slice is thick and hearty. He puts bacon in the egg casserole AND on top. Bacon lovers rejoice! 🙂
An Easy Make-ahead Breakfast Casserole
This egg casserole can be prepared in advance, which makes it perfect for Christmas morning. You can prepare the night before and bake in the morning or you can bake and reheat in the morning. And just an FYI, this Bacon, Potato, and Egg Casserole also makes a great dinner, especially on busy weeknights. My boys love this breakfast casserole ANY time of the day!
Make this easy Bacon, Potato, and Egg Casserole part of your holiday celebration this year and for years to come!

Bacon, Potato, and Egg Casserole
- 9 x 13 Baking Dish (this Staub one is so pretty for serving!)
- Large Skillet (I LOVE my Lodge skillet)
- 1 lb bacon, cut into 1/2-inch strips
- 1 yellow onion diced
- 1 red bell pepper seeds removed and diced
- 3 cloves garlic minced
- 12 large eggs
- 1 cup milk
- 3 cups frozen diced potatoes you don't have to thaw or cook the potatoes
- 2 cups shredded cheddar cheese divided
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 2 green onions chopped
- Heat the oven to 350°F. Grease a 9x13 baking dish with nonstick cooking spray and set aside.
- In a large skillet, cook bacon over medium heat, stirring occasionally. Cook until it is a nice crispy brown. Remove bacon with a slotted spoon and place on a paper towel lined plate. Roughly chop the bacon and set aside.
- Add the onion and red pepper to the skillet and cook over medium heat until tender. Add the garlic and cook for 2 minutes. Set aside.
- In a large bowl, beat the eggs and whisk in the milk. Stir in the cooked vegetables, potatoes, and 1 cup of the shredded cheese. Set ¾ cup of bacon aside and stir in the rest. Season with salt and pepper.
- Pour the mixture into the prepared baking dish and top remaining cheese and green onions. Bake for 20 minutes so the eggs start to set up. Carefully add the remaining bacon to the top of the casserole. Bake for an additional 20 tot 30 minutes or until the eggs are firm and the top is slightly golden brown. Let stand for 10 minutes. Cut into squares and serve warm.
- Note: This casserole can be made in advance. Pour the mixture in the pan and refrigerate for up to 24 hours. Bake when ready to eat. You can also reheat the casserole.

This is such a great easy breakfast or dinner idea! I love how simple but filling it is. I could go for some right about now 🙂
This looks like the perfect thing to make for our family’s Christmas morning breakfast! Have you tried baking this in a muffin tin to make “make-ahead” breakfasts? Could be a yummy idea!
Yes, you can bake in muffin cups! Great for breakfast on the go!
Yes, I actually pour them into cupcake papers then put them in freezer bags and the kids just pop them in the microwave.
This is truly a hubby approved recipe. What a fabulous idea for Christmas morning! Merry Christmas, Maria!!!
looks so delicious Maria!
Thank you and Merry Christmas.
It’s not Christmas and I am a college student but I can confirm this is a good recipe
Not meaning to pick…but you say the potatoes should be “unthawed.” That would mean frozen —- right? This sounds so yummy…must make! Thanks.
Sorry I didn’t make sense. I updated the recipe to be more clear. Yes, just use frozen potatoes. No need to thaw or cook them! Easy peasy!
Another potato question–If using fresh diced potatoes, do they go in raw or do they need to be cooked first before adding?
What a tasty breakfast casserole!
I love breakfasts that can be made ahead! This one looks amazing. Extra bacon on top is ALWAYS a good thing!
Do you thaw the frozen potatoes? To me, “unthawed” mean they are not thawed. Just wanted to clarify. Thank you.
No need to thaw or cook the potatoes, just add them in frozen. I clarified in the recipe. Sorry if it was confusing!
Recipes like this make breakfast/brunch my favorite meal of the day! I cannot wait to share this with my family.
Can I use fresh potatoes instead and perhaps parboil them for a bit?
Thank you in advance 🙂
A fan from Melbourne, Australia
Yes, that would work! Enjoy!
This looks delish! and I will definitely be making it this week – thanks for sharing it – love Wright’s Bacon – it’s so good! And I agree with Josh and the boys…yummy bacon!
How long will it last in the freezer?
Can you use frozen shredded hashbrowns instead of diced?
The recipe looks great but we don’t eat bacon here. Any suggestions for a substitute? Thanks! 🙂
You can just leave it out or add in some veggies!
You can substitute bacon with ham…
There is no substitute for bacon
This looks so great Maria! Mmmm!
This dish is totally worth creating a new tradition for! The profile shot of the potato goodness is everything!!
Oh this looks amazing!
Are “frozen diced potatoes” the same as store bought hash browns or is it simply store bought frozen potato?
Yes, hash browns will work!
Will definitely be making this Christmas morning. Is there another type cheese that melts easily and doesnt separate like cheddar often does.
Try Havarti! It is so melty and delicious!
I only have fresh potatoes. Will that be OK?
You can use fresh potatoes, but cook them a little with the veggies to make sure they get done.
This casserole was amazing. I made it for Christmas brunch and everyone absolutely loved it. Thanks for the wonderful recipe. Merry Christmas to you and your family. I hope your children have a magical Christmas!!!
We made this for Christmas morning. It was a hit with young and old. We had turkey bacon on hand and frozen has browns. But it worked! Thank you
Glad you liked it!
Hi. If I put this together the night before, don’t the potatoes thaw and get mushy? Or do you just throw the potatoes in with the rest of the mixture right before you bake it in the morning?
Thanks for all your great recipes.
We have prepared it the night before and the frozen potatoes didn’t get mushy.
Can you make this without the cheese? I am looking for casseroles to make for my upcoming Whole 30
I haven’t tried it without cheese. It might be dry without the cheese, but let me know if you try it! Maybe add more eggs?
I made this today for coffee hour at church and it was fabulous!!! This is the best breakfast casserole I’ve ever made. Thanks for the wonderful recipe!!
Do you drain the bacon fat? I am confused…
No, we don’t!
I was confused about that as well. I ended up awkwardly spooning the cooked onion and red pepper out onto a paper towel just I did with the bacon. Worried a bit about losing some caramelized onion flavor, but the thought of keeping in all that bacon fat – was not going to happen. The casserole turned out great – was a big hit for our brunch. Next time maybe I’ll saute onions/pepper in 1 part bacon fat 3 parts olive oil – because as we know, there’s nothing more yummy than anything bacon! Well, maybe except bacon ice cream. Thanks, Maria!
Thanks so much for this awesome dish !!! Just threw it in the oven this morning. Love Sunday mornings with the whole family and this will be great for them to try:) Blessings to you and yours!
I made this last Christmas and it was amazing! I was wondering if anyone has tried to freeze it and reheat it. I’m looking for freezer meals to stock up on once I have my baby and no time to cook!
Love this recipe. Thank you.
