Ultimate Veggie Sandwich-this is the BEST veggie sandwich! It’s easy to make and great for lunch or dinner.

After we spent a weekend in San Francisco, we went to Lodi, California, to visit family. I had the BEST veggie sandwich at this little sandwich shop called Fiori’s Butcher Shop. You may have seen my sandwich on Instagram. Of course, I snapped a photo! 🙂

When Josh suggested the Butcher Shop for lunch, I didn’t think they would have any veggie sandwich options. It sounded like a meat only place, but they actually had quite a few veggie friendly items. Plus, they let you make your own sandwich and that is what I did. I created a mean veggie sandwich and I had to recreate it at home. This is the Ultimate Veggie Sandwich!

So what is on my Ultimate Veggie Sandwich? Lots and lots of veggies, DUH:) Ok, I will give you the full run down. It has spinach, cucumber, tomato, sprouts, avocado, roasted red peppers, red onion, and hummus. My California sandwich didn’t have hummus, but I added it at home and I am so glad I did. Super yum!

My sandwich in California, came on a Dutch Crunch roll. It was so good! It was soft and crunchy, the best of both worlds. I wasn’t sure I would be able to find Dutch Crunch bread at home, but a local bakery makes a Dutch Crunch baguette. Yay!

If you can’t find Dutch Crunch bread, you can use your favorite bread. I just like the soft, chewy, crunchy bread! Plus, the top of the bread is pretty and I was trying to stay true to my original sandwich.

We took our Ultimate Veggie Sandwiches on a picnic and they were perfect! Lots of tasty veggies surrounded by carbs, the best way to go!

Ultimate Veggie Sandwich Recipe

Ultimate Veggie Sandwich

The BEST veggie sandwich you will ever eat!

1 sandwich

Ingredients

  • 2 pieces of Dutch Crunch bread or bread of your choice
  • Hummus
  • Spinach leaves or lettuce
  • Cucumber slices
  • Tomato slices
  • Avocado slices
  • Red onion slices
  • Roasted red pepper strips
  • Sprouts
  • Salt and black pepper to taste

Instructions

  1. 1. Spread hummus on the inside of one piece of bread. Top spinach or lettuce, cucumber, tomato, avocado, red onion, roasted red peppers, and sprouts. Season with salt and black pepper, to taste. Place the other slice of bread on top. Cut sandwich in half, if desired. Eat!
  2. Note-if you need the sandwich to be gluten-free, make sure you use gluten-free bread.

  1. Yummy! In college, I used to order a hummus wrap at the cafe on campus. This reminds me a lot of the flavors used, but that bread is what makes this version 100 times better. What a perfect sandwich for a hot summer day.

  2. Best part here…..the sprouts!!! My wife has me sprouting and I honestly can’t believe I like them. I would actually eat this sandwich and for a meat and potatoes gym teacher like me, that’s a big deal. Put me in coach, I’m ready to play.

  3. Planning to try this soon, minus the onion. It sounds like it would also be tasty with a little cheese added instead of hummus, like maybe some good, fresh mozzarella?

  5. This sandwich does sound amazing! I’m starting to eat more veggie sandwiches and I love the idea of adding hummus. I used to be under the impression that I couldn’t get full on only veggies, but that is so wrong! I can’t wait to make this 🙂

  6. Hi- just want to quickly write and say that this sandwich is Amazing! My boyfriend and I have been working from home this week and today is already the 2nd day in a row we’ve been craving this! Admittedly I’m a vegetarian so I think this veg combo is top notch, but my meat-eating boyfriend can’t get enough either 😉
