Ultimate Veggie Sandwich
Ultimate Veggie Sandwich-this is the BEST veggie sandwich! It’s easy to make and great for lunch or dinner.
After we spent a weekend in San Francisco, we went to Lodi, California, to visit family. I had the BEST veggie sandwich at this little sandwich shop called Fiori’s Butcher Shop. You may have seen my sandwich on Instagram. Of course, I snapped a photo! 🙂
When Josh suggested the Butcher Shop for lunch, I didn’t think they would have any veggie sandwich options. It sounded like a meat only place, but they actually had quite a few veggie friendly items. Plus, they let you make your own sandwich and that is what I did. I created a mean veggie sandwich and I had to recreate it at home. This is the Ultimate Veggie Sandwich!
So what is on my Ultimate Veggie Sandwich? Lots and lots of veggies, DUH:) Ok, I will give you the full run down. It has spinach, cucumber, tomato, sprouts, avocado, roasted red peppers, red onion, and hummus. My California sandwich didn’t have hummus, but I added it at home and I am so glad I did. Super yum!
My sandwich in California, came on a Dutch Crunch roll. It was so good! It was soft and crunchy, the best of both worlds. I wasn’t sure I would be able to find Dutch Crunch bread at home, but a local bakery makes a Dutch Crunch baguette. Yay!
If you can’t find Dutch Crunch bread, you can use your favorite bread. I just like the soft, chewy, crunchy bread! Plus, the top of the bread is pretty and I was trying to stay true to my original sandwich.
We took our Ultimate Veggie Sandwiches on a picnic and they were perfect! Lots of tasty veggies surrounded by carbs, the best way to go!

Ultimate Veggie Sandwich
The BEST veggie sandwich you will ever eat!
Yield: 1 sandwich
Prep Time: 10 minutes
Total Time: 10 minutes
2 pieces of Dutch Crunch bread (or bread of your choice)
Spinach leaves or lettuce
Red onion slices
Roasted red pepper strips
Salt and black pepper, to taste
1. Spread hummus on the inside of one piece of bread. Top spinach or lettuce, cucumber, tomato, avocado, red onion, roasted red peppers, and sprouts. Season with salt and black pepper, to taste. Place the other slice of bread on top. Cut sandwich in half, if desired. Eat!
Note-if you need the sandwich to be gluten-free, make sure you use gluten-free bread.