Hi: Can this be made with Eggbeaters? Thanks
This looks delicious! I made it for a work function for my husband, unfortunately, I won’t get to taste it. I did have a question, though. After cooking and removing the bacon from the pan, in instruction 3 you said add the onion and peppers to the pan and cook till tender. Did you mean cook the onion, pepper, and garlic in the bacon grease left from the bacon? If so, I assume I drain the veggies afterwards. Or did you mean to dump out all the bacon grease and THEN cook the veggies in a clean skillet? Asking because there was about a cup of bacon grease after the bacon was done cooking. Thank you!
I didn’t have that much bacon grease. You can dump some of it out and use a little to cook the onion and peppers.
We had more bacon grease than we cared to consume, and I wanted all the nutrients of the veggies, so we cooked those in a separate non-stick with only 2-3 spoonfuls of the bacon grease (which included that salty foam that sometimes forms on the top of the grease). That’s all the oil you need to cook the veggies! We also *added* 1/4 cream (that we use with our coffee) because our milk is 1% and we wanted to keep the richness of the recipe without so much grease. All else the same! Poured into casserole next a.m. It set up and cooked beautifully with the expected texture as seen in the pics. Used cilantro instead of parsley! Yum!
How long and what temperature do you reheat it at?
If I wanted to bake this in a muffin tin should I adjust the bake time at all?? I’m making this for my mom for Mother’s Day!! Can’t wait for her to try it!! Thanks in advance!!
Yes, you would need to reduce the baking time.
Any recommendations for how to adjust this to be muffins? Would we need to defrost or cook the potatoes first since the cooking time would be shorter? And how long would you recommend baking them for?
Did you try making these in muffin tins? How did they turn out? How long did you cook them for?
I haven’t, but I am sure it would work just fine. Reduce the time, I would check them at 12-15 minutes to be safe. They might take a little longer.
I cut this in half because it was only my husband and I. Didn’t have that much bacon, but even so it was amazing. We ate about 2/3 of it and put the rest in the frig for later. My picky husband rated it a 5 (highly unusual for him). Will definitely add more bacon next time.
Out of 10?
I think the oven temp may be a little low. I’ve had mine in for over an hour now and the middle still isn’t quite set, finally bumped the temp up to 400 degrees.
I had to do the same, cooked it until the center was firm, an extra twenty minutes or so. Excellent recipe though and the leftovers are great too! Perfect make ahead casserole!
Can you use fresh potato?
Happy Fathers Day! I had a very happy hubby this morning, a fantastic make ahead!!
Served with fresh local strawberries ,raspberries and cherries!
Can this be made ahead of time and frozen? I was hoping to make it to take on our vacation.
Yes. It freezes great. We cut ours (what was left) into portion sizes & froze them individually. They can take a while to thaw, in the winter at least, as I don’t use the microwave (although my husband does & said it worked fine). If I remember correctly, I re-heated my 3″x3″ piece & a bigger piece for my husband at 350° for about 20 min as they were still partially frozen. His was a bit too heated & mine was WAY TOO heated – neither was any worse for the wear! Still great taste & texture.
Hubby wanted to try cooking the hashbrowns before using on our second batch, so I pre-cooked them until crispy. Although the cassarole is great following the above directions, this batch was even better. And then we added ham….. over the top.
Can I not cook the casserole the potato bacon egg casserole and just put it in the freezer and then bake it a week
Can I use fresh potatoes?
Couldn’t not get this to cook in the center, should definitely use thawed potatoes even though the recipe said frozen was okay. Baked twice as long, cheese started to burn, pulled out of oven, scooped out uncooked center and cooked in frying pan – ughh!!
Looks yummy always looking for good breakfast ideas!
Hi. Did you use Ore Ida diced hash brown potatoes? Thanks!
So delicious! I added dollops of sour cream to the top and it was a yummy addition.
Just made this and bringing it to a breakfast potluck!! I am super excited, it turned out exactly like the picture and I am sure I will be impressing some people with this!
Thank you for sharing this excellent recipe. The ingredients listed above are of high-quality as well. Can’t wait to try it.
Do I cover the bake?
I never do.
What is the nutritional breakdown on the potato, bacon & egg Casserole? Thanks.
Made this Christmas Eve morning. Once it came out the oven and my kids could smell it everyone suddenly came downstairs. Doorbell rang and Nana came over and we all enjoyed the casserole. Delicious!!!
I made this Christmas morning with regular and turkey bacon. It was a huge hit on both ends. I was wondering for everyday breakfast could this be made with half whole eggs/half egg whites? If so, should I increase the egg whites?
Glad you liked it! If you are taking the egg yolks away, you will need to add more egg whites.
If I want to do half with bacon and half with just veggies, is it best to use two small loaf pans or the 9×13 pan and only put bacon in top? Thanks!
For future reference, an 8×8 pan is about half the area of a 9×13.
I made this for Christmas and it was a huge hit! I was wondering how this would bake with half egg whites and half whole eggs?
Sorry for the double boost!
Sure! Glad you liked it!
When do you add in the potatoes?
In the bowl with the veggies.
Easy and everyone loved it. Thank you!
Can I freeze the left overs??? Instead of peppers I added 1/2 can of mixed veggies. I might add some salsa in replace of some of the milk. Next time 🙂
Yes! Salsa would be good!
I made this for a brunch and it turned out awesome. We had some non-pork eaters, so I used turkey bacon, and I used the Simply Potato brand packaged hash browns. Everyone loved it, and I love that it’s a simple recipe that you can tinker around with.
I’m wondering if anyone’s tried to double this? I need to make breakfast for 75 to 80 people for a homeless outreach for our church. I was thinking if I doubled it 4 times (4 LG tin casseroles) that it might work. Any suggestions?
I just made this for 26 women at a church retreat and tripled the recipe (for 30). It all went into one large aluminum casserole pan (from Sam’s Club) We had very little left over. Doubling it 4 times sounds like it would feed the number of people you are talking about.
How do I reheat this casserole? Does not say. In oven covered with foil or in microwave covered with plastic wrap?
I usually reheat in microwave covered to keep moisture in.
I made this for a large group over Memorial Day weekend. I made a 1.5 batch as we had 15 people to serve. It was delicious and everyone liked it.
? Trying to log nutrition per serving. Did this recipe have any info. I might have to try to figure it out. Make it fit my macros. Eggs bacon potatoes perfect breakfast.
This is a go to for Christmas or to freeze for weekday breakfasts! I do think there is a bit too much cheese. I use 1 1/2 cup cheddar divided. Removed all but 3 tablespoons bacon grease to saute vegetables. I keep the bacon grease on the side in case I need more. Also, It doesn’t set up in the time alotted so I put under the broiler for 3-5 minutes to brown on top! The more cheese the more wet it stays!
Oh, I also addes a small can of green chilis 4 ounces.
Do you think I could just use a bag of frozen potatoes o’brien (with onions and peppers already in it) instead? Thanks!
Did you make with potatoes o’brien cause I was thinking that when I read recipe??
