Easy No-Bake S’mores Sandwiches

If you love s’mores, you are going to love these easy Chocolate Covered S’mores Graham Cracker Sandwiches! I take crunchy graham crackers and sandwich them with fluffy marshmallow and creamy peanut butter, then dip the whole thing in melted chocolate. A sprinkle of crushed graham crackers and flaky sea salt on top makes them extra special.

I love that you get all of the classic s’mores flavors in every bite—crunchy graham crackers, gooey marshmallow, and chocolate, but without needing a campfire. They’re simple to make, completely no-bake, and such a fun summer treat.

And if you are wondering why I add a layer of creamy peanut butter…have you ever made a s’more with a peanut butter cup? The combination is SO good, my favorite! The peanut butter in these sandwiches gives that same vibe. If you’re not a peanut butter fan, you can simply use more marshmallow fluff instead. They’re delicious both ways, but I am a sucker for peanut butter!

They’re the perfect summer treat, but honestly, I love making them anytime. They make a great homemade gift during the holidays, too. The graham cracker sandwiches look impressive, but they’re surprisingly easy to make, and you can make them ahead of time and keep them in the refrigerator for up to two weeks.

Ingredients (with Helpful Notes)

  • Graham crackers: Use regular honey graham crackers for the classic s’mores flavor. Break the sheets in half so you have individual squares.
  • Peanut butter: Use a creamy, no-stir peanut butter such as Jif or Skippy. Avoid natural peanut butter that needs to be stirred because it can be too runny and may ooze out of the sandwiches.
  • Marshmallow fluff: Marshmallow creme makes these easy to assemble and gives you that classic s’mores marshmallow flavor without needing to toast anything.
  • Chocolate chips: I like semisweet chocolate chips because they balance the sweet marshmallow and peanut butter. Milk chocolate will also work if you prefer a sweeter chocolate flavor.
  • Toppings: Crushed graham cracker crumbs add extra crunch and graham cracker flavor, while flaky sea salt balances the sweetness and makes the chocolate and peanut butter flavors pop.

Tips for Making the Graham Cracker Sandwiches

Use the right peanut butter. This is my biggest tip! Stick with a creamy, no-stir peanut butter. Natural peanut butter can be too oily and runny, causing the filling to squeeze out when you press the sandwiches together.

Don’t overfill the sandwiches. A tablespoon of each filling is just right. You want enough peanut butter and marshmallow to make them decadent without making the sandwiches difficult to dip.

Press gently. Place the peanut butter and marshmallow sides together and gently press them into a sandwich. If you press too hard, the marshmallow fluff can squeeze out the sides.

Melt the chocolate slowly. Microwave the chocolate chips in 30-second intervals, stirring well after each one. Chocolate can go from perfectly melted to overheated quickly, so don’t rush this step.

Dip carefully. Two forks make it easy to turn the sandwiches in the chocolate and lift them out. Let the excess chocolate drip back into the bowl before transferring them to the baking sheet.

Add the toppings right away. Sprinkle the graham cracker crumbs and flaky sea salt on while the chocolate is still soft so they stick.

Give them time to set. Refrigerating the sandwiches for about 30 minutes or freezing them for about 15 minutes gives you a nice, firm chocolate coating.

How to Store

  • Store the chocolate-covered s’mores sandwiches in an airtight container in the refrigerator for up to 2 weeks. Place parchment paper between layers if you are stacking them.
  • I actually love them straight from the refrigerator because the chocolate is crisp and the sandwiches have a little extra bite. Let them sit at room temperature for a few minutes if you prefer a softer texture.
  • You can also freeze the s’mores sandwiches. Once the chocolate is completely set, place them in an airtight freezer-safe container with parchment paper between the layers. Freeze for up to 1 month for the best quality. Thaw in the refrigerator or let them sit at room temperature for a few minutes before serving. The graham crackers may soften slightly after freezing, but they will still be delicious!

Ingredients
  

  • 9 graham cracker sheets, broken in half (18 squares total)
  • 9 tablespoons creamy peanut butter, like Skippy or Jif
  • 9 tablespoons marshmallow fluff
  • 1 3/4 cups chocolate chips
  • Crushed graham cracker crumbs, for garnish
  • Flaky sea salt, for garnish

Instructions
 

  • Make the sandwiches. Spread 1 tablespoon of peanut butter on 9 graham cracker squares. Spread 1 tablespoon of marshmallow fluff on the remaining 9 graham cracker squares. Gently press the peanut butter and marshmallow halves together to make 9 sandwiches.
  • Melt the chocolate. Place the chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each interval, until smooth and melted.
  • Dip in chocolate. Using two forks or a dipping tool, dip each graham cracker sandwich into the melted chocolate, turning to coat completely. Lift the sandwich out, allowing the excess chocolate to drip off, then place it on a parchment-lined baking sheet.
  • Garnish. While the chocolate is still soft, sprinkle with crushed graham cracker crumbs and a pinch of flaky sea salt.
  • Set. Place the chocolate-covered sandwiches in the refrigerator for 30 minutes or in the freezer for 15 minutes, until the chocolate is completely set. Enjoy immediately or store in an airtight container in the refrigerator.

Notes

  • Use creamy, no-stir peanut butter such as Jif or Skippy. Natural peanut butter can be too runny and may ooze out of the sandwiches.
  • Work gently when pressing the peanut butter and marshmallow graham crackers together so the filling doesn’t squeeze out.
  • If you don’t like peanut butter, you omit the peanut butter and use more marshmallow fluff.
  • Add the graham cracker crumbs and flaky sea salt while the chocolate is still wet so they stick.
  • Store the finished sandwiches in an airtight container in the refrigerator for up to 2 weeks.
