Cucumber, Chickpea, and Pita Salad

Cucumber, Chickpea, and Pita Salad-this fresh and simple salad is made with cucumber, chickpeas, pita chips, feta cheese, dill, and a light lemon dressing.

I usually don’t make a recipe more than once or twice because I am always creating new recipes for the blog and I like to try new things. This drives Josh crazy sometimes because he doesn’t mind eating the same thing over and over. When he requests his favorites, I usually say no because I have a new recipe to try:) Don’t worry, if it is his birthday or Father’s Day I let him pick. See, I am nice…sometimes:)

I made this Cucumber, Chickpea, and Pita Salad last week and I have already made it THREE times. I am breaking my own rule! I can’t help it, it is so good!

Josh couldn’t believe I made this salad three times, especially in one week. He checked my temperature to make sure I wasn’t coming down with something, ha! Luckily, he loves this salad as much as I do. He was happy to see it on our dinner table again and again…and again!

Cucumber, Chickpea, and Pita Salad Recipe

Cucumber salads are perfect for summertime because they are fresh and you can use up your garden cucumbers! For this salad, I started with cucumbers and added chickpeas, dill, feta cheese, green onions, and pita chips. I I whisked up a simple lemon dressing, tossed the salad, and served! Salad perfection!

If you skeptical about the chips in the salad, don’t be. Trust me on this one! They are kind of like the croutons. They add the perfect crunch. If you are going to make the salad in advance, don’t add the pita chips until you are ready to serve. You don’t want them to get soggy. The rest of the salad can be made up to a day in advance, just keep it in the fridge.

You can serve this Cucumber, Chickpea, and Pita Salad as a side dish, it goes great with any meal, or it can be your meal! It is light, refreshing, and TASTY!

This Cucumber, Chickpea, and Pita Salad isn’t going anywhere. I am going to make it over and over until Josh is begging for me to make something new:)

Cucumber, Chickpea, and Pita Salad

This fresh and easy cucumber salad is perfect for potlucks, picnics, and barbecues.

Ingredients
  

For the Dressing:

For the Salad:

  • 2 medium cucumbers peeled, and cut into 1/2-inch pieces
  • 1 15 oz can chickpeas, rinsed and drained
  • 2 green onions chopped
  • 2 tablespoons finely chopped fresh dill
  • 1/2 cup crumbled feta cheese
  • 1 cup pita chips broken into bite size pieces
  • Salt and black pepper to taste

Instructions
 

  • In a small bowl, whisk together olive oil, vinegar, lemon juice, garlic, salt, and pepper. Set aside.
  • In a medium salad bowl, cucumber, chickpeas, green onion, dill, feta cheese, and pita chips. Drizzle dressing over salad and gently toss. Season with salt and pepper, to taste. Serve.
  • Note-if cucumber seeds bug you, you can remove the seeds or buy seedless cucumbers.