This recipe was super easy to follow and it came out perfectly. I made it for a gathering at work and everyone LOVED it! Very, very good
Glad it was a hit!
This was terrific and came out looking just like the photo!
Glad you liked it!
Made this for our church breakfast. Delicious! Still getting compliments.

I made this wonderful casserole for 26 women at our church Retreat and tripled the recipe. It was an instant hit with any asking for the recipe. I made it the night before and added an additional 40 minutes to the baking time as we live in the mountains and needed the additional time. I used one of the very large aluminum baking pans from Sam’s Club and it held it all perfectly. It rose as it baked and was like a souffle, I plan on using this recipe again during the holidays. It was great!!
Bet this would be great with diced ham also…
how many people does this serve?
Hey, thanks a lot for sharing this amazing recipe. The ingredients listed above are really superb. I must try it.
While this is the best recipe for a Breakfast Casserole, I found that I needed to cook it for 20 mins longer.
made the bacon, potato and egg casserole this morning. I used two baking dish – simply delicious – will make again, it makes enough for 6 – any day or for a brunch –
I made this to take to a tailgate. It was a great recipe but WAY too salty. The bacon adds a lot of salt so back off on the salt. I also took a shortcut of using frozen potatoes with onions and peppers mixed in. I will make again. Perfect for breakfast or brunch.
I made this for breakfast on a recent group camping outing. I reduced the recipe by half since we had many other breakfast options. It turned out very well. Right then and there I decided to add it to the Christmas morning breakfast menu. Very yummy. Thanks.
You are welcome!
Excellent recipe. Definitely will make again!!
planning to make this casserole for Christmas. question: can shredded hash brown potatoes used in place of diced potatoes
Can you freeze this ahead of time?
Can. It be frozen?
I made this for Christmas Eve brunch. It was sooo good! As any one cooking does, I had my own little variations. I added mushrooms, and seasoned the egg mix with pepper, a little salt, paprika, garlic powered, parsley, and oregano. I also did a mix of heavy cream and milk instead of straigh milk. I also used a different kind of bacon than what was listed. I ended up needing to cook the eggs longer than what is listed here, probably closer to an hour and a half.
I have a gluten-free brother-in-law so this is a great alternative to a strata. This recipe is bookmarked and will definitely be making it again!
Just to let you know that I made this recipe for my family. I have a sister that does not like bread in these type of breakfast casseroles so this was the one for me to try. I used fresh diced potatoes that I steamed in the microwave only because I didn’t have any frozen potatoes in the freezer. I also omitted the onions because my eldest daughter does not like onions. I used onion powder instead. And there was one more substitution of garlic powder instead of fresh garlic-for the life of me I could not find the garlic cloves I just bought. My family enjoyed it very much. Even with multiple substitutions this was a yummy dish for breakfast. Thank you.
Can you use just regular potatoes? I’ve got a bag I’ve gotta use up and I’m wondering if they would cook okay within that time at only 350, should I saute them first? Thank you.
It’s a quiche without pastry. I have made before but cooked using a bain -Marie . That saves the edges burning or cooking toon much .
another winner, thank you maria. and so easy.
a big hit at our easter gathering….. :0)
Can you use sweet potatoes instead?
I haven’t tried it, but it sounds good to me!
Oh my gosh, it just supersedes any breakfast casserole…..comfort food in my eyes, I’ve scouted many breakfast casseroles for 4 years, since these are my favorites, and, hands down the best, easiest, most tasty soothing and reliable recipe yet.
Josh knows his bacon! I tried Wright’s bacon for the first time-awesome! Great casserole too
Prepped this the night before and placed it in the fridge. Took it out of the fridge the next morning and baked it for 50 minutes in a Pampered Chef stoneware pan. It tasted excellent!
Can you make this ahead of time and leave in the fridge and bake it the next day? Thank you.
does this freeze well?
I made this casserole for my birthday and it is delicious thank you first time making one, I made it a little different but it is very good good
Glad you enjoyed it!
I have made this a couple of times. Very good!!!
Can this recipe be made a few days ahead, frozen, and then baked the morning of when you need it?
Yes, that should be just fine.
You didn’t give directions for when to add the potatoes!!! Would love to know
See step 4.
This looks so yummy. I need to make one of my egg dishes without cheese. Do you think this one could be good without the cheddar?
How many people will this feed? Looking to make this for an office of 17 people
It makes a 9×13 pan. You can maybe get 17 servings out of one pan, but they will be smaller. If it is the main dish, you might want to do 2 pans.
The casserole was delicious. It’s definitely a do-over!
Love this recipe, made it for three different occasions in the last three weeks! Eggs are wonderfully moist, not dried out like some egg casseroles. The only thing I changed is 1 clove of garlic, three is too much garlic.
Sounds great. What size casserole? 9” x 12”?
To freeze, do you cook it first and then freeze it or prepare it, freeze it and then bake it?
Can you bake this in a springform pan for a better presentation?
Thank you so much for this recipe. I had never done a breakfast casserole before so I decided to give it a try and take it for work’s potluck….and it was a total hit!!! However I will say that I did have to raise the temperature up to $450 for about 5-7 minutes after the total 40 minutes because it just wasn’t cooked all the way at 350. Other than that i will continue to make for my family.
Glad you liked it!
Do you have the nutritional information for this per serving?
I wanted to use fresh not frozen potatoes but how would I need to adjust the recipe for that?
You can use them, you don’t need to thaw them. It might take a few more minutes, but not much.
This is a great recipe. Made it today for my Sunday School Class. It was a hit.
This was delicious. Wonder what the calorie count per serving is?
I look forward to trying this recipe on my crew of 5 kids tonight. I LOVE breakfast for dinner!
As a side note: Have you ever considered including the Evernote app for your followers? I use it to save my recipes. It’s really helpful.
If I want to make it before hand and reheat it, how long should I bake it for the first time and how long should I reheat it when I actually want to eat it? (And at what temperatures?)
did you ever get an answer to your question? I was quivering the same thing?
Wow this an amazing dish! Thank for the reciepe! I did a small twist I added pepper jack cheese and wow wow wow it is delicious!!
Can you make this with ham instead of bacon.
can you use fresh, not frozen, potatoes?
I make this recipe, but I take frozen hash browns, thaw them then line the bottom and sides of the 9 × 13 pan with them, pour in eggs mixture and bake!!
The store is all sold out of hashbrown and diced potatoes (2 stores. Sigh). What changes would need to be made to use mini tater tots? Thank you!
cant find diced frozen potatoes
If I bake it , but an bout serving it for 1 1/2 days, how do I reheat and should i1 bake it for less time the 1st time?
My oven will be occupied with the turkey, what do you think about cooking it on the stove? No non stick pans in my house, only stainless, It may stick to the bottom but if I heat it up as I do when making a regular omelette it should be ok?
I only have a shallow lasagna baking pan 9 by 13. Is that deep enough?
I made the BACON, POTATO, AND EGG CASSEROLE dish for Christmas Morning. It was good and I will make it again but mine took 20 minutes longer than expected. I didn’t know how much salt and pepper to add.
