Sweet Potato Chicken Enchilada Bake: An Easy Twist on Enchiladas

If you love enchiladas but want a dinner that’s a little easier to put together, this Sweet Potato Chicken Enchilada Bake is for you! It has all the classic enchilada flavors with tender roasted sweet potatoes, shredded chicken, black beans, colorful bell peppers, red enchilada sauce, and plenty of melted cheese. Everything comes together in one baking dish, making this a great dinner for busy nights. Plus, it’s packed with protein, fiber, color veggies…it’s a win all-around!

I love the combination of sweet potatoes and enchilada sauce. The sweet potatoes become tender and caramelized as they roast, and their natural sweetness pairs so well with the smoky spices, savory chicken, and tangy red sauce. Black beans add extra substance, and Monterey Jack cheese melts over everything for that cheesy finish we all love.

Another reason this recipe works so well is that it uses cooked, shredded chicken. Rotisserie chicken is a great shortcut, and leftover chicken works beautifully, too. Roasting the sweet potatoes before adding the chicken mixture gives them time to soften and develop flavor without overcooking the rest of the ingredients.

This chicken enchilada bake is perfect for an easy weeknight dinner, Sunday meal prep, or a casual family dinner when you want something hearty and satisfying. Set out bowls of avocado, cilantro, green onions, jalapeños, and lime wedges so everyone can add their favorite toppings. I highly recommend serving it with a squeeze of fresh lime!

If you’re looking for a new way to use sweet potatoes or need another easy chicken dinner for your meal rotation, give this recipe a try. It’s a delicious twist on classic enchiladas, and you won’t miss the tortillas one bit!

Ingredients (with Helpful Notes)

ingredients in bowls to make sweet potato chicken enchilada bake.
  • Sweet potatoes: Cut them into small, evenly sized cubes so they roast evenly and become tender. I recommend peeling them first for the best texture in the bake.
  • Olive oil: Helps the sweet potatoes roast nicely and keeps the vegetables from sticking as they cook.
  • Yellow onion and red bell pepper: These add flavor, color, and a little sweetness to the chicken mixture.
  • Garlic: Freshly minced garlic adds savory flavor. Add it after the onion and bell pepper so it doesn’t burn.
  • Cooked, shredded chicken: Rotisserie chicken is a convenient option, but any leftover cooked chicken will work. Shred it into bite-sized pieces so it mixes easily with the other ingredients.
  • Black beans: Rinse and drain the beans before adding them. They add texture and make the bake extra hearty.
  • Red enchilada sauce: This brings all the enchilada flavor to the dish. Use your favorite store-bought sauce or my homemade enchilada sauce.
  • Chili powder, ground cumin, and smoked paprika: This combination adds warmth, earthy flavor, and a subtle smoky note.
  • Fresh cilantro: Stir some into the filling for freshness, then save extra for serving.
  • Monterey Jack cheese: It melts beautifully and gives the bake a creamy, cheesy topping. Pepper Jack is another good option if you like a little heat.
  • Toppings: Avocado or guacamole, green onions, sliced jalapeños, cilantro, fresh lime, and sour cream or Greek yogurt all work well. The fresh toppings balance the rich, cheesy filling.

How to Make Sweet Potato Chicken Enchilada Bake

  • Roast the sweet potatoes. Start by roasting the cubed sweet potatoes right in your baking dish. Give them a head start in the oven so they have time to soften and develop a little caramelization before you add the rest of the ingredients.

  • Prepare the chicken filling. While the sweet potatoes roast, sauté the onion and red bell pepper until softened, then add the garlic. Stir in the shredded chicken, black beans, enchilada sauce, and spices. Let everything heat through before stirring in the cilantro.

  • Bring everything together. Spoon the enchilada filling over the roasted sweet potatoes and gently mix in some of the Monterey Jack cheese. Sprinkle the remaining cheese over the top so you get a delicious cheesy layer.

  • Bake until bubbly. Pop the dish back into the oven until the cheese is melted and everything is hot. Since the sweet potatoes are already roasted and the chicken filling is warmed through, this final bake doesn’t take long.
  • Add the toppings and serve. Finish with fresh cilantro, green onions, avocado, and sliced jalapeño. Don’t forget the squeeze of lime! It adds a bright, fresh flavor that balances the savory enchilada sauce and sweet potatoes.

