Chocolate Chip Muffins

One of my friends sent me a tweet on Twitter last week asking me if I had a good recipe for chocolate chip muffins. I checked the blog and realized I have never made chocolate chip muffins. I didn’t want to let her down, so I went into the kitchen and made a batch of chocolate chip muffins.
The vanilla muffin batter is thick and studded with chocolate chips. I used semi-sweet chocolate chips, but milk chocolate chips would also work well. The batter was easy to mix together and the muffins only took about 20 minutes to bake. Josh smelled the chocolate aroma and thought I was baking cookies again. He was surprised when a pulled out a dozen beautiful chocolate chip muffins.
We usually don’t eat chocolate for breakfast, but we had to taste the muffins to make sure they were good enough for my friend. Everyone deserves a breakfast treat every once in awhile:) The vanilla scented muffins are dense and dotted with chocolate chips. If you are looking for an extra special breakfast treat, try chocolate chip muffins. They also make a great snack or dessert.
Chocolate Chip Muffins
Yield: 12 muffins
Cook Time: 17-20 minutes
Ingredients:
2 cups all-purpose flour
1/3 cup granulated sugar
1/3 cup light brown sugar
2 teaspoons baking powder
½ teaspoon salt
½ cup unsalted butter, melted and cooled
2 large eggs, lightly beaten
2/3 cup buttermilk
2 teaspoons vanilla extract
1 1/4 cups chocolate chips ( I used semi-sweet)Directions:
1. Preheat the oven to 375 degrees F. Line 12 muffin cups with paper liners. Set pan aside.
2. In a large bowl whisk together flour, sugars, baking powder, and salt.
3. In medium bowl stir together melted butter, eggs, buttermilk, and vanilla extract until well blended. Make a well in the center of the dry ingredients. Pour the liquid mixture into the well and gently stir until combined. Stir in chocolate chips.
4. Spoon batter into muffins cups. Bake for 17-20 minutes or until a toothpick comes out clean. Remove muffins from the oven and allow to cool before serving.

You are making me hungry. These look so good. My kids love it when I make chocolate chip muffins. They make great snacks and are a great treat for breakfast. I agree with Heather that chocolate chip muffins are the best when still warm and the chocolate is still nice and soft and melted.

You can use regular milk.

Chocolate muffins were always my go-to breakfast treat when I was a kid. I haven’t had them in forever but I’m betting these babies could also double as dessert!

OK, now I have to find my chocolate chip muffin recipe! After baking the muffins (I end up with about 36 small muffins) the instructions say dip the muffin top in melted butter and then into a bowl of cinnamon/nutmeg sugar. Oh. My. Gosh.

These remind me of a much better version of a chocolate chip muffin I used to have (almost) every day in high school. Agh, to have a 17-year-old metabolism again. Thanks for taking me back. I may just have to make them, eat one and send the rest off to a client or friend.