The recipe calls for 1 1/2 teaspoons of salt and 1/2 teaspoon of black pepper.
Can this be frozen for later use ?
I potion and freeze the leftovers for breakfast burrito filling. It works out great.
Just made it this morning for my family Christmas breakfast! Everybody loved it, it was awesome! thanks for sharing the recipe! Merry Christmas
Thank you for this fabulous recipe! We had a house full of relatives staying over the Christmas holidays this year. I prepared this Christmas Eve night, parboiling fresh potoatoes and using cooked sausage meat instead of bacon. Christmas morning, early, I took it out of the fridge and let it sit on the counter for 45 mins, while the troops assembled by the tree.
During the presents’ mayhem, and when a few of the kids started saying they were getting hungry…I sneaked into the kitchen, popped it into a preheated 400 degree oven (my oven is old so I need to bake everything at 400), and within a short-time, it was done and the aroma was heavenly. I did add more grated cheese (a mixture of havarti and cheddar) on top, halfway through baking.
Everyone loved it and the kids abandoned their presents like they were under a spell, as the smell brought them all to the table. Not a morsel was left and I ended up making it again, the day they all left, for their long drive home. Everyone thanked me over and over for making it.
So, in turn, I, thank you, for this fabulous recipe. I now call it, “Mom’s Morning Life-Saver!”
My husband says I should call it simply, “Happy Family!”
You spoiled us with your love and terrific hostess talents, Carrie!
Thanks for all you do and did, to make everyone’s holiday so wonderful!
We promise to make this breakfast dish too, when you all come to our place for Easter this year.
Love from Dave, Glenda and the bratty…oops, awesome kids!
Yay! Glad your family loved it!
Family seal of approval! The only thing I would do is add more bacon.
this is madness you guys need to add the equipment to the recipe
My family loves this breakfast casserole. Sometimes we change out the cheddar for Monterey Jack and the red peppers for green chilies. Either way we make is great. The best part is the leftovers make a fantastic filling for breakfast burritos.
Wow! lovely mix..great texture to watch..thanks for sharing..
I made this for brunch this morning along with my old standby sausage, egg and cheese casserole. Let me start out saying I never follow a recipe to exactly. The only changes I made were a little more milk ( 1/2 cup of so) and I cut up potatoes and parboiled them. I added a little more salt too. It cut and served well. My sausage, egg, and cheese was still the kids pick – they love that casserole.
Used frozen hasbrowns frozen, threw them in to the dish and then covered with egg mixture. Cooked for 40, and worked great. Potatoes were perfect.
Can I substitute frozen shredded hash browns? Do I need to cook them some with my veggies or just put them in thawed? Don’t want it to get mushy, making for a birthday party
Cook an extra 20 minutes — middle was still runny after only 40 minutes. Substituted 1/2 jalapeno pepper for red pepper (next time will use the whole jalapeno) and added some garlic powder as well as fresh garlic. I just threw all the bacon into the egg mixturw but did put half of the cheddar on top with the scallions. Delicious and super simple!! Will make again.
Glad you liked the breakfast casserole!
This sounds delicious! Can you freeze this casserole?
If using bacon, do you fry it first? Also, do you use a round 8 qt. casserole dish or a 9 x 13 baking dish?
See the recipe, yes you cook the bacon first and you need a 9×13-inch pan.
This looks absolutely wonderful and super easy! I’m going to try it tonight for supper! The only potatoes I have on hand are frozen tater tots, so I’m going to give them a try. Will let you know! 🙂
Hello is I possible I can freez the recipe? And how would I go about doing it? Before or after cooking?
Yes, freeze after!
I use the frozen potatoes with the peppers and onions. That way I can skip the step of cooking and chopping vegetables!
Just took it out of the oven and the potatoes are still raw. Any reason why?
It’s because you need to boil them till they soften before you add them to the mixture
Any issues with substituting sausage for the bacon? Any other modifications needed if so?
Thanks! Excited to make it tomm for a girls brunch!
No, you can easily swap sausage. Enjoy!
Wondering if I could eliminate the milk from this recipe? I don’t drink milk because I am lactose intolerant, and I hate to buy a whole carton of lactose free milk just to use 1 cup & throw the rest away.
I made this last night and it was delicious! We don’t eat meat so I replaced the bacon with extra veggies and it was so tasty! I’ll definitely be making this again. It was great for dinner!
This looks really good. I’d like to make it for my book club brunch this weekend. Can I use shredded potatoes instead of cubed?
This was very good, quick, and easy. I made a 1/2 recipe for my book club. I used diced ham (about a cup or so), Monterey Jack, O’Brien-style frozen potatoes. I added a little onion powder, garlic powder, and cayenne to the egg mixture. It literally took less than 5 minutes to put the casserole together. I baked it at 350 for 20 minutes, top with the rest of the cheese, a little green onion, a sprinkle of paprika, rotated the pan, and baked for another 20 minutes. Still wasn’t set in the middle, so baked for an additional 10 minutes. It turned out perfectly. I will make this again. Thank you!
Has anyone made this in a crock pot? It looks delicious. Trying to figure out how to keep it hot for an office event.
I have a recipe that is almost identical and you make it in the crockpot. Cook on low 9-10 hours.
Ummm. What about the potatoes? I did not read all of the comments but your instructions do not mention them.
Please disregard my half brained comment. I found them. The pop up ads were hiding them. I’m terribly sorry. Thank you!
Very tasty, even the husband who doesn’t like “breakfast food” approved. I used seasoned red frozen potatoes, which added good flavor to them.
This was an amazing recipe! Easy to put together and a crowd pleaser on Thanksgiving Morning! I Prepared the bacon, peppers, onions, and garlic the night before and added everything else the next morning and it was perfect! Thank you for such a wonderful recipe. We will be making this again for sure!
I used this recipe as a guide for breakfast at church-used prepped homemade diced, oven-roasted potatoes and prepped bacon (from the night before) and omitted the veggies, onions and garlic for a very simple version. It was delicious and a hit!
Making this for a breakfast potluck at work, looks and smells wonderful right out of the oven!
I only have a shallow lasagna baking pan 9 by 13. Is that deep enough?
Thank you for this recipe. I wanted you to know I make 9 of these at a time for our community brunch. I substitute REAL Bacon bits to simplify (1 1/4 c per recipe) and have flexed with the potatoes–frozen southern hash browns or diced baked potato or tater tots. As others have noted, I like a little more spice so add some cayenne pepper. Great recipe that is gluten free 🙂 (I usually make one recipe without bacon and with more veggies by sauteing some mushrooms and extra veggies with onion in olive oil).
Can I use fresh potatoes? I have all the ingredients but frozen potatoes.
Yes, but cook them a little first.
How much is a little please? Do I roast them for say 30 minutes?
You recipe looks delicious. I noticed the nutritional info lists everything except serving size. Can you clarify that please?