Tips for Making the Recipe

  • Cut the sweet potatoes evenly. Aim for roughly half-inch cubes so they cook at about the same rate. Larger pieces may need more roasting time.
  • Don’t skip roasting the sweet potatoes first. This gives them a head start and helps them develop better flavor. Adding raw sweet potatoes directly to the chicken mixture could leave them undercooked.
  • Use cooked chicken. Rotisserie chicken makes this recipe especially convenient. If you’re cooking chicken specifically for this dish, let it cool slightly before shredding.
  • Choose an enchilada sauce you love. The sauce is a major part of the flavor, so use a brand you love or try my easy homemade enchilada sauce, it’s the best. I always keep some in the freezer!
  • Adjust the heat. Use mild enchilada sauce for a family-friendly version, or add extra chili powder, Pepper Jack cheese, or sliced jalapeños for more kick.
  • Save the fresh toppings for serving. Avocado, cilantro, green onions, and lime brighten up the rich, cheesy bake. I wouldn’t skip the lime!

How to Store and Reheat

To store: Let the enchilada bake cool, then transfer leftovers to an airtight container. Refrigerate for up to four days.

To reheat: Warm individual portions in the microwave until heated through, or cover the baking dish with foil and reheat in a 350°F oven until hot. Add a small splash of enchilada sauce if the filling seems dry.

To freeze: You can freeze the bake in an airtight, freezer-safe container for up to three months. For the best texture, freeze it without fresh toppings and add those just before serving. Thaw overnight in the refrigerator before reheating, and make sure the center is heated through.

Ingredients

For the sweet potatoes:

  • 5 cups sweet potatoes, cut into 1/2-inch cubes
  • 1 tablespoon olive oil
  • Kosher salt and black pepper, to taste

For the bake:

  • 1 tablespoon olive oil
  • 1/2 yellow onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 3 cups shredded cooked chicken
  • 1 (15 oz) can black beans, rinsed and drained
  • 3 cups red enchilada sauce
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped cilantro
  • 1 1/2 cups shredded Monterey Jack cheese, divided

For serving:

  • Chopped cilantro
  • Sliced green onions
  • Avocado or guacamole
  • Sliced jalapeño
  • Lime wedges
  • Sour cream or Greek yogurt

Instructions

  • Roast the sweet potatoes. Preheat oven to 400°F. Place the sweet potatoes in a greased 9×13-inch baking dish. Toss with olive oil, salt, and pepper. Spread in an even layer, it’s ok if some of the potatoes are overlapping a little. Roast for 20 to 25 minutes, tossing once halfway through, until tender.
  • Cook the vegetables. While the sweet potatoes are roasting, heat the olive oil in a large skillet over medium-high heat. Add the onion and bell pepper and cook until tender, about 5 minutes. Add the garlic and cook for 1 minute.
  • Add the chicken. Stir in the shredded chicken, black beans, enchilada sauce, chili powder, cumin, smoked paprika, salt, and black pepper. Cook until everything is heated through. Stir in the cilantro.
  • Assemble the bake. Pour the chicken mixture over the sweet potatoes and add ½ cup of the cheese. Gently stir until combined. Top with remaining cheese.
  • Bake. Bake for 10 minutes, or until the cheese is melted and the bake is hot and bubbly.
  • Serve. Top with cilantro, green onions, avocado or guacamole, jalapeño, and a squeeze of fresh lime. Serve warm.

Notes

  • Chicken: Rotisserie chicken or leftover cooked chicken works well.
  • Sweet potatoes: Cut into evenly sized half-inch cubes so they roast evenly.
  • Cheese: Monterey Jack melts beautifully, but Pepper Jack or a Mexican cheese blend also works.
  • Serving: Add avocado, cilantro, green onions, jalapeños, and fresh lime just before serving.
  • Storage: Refrigerate leftovers in an airtight container for up to four days. Reheat in the microwave or in a 350°F oven until heated through.

Variations

  • Use a different bean: Pinto beans are a great substitute for black beans.
  • Make it spicier: Use hot enchilada sauce, Pepper Jack cheese, or extra sliced jalapeños.
  • Try green enchilada sauce: Swap the red sauce for green enchilada sauce for a different flavor.
  • Add more vegetables: Corn, zucchini, or sautéed poblano peppers would be delicious additions. Cook vegetables that release a lot of moisture first.
  • Change the cheese: Cheddar, a Mexican cheese blend, or Pepper Jack can be used in place of Monterey Jack.
  • Make it meatless: Leave out the chicken and add another can of beans or extra vegetables for a vegetarian version.
  • Serve with tortillas: You can put the filling in corn or flour tortillas for a heartier meal.
  • Enjoy with tortilla chips: My boys love scooping everything up with salty tortilla chips.
