A Fresh Twist on Turkey Burgers

Our classic turkey burgers are a staple at our house; we make them all the time. But recently, I decided to mix things up with a Mediterranean-inspired version, and let me tell you…these Greek Turkey Burgers are equally delicious! They’re made with fresh herbs, tangy feta, and a hint of lemon, and they stay incredibly juicy thanks to a few simple mix-ins like spinach and zucchini.

You can serve the burgers on toasted buns with all the classic Greek toppings: tzatziki sauce, lettuce, tomato, and red onion. They are super versatile and perfect for quick weeknight dinners, summer BBQs, and casual entertaining. Everyone always loves these protein-packed burgers!

Pair them with my lemon parmesan roasted potatoes, sweet potato fries or sweet potato wedges, or a bright Greek chickpea salad or refreshing watermelon feta salad for a complete meal.

Ingredients (with Helpful Notes)

  • Ground turkey: For juicy, flavorful turkey burgers, use 85% lean / 15% fat ground turkey, it has the right balance of moisture and richness.
  • Fresh spinach: Finely chop it so it blends into the patties without clumps.
  • Shredded zucchini: Squeeze out as much moisture as possible using a clean kitchen towel or paper towels; this keeps the burgers from getting soggy.
  • Feta cheese: Choose a creamy, good-quality feta; its tangy, salty bite adds richness and helps keep the burgers moist. Crumble it finely so it blends evenly into the burgers.
  • Red onion: Mince very finely for a subtle bite and to avoid large raw chunks.
  • Fresh parsley: Adds brightness; chop it finely to help it distribute evenly.
  • Lemon zest: Just a bit wakes up the entire flavor profile, don’t skip it!
  • Garlic powder: Easier than fresh garlic, and it blends better into the mix.
  • Dried oregano: Adds that unmistakable Greek flavor.
  • Crushed red pepper flakes: Optional, but great for a hint of heat.
  • Olive oil or avocado oil: For grilling or pan-searing, to make sure the burgers don’t stick.
  • Toppings: We like to top the burgers with tzatziki sauce, lettuce, tomato slices, and red onion (pickled red onions are good too). Want to switch it up? Try adding cucumber slices, kalamata olives, arugula, avocado slices, extra feta, or even spread some hummus on the buns.

Tips for Making Perfect Turkey Burgers

  • Don’t over mix the meat. Combine ingredients just until incorporated—over mixing leads to tough burgers. The zucchini, spinach, and feta add moisture so you don’t need an egg. These burgers are JUICY!
  • Shape patties slightly wider than the buns. They shrink a bit during cooking, so give them room to settle into the perfect size.
  • Chill before cooking. If time allows, you can refrigerate the patties for 15–30 minutes to help them hold their shape.
  • Oil your grill or pan. Turkey is lean and tends to stick, oil your pan before cooking. You can cook the burgers on a grill, on a grill pan, or even a skillet.
  • Don’t flip too soon. Let the burgers cook undisturbed until a crust forms and they naturally release from the pan or grill—this helps them stay intact.
  • Use a thermometer. Cook to an internal temp of 165°F to ensure they’re safe and still juicy.
  • Rest before serving. Let the patties sit for a few minutes off the heat to retain juices.
  • Toast the hamburger buns. We like to toast the buns so they don’t get soggy. If you need the recipe to be gluten-free, just use gluten-free buns.

Ingredients
  

For the burgers:

  • 1 pound ground turkey
  • 1/2 cup fresh spinach leaves, finely chopped
  • 1/2 cup shredded zucchini, excess moisture squeezed out
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, minced
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon lemon zest
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed pepper flakes
  • Olive oil or avocado oil, for grilling

For serving:

  • 4 hamburger buns, toasted
  • Tzatziki sauce
  • Lettuce
  • Tomato slices
  • Red onion slices

Instructions
 

  • In a large bowl, add the ground turkey, spinach, zucchini, feta, red onion, parsley, lemon zest, garlic powder, oregano, salt, pepper, and crushed red pepper flakes. Mix with your hands to combine.
  • Form the mixture into four 1/2-inch-thick patties.
  • Preheat the grill (or grill pan) to medium heat and brush with oil. Grill the burgers until cooked through, about 5 to 6 minutes per side. A turkey burger is fully cooked when the center of the patty reaches an internal temperature of 165° F.
  • Place the burgers on the toasted buns and top with tzatziki, lettuce, tomato, and red onion. Serve immediately.

Notes

How to Store:
Refrigerate: Store cooked burgers in an airtight container in the fridge for up to 4 days.
Freeze: Wrap patties individually in parchment paper, then place in a freezer bag. Thaw overnight in the fridge before reheating.
Reheat: Warm gently in a skillet over medium heat or in the oven or air fryer at 350°F until heated through. Avoid microwaving if you want to preserve the juicy texture.