Is there any reason to be worried about having the frozen potatoes thaw out in the mixture when I make it ahead?
Can the potatoes be from the bag, diced and put with the rest of the ingredients
This is good. I made the night before. I added extra cheese and some extra potatoes. It also took longer to cook than the recipe says.
Also, it’s important to note the prep time is much longer than 15 minutes. It takes 15 minutes just to cook the bacon. I would say the prep time is 40 minutes.
Very yummy, my family loved it for Christmas Breakfast. I have made it before using spinach, mushrooms and green chilies. My Dauther loves it. She does not eat meat so it’s a good alternative and the rest of the family loved it too.
Made this for a Christmas Brunch and it was a tremendous hit. I used leftover spiral ham in place of the bacon just because that was what I had on hand. I also served sour cream and salsa for guests who wished to top their serving. Awesome! I will be making this again and again. Thank you!
So happy you loved the breakfast casserole!
How long a what temp if you make the night before and bake the next morning?
Had 13 people staying over for Easter. We made this for brunch on Saturday and everyone loved it. Delicious recipe.
This was so fantastic it surprised me. My boyfriend gave it an 11/10 and said he would eat it anyday, and suggested I cook it at my work for Sunday brunch because anyone who doesn’t like this would be a fool. I work in an addiction treatment centre, and comfort food is what is appreciated by the residents there, and that is exactly what this is – comfort food at its finest. I made it exactly as is and it’s so tasty, savoury and filling. It even reheated well the next day in the microwave! I will be proud to serve this to the residents I am honoured to support and am so happy that it will now make Sunday Brunch duties a breeze! Thank you so much for your recipe. You make me look like a better cook than I really am! And it turns out really pretty due to the pops of green onion and red pepper. If anyone is hesitating making this recipe, don’t! You won’t regret all the yumminess about to be bestowed upon you!
Could you use frozen potatoes with the veggies in it for the recipe? Would you just put it straight in and not cook them before? Someone mentioned their potatoes were raw above?
Yes, you can use frozen!
My children loved this dish! I did not make any changes came out perfect. Will make it again.
Yay! Glad it was a success!
Wow! This was delicious! I added a pinch more of salt and I had to cook it for 20-25 more than instructed. I followed the rest of the recipe. Thank you for sharing it.
I have been cooking this for about an hour now and the middle is still mushy. Anyone else have this issue?
How would you recommend using fresh potatoes for this recipe
Idk what I’m doing wrong, but I cooked it for an hour and the top is still runny?
Hi Maria! Can I replace cheddar with goods? And frozen potatos with fresh?
If you use frozen hashbrowns instead of potatoes do you have to cook them first or can you put them in the frozen? The recipe says cooked potatoes, but wasn’t sure if you substituted hashbrowns if you would need to cook them first. Thank you
You can use hashbrowns and you don’t need to cook them first.
Just made a vegetarian version of this and it was fantastic!!! We swapped the bacon for 3 hot Italian bayond sausage and I think this substitute would fool even the biggest meat eater.
I cooked the sausage till it was lightly brown and crisp prior to putting the bake. And did not too the bake with any, but just mixed it in.
We did cook the bake 30 minutes more than suggested.
The bake time and temp is not even remotely correct. Eggs still raw and runny.
I cooked it at 450 degrees for 30 minutes and it turned out perfectly.
So delicious! But the prep definitely takes longer than 15 minutes. Next time I’ll try frozen bell pepper and onions to reduce some of the prep.
My family and I prepped this dish the night before and had it for Easter Sunday. This was simply delicious, energizing, light on the fork but heavy in your stomach. This casserole is a great way to use up your stash of eggs
Maria, Thank you so much!! I made this today for Easter brunch and was a huge hit!! It was delicious. Will definitely make again.
We had this for Easter, and everyone in my family enjoyed it…even my very picky kids. I did substitute hash browns for the diced potatoes, and baked the casserole for an extra 30 minutes as other reviewers suggested. It was delicious!
I’m going to use fresh potatoes, do I need to boil them first?
I too would like to know this answer!
You can boil them a little or cook them in the microwave a little so they soften up and don’t take so long to cook in the oven.
I cooked it additional 45 min as well. Extremely good
I cooked it additional 45 min as well. Extremely good
Made the casserole exactly as directions call for and it came out great. I cooked it the 20 minutes and added the bacon and cooked another 20 minutes and it was cook perfectly. I did not need to add extra time as other suggested.
This was delicious! I made it for Mother’s Day brunch today (since pandemic lockdown didn’t allow us to go out for brunch this year) and everyone loved it. It’s a bit like a quiche without the crust!
Slight tweaks I made:
Used frozen hash browns, and ended up combining them in the skillet with the onion and bell pepper for a few minutes (mostly because some were frozen in larger chunks and I didn’t want them to go into the casserole that way).
Ended up just dividing the bacon in half, pouring half into the first mixture and half on top after setting the eggs.
As other reviewers have noted, it took longer to bake for me (and I have a very new oven). I cooked it for 25 minutes, then checked and it still wasn’t really “set” but was very liquidy in the center, so I cooked it for another 5 — then topped it with the second half of the bacon. Cooked for another 25 minutes (I think? Maybe 30 — I was checking at 10-min intervals to make sure I didn’t overcook) and it came out AMAZING. Light and fluffy but with plenty of substance.
A definite do-again recipe! I can see this becoming a yearly Christmas/Easter tradition, as easy as it was to make and as delicious as it turned out. Thanks!!
I need to make a breakfast recipe a day ahead. Is this recipe ok to reheat ? I have to drive 2 hours away with it.
Yes, it reheats well. Enjoy!
I only had half used 1/2 lb of bacon called for and fresh potatoes and chives and baked it for 40 minutes and turned out great. Thanks for a recipe I can use often.
Glad you liked it!
Can you freeze after cooking?
Absolutely delicious! 5 of us almost ate the entire casserole for brunch! Used 1-1/2# of bacon and still could have used more! Also used fresh red potatoes, 1 yellow pepper and 1 green pepper. Served with sliced avocados, fresh fruit, cinnamon toast and oj…so yummy!!! Had to cook an hour but was definitely worth the wait!
Glad you loved it!
Absolutely loved this recipe! Thank you so much for sharing. I added a little more cheese and some oregano (because I love oregano with eggs). Bake time was just right. I will be making this again.
This looks like something the whole family will eat. I even have cooked bacon in the fridge. I will be making this tonight. Can’t wait to taste it. Thanks
Has anyone tried making this in a muffin tin for mini casseroles? Any thoughts on cook time?
I usually make in muffins pan but, we are having people over to watch a 9:00 am Ohio State university football game and I know this is easier when I have lots of friends over
What adjustments should I make to make half the amount? Thanks!
You can half the recipe and use an 8×8 inch pan.
Hi! Apologies if I missed this, but I saw in the note you can re-bake to reheat. If you bake the night before and then reheat in the morning, for how long and at what temp do you bake to reheat? Would you recommend that, or do you think it will be significantly less tasty that way? Thanks so much!
Of course fresh is best, but you can reheat it. Cover with foil and reheat at 350 degrees F for 20 to 25 minutes or until heated through.
This recipe was absolutely amazing and turned out great and tasty. Thanks for sharing. Will be making it again.
Yay! Glad you loved it!
Very very flexible recipe.. If you chop things adjust the prep time. You can put all kinds of veggies in her and use things from the garden. You can chop tomatoes, zucchini, chili’s, onions, leeks… This is a real opportunity to empty your veggie drawer.. You can also use all kinds of frozen pre-chopped veggies if you are in a rush. Bacon chopped, sausage chopped, veggie sausage.. even the garden burger cooked and chopped will work here. I also used a variety of cheeses to vary the flavor. Guyere, swiss, jack, cheddar.. whatever you have… grate it or dump it out of a bag.. Think of this as a kind of quiche without the crust.. 😉 To put in veggies without your kids knowing… grate zucchini .. it will blend right in.. I do that with sloppy joes too. Rice it or grate it. I baked mine at 375 for 50 min. It was golden brown and perfectly cooked. I think the cook time on the recipe might be off, but you know your own oven. Great recipe and great website!
Can I use frozen hash browns instead?
I love this recipe! It’s a favorite in our household. It’s often our Brinner – Breakfast for dinner meal. I prep it at lunch. I have made it with extra frozen potatoes, required longer cook time. I’ve swapped peppers, I’m allergic, to broccoli with great success. This is such a versatile dish. I makes a great meal prep too as I have left overs and eat it for breakfast the next day.
If I tell my guys it’s breakfast casserole for dinner everyone is excited.
I like to reheat for about 45sec- 1min depending on size and then toast for a while in my air fryer.
So glad you love the recipe!
I find bacon mixed into casseroles, even when crispy gets soft or soggy, does that happen?
Has anyone ever used fresh baby spinach? If so about how much? Thanks!
I cover it with foil then take it off last 15 minutes
My grocery delivery changed the potatoes from a iced to hash/shredded. Can they be used?
Should say diced : )
Yes, that is fine. Enjoy!
If I don’t add the bacon how long can this last in the fridge? Thank you!
Awesome recipe! Made exactly according to directions was perfect!
I made it for the first time so I don’t have to make breakfast every morning. I added Simply Potatoes Hashbrowns and added Serrano peppers. I cooked for 30 minutes and it came out perfect. I used heavy cream with some water since I forgot to buy milk.
Amita how long did this last in the fridge? I want to make it ahead for breakfast to grab and go. Thanks!
I made this dish. Was really good.
Only issue, after baking 40min. Potato’s could of been done a little more. Making sure potato’s done.
And with more flavor.
I would roast the potato’s first, in oven. With oil, salt, pepper and garlic.
Then put all ingredients together and bake .
This was easy, filling and absolutely delicious! The only change I made was that I used shredded potatoes. I’ll definitely be making this again!
I made this last night for dinner! I cut the recipe in half for 3 of us. It was delicious! We will definitely make this again!
Just enjoyed this recipe for the first time and definitely will be doing it again.
I used sausage instead of bacon but otherwise followed recipe to the word, including the total cooking time in oven for 40 minutes, 20 and 20.
A great way to start the day! Delicious!!
Just enjoyed this recipe for the first time and definitely will be doing again. I used sausage instead of bacon but otherwise followed this recipe to the word, including total cook time of 40 minutes, 20 and 20.
A great way to start the day! Delish!!
Easy, taste great , awesome for gatherings, neighborly hospitality, or for the morning after a night out on the town. Fresh potatoes are just fine , I used a tablespoon onion powder to cut time
What is the pan size you have used?
Hi! Could I use coconut milk instead of regular milk? I need some of it to be dairy free. Thanks!
If you like the flavor of coconut milk, that should be just fine. You could also use unsweetened almond milk.
Love this casserole. Made for family this weekend. Made it night before stuck in fridge to cook next morning. Had to cook a little more than the total 40 minutes because of the cold but no biggie.
Wish I checked the reviews prior to cooking, not even close to being done… After cooking for a total of 40 mins. at 350, I’ve now bumped up the oven to 450 and covered it. Wish me luck…
Made it..family favorite
Want to double the recipe wondering about cook time in a 5 quart dish?? Hell!
Can you double and use two pans? That would be my recommendation so it cooks evenly.
Making this breakfast casserole day ahead for Christmas morning. Think I will throw in a can of diced green chilies. Can’t wait to try it 🙂
Do you use the bacon grease to sautéed the peppers and onions
That is how I did it.
I just prepared this for christmas morning, since cooking in the morning should I wait to put the cheese on top till it cooks a bit in the morning?
Red pepper and onion added so much flavor! Absolutely my new Christmas morning dish! Thx and Merry Christmas!
Absolutely delicious and save me a ton of time Christmas morning! I used sliced potatoes in the can to save even more time
Made this for Christmas Morning. Did the prep work the night before. Followed the recipe and it cooked pretty much exactly as expected. Sautéed the pepper, onions and potatoes in some of the bacon grease . Was a big hit. Everyone loved it. Highly recommend for any special breakfast.
I made this for Christmas this year.
I made it up the night before.
For the bacon, I cooked all of the bacon in the oven to save me a hassle. If you have never done it, I do 400 degrees for 15+ minutes.
I used fresh shredded potatoes. I did not cook them prior.
I put green onions in the eggs and left some for the top. I love green onions in eggs.
For the cheese/onions on top, I just put it on before I was ready to bake it.
This came out perfect. Will definitely make again.
Can you use fresh potatoes in this recipe
Easy and loved by all. Added sausage and roasted mushrooms but otherwise followed the recipe.
I’ve tried several breakfast casseroles in the past for Christmas morning and none lived up to my expectations. Well, this recipe absolutely did. It was amazing and my kids loved it! I didn’t change a thing. And it came out picture perfect. Thank you so much.
Made this casserole for dinner. It was great. I didn’t have enough shredded cheddar cheese so I added what shredded cheeses I did have: mozzarella, Monterey Jack, and Parmesan. The four cheeses together made a wonderful combination. Will definitely make this again.
Glad you enjoyed the casserole.
I made this today and it was amazing! I cooked veggies in the bacon grease & I had a pillsbury pre-made pie crust left over from the holidays. I buttered a cast iron skillet and lined it with the pie crust. I treated the cheese like I do my Mac-cheese, which means I used sharp cheddar, Gouda, a lot of Swiss Gruyere, Muenster and a bit of Brie. It was off the hook! This is a keeper. Thank you!
Oh, because I cooked in cast iron skillet, would reduce total cooking time by about 10-minutes. Think I might add some cherry tomatoes next time….
Made this for a get together today and it was delicious! We devovered it.
Made this today for a spur of the moment brunch. I had to substitute Canadian Bacon for the bacon…It was what I had on hand… Easy and delicious! Everyone enjoyed it.. Thank you for the recipe..Looking forward to trying it with bacon next time..
I’ve made this recipe four different times now, and it’s fabulous. I love how you can easily substitute or add various ingredients as needed/wanted. Everyone really enjoyed this dish!
Can I make this with no potatoes?
This recipe looks so good, want to try for Easter brunch. Can I use fresh potatoes if I have instead of frozen?
Did you try it with fresh potatoes? I want to try it tonight for dinner
Jen – someone else said that they had made it with fresh potatoes and it worked excellently. 🙂
Do you have any directions for temperature and time if want to just bake it and keep in fridge overnight?
This is my go to big family dish, we did an Easter brunch at my daughter’s house and was asked to bring a brunch item, this one popped out loud and clear, thank you for thr recipe but I put a slight Mexican twist to it, I used Ortega green chilies (not hot) and Monterey Jack cheese, omitted the onions and peppers and kept the salt&pepper for taste. Big hit everyone loved it.
I made this for Easter. The day before I cooked the bacon and fresh hashbrowns and added onion and chopped fresh asparagus. The day of I forgot to add the cheese but it was great. I cooked it at 375, for 40 mins. Delicious.
What a great recipe! We had leftover peppers & onions, scalloped potatoes and ham from Easter. I threw everything in with some baby spinach and cooked up an awesome Sunday morning casserole that everyone loved. Thanks for posting this recipe.
THis looks great and I was planning on doing it this week. Can you please tell me if I should saute the potatoes with the onions and peppers if I use fresh potatoes please?
Yes, I would if you are using fresh potatoes.
Can I make and freeze?
I used 1 lb.of country style sausage instead of bacon also used frozen hashbrowns potatoes that has onion and green pepper in it I added more onion and fresh mushrooms. Yummy! Oh yes have to top it off with salsa
I saw you told someone they could make it and freeze it. How would you prepare it from frozen? Thanks!
everyone at the office liked this dish. Making it again and again.
I made this for a work team meeting. Everyone loved it and asked that I make it every time we have team meeting. Great recipe, easy to flow directions and tasty!!
This was delicious! I did add some spinach, tomatoes and green chilies. My husband loved it! I baked half this morning and will do the other half tomorrow. It’s a keeper:)
What are the instructions for reheating please?
How to do it when you dont have frozen potatoes
Very tasty. I added mushrooms and orange bell peppersl. Halved bacon and added breakfast sausage. Halved whole milk with sour cream. I might do breakfast hashbrowns next time. I like to bake them ahead to create a crusty layer on the bottom with everything piled on top.
I will make this again. That said, definitely not a 15 minute prep for me and I know my way around a kitchen. It seems most recipes nowadays are way off on prep time, so I’ll always expect more time.
I followed this recipe but we were disappointed. It tasted very salty…maybe I overcooked it a bit? Not sure but we won’t make it again. Thanks anyway.
I love this breakfast casserole when my guests have a long trip home on Sunday morning! I add fresh mushrooms and spinach to my sautéed veggies, plus cooked, spicy breakfast sausage on the bottom.
Is this casserole good to freeze?
recipe needs updating in order to get 5 stars here. it would be helpful to add clarification what to do with bacon grease at the end. I took the directions to mean that you include all the pan’s content when adding “vegetables” to the bowl of eggs. are we supposed to drain all or just some of it? we had to take time pouring grease off after it had baked a while, and it affected the texture also to bake in such a manner. so we realized too late that you must be intending for us not to let it turn out that way, right? thanks for update or response. other than that this was a good dish.
Jen – someone else said that they had made it with fresh potatoes and it worked excellently. 🙂
This is so easy to make and the taste is so yummy my first egg bake is successful
Thanks for the recipe
First time to make it happening soon. I could only get diced potatoes with onions and peppers already all together. Do I alter the onion/pepper in the recipe. Since I have never made this yet, I am not real sure with experimenting — that usually comes the next time(s). We get a lot of eggs from the farm, and this looks like a good way to use them when I am “drowning” in them.
Is there directions for a crockpot version
I’m going to make it
What brand do you recommend for the frozen diced potatoes? Do you cook them before stirring them into the casserole? This is unclear.
I’ve made this numerous times and it’s always so delicious and filling!
Looks good. Plan to make it later this week for the first time. I was wondering about a few things
1) What size red pepper?
2) Would half red and half green pepper work (or even whole of each)– or would that be a bit much, as we do like peppers.
One large pepper! Sure you can mix peppers!
One more question — I have seen that some have subbed O’Brien frozen potatoes for just the diced ones. Does the measurement change since I am not adding in the peppers and onion, since they are in the package?
I use potato o’Brien when making this and it turns out wonderfully. I also add one more onion.
Do you have a specific brand of frozen potatoes that you recommend ?
Super yummy and moist
Hello! I would like to make and take this to a gathering. I would have to reheat in an oven, what is the best way (time, temp, covered or uncovered) works best for reheating?
To reheat, I would cover it with foil and reheat at 350 just until heated through, probably 10 to 15 minutes. Just check it early!
Great! Will definitely fix this again
Can you use non frozen shredded potatoes?
Sautéed it with the onion and red bell peppers/capsicum.
I’m wondering the same thing. I guess I will find out.
Wish I had seen to ask for the label sooner than this! Every year I make my adult children an array of homemade goodies. I just got done making this for them for this year! It is as pretty as the picture you show and tastes delicious! Thank you for sharing this!! It was worth all the cranberry chopping! lol
Have a blessed Christmas!
HaHa!! I thought I was commenting on a different recipe!
Really bland, the diced potatoes are flavorless and the wrong texture for this recipe (I did thaw them first, dont think it would matter). Made it for Christmas morning and ended up throwing it away
Well honestly that just comes down to personal preference, not the fault of the recipe. Most of us have made it and loved it. It might not have been to your taste, but it wasn’t written specifically for you and to rate a great recipe 2 stars simply because of your own personal preference isn’t very polite or helpful when the recipe itself was not to blame. I don’t like pickles, but if I made a recipe with pickles in it and didn’t like it I wouldn’t blame the recipe and leave a low rating.
I made it for Christmas morning today, and I used hash brown patties… and it still was a hit! I couldn’t get any of the other kinds of frozen potatoes bc of all the shortages, so I used what I had. I cooked the patties before putting them in the oil sprayed casserole dish. I also left out onions and peppers and just put garlic in the cooked bacon and it’s grease. It cooked for about 30 minutes (I anticipated about an hour) and I took it out and put the rest of the cheese on top and it was delicious. I got a lot of compliments and recipe requests! Thank you for this recipe!!!
My family loved this. I used Italian blend cheese. It was a hit.
Great recipe! Had to modify it because I couldn’t find frozen potatoes, but results were fantastic. I ended up baking a small bag of small Yukon potatoes the night before, chilling the potatoes and dicing them to add into the casserole the next morning. Perfect! Thanks!
When I try this again I will delete the seasoning salt. Did not like the different taste I thought it took the bacon flavor away!
So good! My favorite “make ahead” breakfast recipe. A huge time saver for holidays! I’ve made it as written but have also tried it subbing out different veggies and meats/cheese and it is always amazing! Thank you!
So gooood! Perfect seasoning levels and green onions add the perfect touch.
I am feeding about 20 plus people, can I double this recipe or do I need to make 2 separate casseroles?
You will need two pans, but you can double and split between two pans.
I am making the bacon, potato and cheese casserole now for later today. Can I freeze this after its baked.
Can I make this without the potatoes?
Absolutely love this recipe and have made it a few times now! But there is no way the prep is only 15 minutes. By the time you fry the bacon, cut and fry the veggies, then crumble the bacon, grate the cheese etc etc. it feels like it takes forever! It’s still worth it, just don’t expect it to be fast 🙂 Give yourself enough time that you can enjoy the process. Thanks for a great recipe!
I’ve had a few different casseroles in my life; none made by myself. I just got a craving for one found this recipe online it was so easy and fun to make. I didn’t have frozen potatoes so I used fresh ones just cooked them while I was also cooking the bacon. I also put some leftover spinach from the nights before dinner. I made half portion of this recipe but the cook time was the same. Needless to say it was an extreme hit!! The thing I like about this recipe you can add and swap out different veggies so you can make a new casserole with same recipe.
Love this for company. I make at night and just pop in morning. I use whatever is in my frig. Onions, chives, any kind cheese. Sometimes more than one type of cheese. Left over meats. Hots sauces. Too when done with sour cream and chives.
I only plan on making this for my husband and me. Will it be just as good if I cut the recipe in half?
It I substitute hash browns, do I cook them in the skillet first and drain or put them in frozen? I will have 15-20 people. How many does it serve?
Thank you so much!
when making ahead, do you not add the 2nd cup of cheese until ready to bake?
Question — Do you have any idea how bland this casserole might be if you need to leave out the peppers and onions because of fussy grandkids? Any ideas on how to safely jazz it up? I’ve made it before for a non-fussy group — and would make it agin; but I am looking for some breakfast options for when we have fussy kids.
I used onion powder instead of onion, I don’t know what to do about the peppers short of pureeing them.
Hello I love this idea is there a way to freeze this then cook it?
I don’t have 12 eggs in the house. If I make it with about 8 or 9 eggs, would that alter the recipe too much?
It won’t be as thick and you might want to adjust the other ingredients.
Made this for Christmas morning and my family LOVED it. My son has asked me why I only make it once a year – haha. So I might break it out again on a non-holiday.
Yes, it is good year-round.
Have made this many times and it’s always a hit.
Prep time is definitely not 15 minutes, probably closer to 30-45 depending on how slow you chop, if you use fresh potatoes (which was my error but now I prefer it), and how fast you cook the veggies.
I bake this the night before serving it. I find it’s better the next morning, reheated. It also makes it easier for morning get togethers because I am not a morning person. We love it with Cholula and/or avocado.
This casserole is amazing. My hubby and 8yo scarf it down each time I make it.
Super easy and taste wonderful must have. When you tired of cooking this was great , !!!!!!!
Thanks so much…
This recipe was OK. It is better as a “base” recipe where you then add things to it. I added oregano, basil, and thyme to give it some spice as well as some crushed red peppers, salt, and pepper. I tripled the amount of peppers, one seemed too sad for an entire casserole. I also added more potatoes to further fill up the pan. Maybe it’s the way I cut the potatoes, but with the recommended cook time of about 50 minutes they did not cook all the way. They could’ve used an additional 15-20 minutes. Overall, a good recipe to build off of but I wouldn’t make it as is.
Would you have any suggestions on how I should do like half this amount? I’m only feeding 3 people and that’s just way too much for us to eat. Thanks in advance!!
You can half the recipe and put it in an 8×8 inch pan.
Hi there, I making this for a baby shower and would love to make it in smaller portions. Could I use regular size muffin tins?
Fabulous recipe! Used it for a employee breakfast for 50 people and it was delicious.
Oh good! Glad you enjoyed the recipe.
Hi! Your recipe looks great! I need to triple this recipe? Can I bake it it two big foil pans?
can your bacon potato egg casserole be frozen and then used or not used
Has anyone made this with sausage instead of bacon?
You can use sausage.
Made this for a brunch with my church friends and it was a huge success! I was told that it was perfect! Will make again
Absolutely Delicious! Cut recipe in half, baked the next morning. Only change: used minimal garlic. Thank you so much for sharing.
You are welcome!
Easy & delicious! Made boxing day morning for my family and they loved it!
I invite my in-laws over for brunch every year on my husband’s birthday and this year I made this dish using leftover ham in place of the bacon. Everyone loved it, it was a huge success. There were only two servings left and we had them the next morning. Just as tasty the next day.
The flavor is delicious, but some potatoes weren’t completely done. Next time I’ll give it a full hour at 350.
This did take much longer to cook for me. I cooked per instructions for 20 minutes, then another 30. Eggs were still runny. It wasn’t the cheese. Put in for another 15 minutes, still not done. So now it’s in for another 20. Hopefully that will do it. Can’t wait to try it.
I did use a 9×13 pan.
Hi! I’m excited to try this. I think I’m going to cook in advance, but afraid it may dry out. Any suggestions? How long do you recommend reheating for?
I made this on Christmas morning and it was a hit! Omitted the red peppers since my aunt is not a fan of them, and it was still super savory. Making it again this evening for brinner! Great recipe! 🙂
Could I bake these in muffin cups for a to go breakfast? My husband likes to take his breakfast to work
I made this dish for my husband’s birthday brunch on Christmas Eve. I made it the night before and used leftover ham instead of bacon. It was a huge success. I plan on using this recipe again often.
Is this recipe freezable once cooked? Could it be reheated once thawed?
I love this recipe! I make it once a week. The whole family loves it. This is so much easier than fixing a big breakfast. I substituted hot sausage for the bacon and added jalapenos and a zesty garlic blend instead of minced garlic. Thanks for the great time saving recipe!
I am so glad you love it!
HELP! I use these egg casserole recipes a lot. Love them! I could really use some advice, though. I would like to cook them in an 18x12x2 pan rather than a 9×13. Can this be done? What adjustments in time and temperature are necessary? Thanks much!
Love the recipe and so does the family. Is there any way to change the measurements to English or Australian measurements from the American? ie. Fahrenheit to Celcius and lb pounds to kilos etc? It sure would make cooking a lot simpler for folks in the Southern Hemisphere.
Thank you for considering my question, and hopefully, there is an easy answer.
and thank you for all of your wonderful recipes!
Made this for Easter brunch! What a hit! I cooked the day before and reheated it. My one daughter took just about all the leftovers home! It was just what I needed to complete my brunch menu. Thanks for sharing!
You are welcome!
I made this for our Easter breakfast at church. It was a big hit and it’s very delicious.
I am so glad everyone loved it.
Can I make this with leftover baked potatoes?
