Snickerdoodle Biscoff Sandwich Cookies

On Saturday, I attended a food blogging brunch and cookie swap with some of my dearest Utah blogging friends. When I asked Josh what cookie I should make to take to the swap he said Snickerdoodles. They are one of his favorite cookies, so I know the answer was a little selfish. I am sure he was hoping to be the taste tester:) I didn’t want to take plain old snickerdoodles, so I created a Snickerdoodle Biscoff Sandwich Cookie. The Biscoff cinnamon filling takes snickerdoodles to a whole new level of goodness.

Josh babysat Caleb so I could have a day out with the girls. They both get bonus points for doing the Saturday chores while I was gone:) I had a wonderful time at the cookie swap. The brunch was delicious and I spent hours chatting and laughing with my friends. Of course, we talked about food and blogging, but more importantly we talked about life. I love social media and the online community, but it so refreshing to meet up with friends in person, especially during the holiday season. I am so blessed to have so many amazing friends. I am in continuous awe of their talents, accomplishments, beauty, and big hearts. I want to be like them all when I grow up.

The best part of the day, besides the good food, friendship, and cookies, was raising money for Cookies for Kids’ Cancer. We all donated money to support Cookies for Kids’ Cancer, an organization that raises money  to support research for new and improved therapies for pediatric cancer. We are glad we could help raise a little money for such a wonderful charity. We plan on making our cookie swap an annual event.

Snickerdoodles are a holiday favorite and the cinnamon Biscoff filling makes them even better. The filling compliments the cinnamon sugar snickerdoodle nicely.  I know I will be making these every holiday season…and probably before then because I can’t wait an entire year to eat these again:)

Snickerdoodle Biscoff Sandwich Cookies

Classic snickerdoodle cookies with a sweet Biscoff cinnamon filling. These sandwich cookies are fun to make and eat. Make a batch for your holiday cookie swap.

  • 1. Preheat oven to 350 F. Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.
  • 2. Sift together flour, baking powder and salt; set aside. Put butter and 1 ½ cups sugar in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale and fluffy, about 3 minutes. Mix in eggs, one at a time. Reduce speed to low and gradually mix in flour mixture.
  • 3. Stir together cinnamon and remaining 2 tablespoons sugar in a small bowl. Shape dough into balls, I used a heaping teaspoon of dough. Roll balls in cinnamon and sugar. Place cookie dough balls on prepared baking sheet and bake for 8-10 minutes, until edges are golden. Let cookies cool on baking sheet for 3 minutes and then transfer to a wire cooling rack. Let cookies cool completely before filling.
  • 4. To make the Biscoff cinnamon filling: Combine the butter, Biscoff Spread, confectioners' sugar, and cinnamon in the bowl of a stand mixer fitted with the paddle attachment. Beat on medium speed until smooth. Add the milk and beat until fluffy.
  • 5. To assemble the cookies, find two cookies that are similar in size. Using a knife, spread about a tablespoon of the Biscoff filling on the inside of one cookie. Sandwich the cookies together.

  1. There is nothing better than a really good snickerdoodle.

    Except of course if it has a schmear of Biscoff spread (love that stuff and the new TJs speculoos spread) and you make sandwich cookies out of the snickerdoodles. YUM!

  16. FYI… I found Biscoff Spread at our local Big Lots store. I love the stuff and eat it by the spoonful! I strated buying 5 jars at one time because I seem to use it up fast!

  19. Trader Joes is the best. The only people I know who don’t shop there are those who don’t have a TJ in their town. These look yummy. Making sandwiches out of cookies is fun, except my kids say “but I only had one” when in reality they’ve now had 2 cookies 🙂

  27. I had never heard of biscoff spread but wanted to try these cookies to share with family for Christmas. So I bought the spread and other ingredients today. I couldn’t resist and tried the spread. Amazing! Rachel asked me how it was, as I licked the spoon clean. I said, tastes like cookie dough in a jar. She immediately grabbed a spoon and tried. We both had another heaping scoop before putting it away (for our own good!). These cookies are going to be amazing! Can’t wait to bake them later this week.   29. Question for you – I want to bake these tonight for Christmas day. Will they hold up if I seal in a plastic bag? Or would you recommend trying to bake as close as possible?

    1. If you have to make the cookies tonight, I would keep them in an air-tight container or bag and wait to make the filling. You can spread the filling on a day before serving. Of course fresh cookies are best, but if you have to do them ahead, that is my advice:)

  30. Thanks Maria! Some cookies taste better with age like tricolor rainbow cookies – but I know not many. Maybe I’ll see if I can freeze the dough and bake as close as possible.     1. If you can’t find Biscoff Spread, you could try a cinnamon buttercream to fill the cookies. Or just eat them plain:)

  33. These were divine, so soft amazing tastes like a snicker doodle w no cream do tarta, I think that is why they stayed so moist, Delish. Thanks.

  34. These were amazing.. Snickerdoodles normally get hard over time, I think because this recipe does not call for nutmeg they stayed so so moist. Will never put nutmeg in the cookies again. So yummy!

  36. I used the exact same recipe to make my own snickerdoodles! (except I baked mine at a higher temperature – b/c I found that this gave the cookies more of a chewy texture while the lower temperature made slightly cakey cookies. Both are super yum though!)

    I never thought to make sandwiches out of them, using Biscoff. Genius!

  37. Yum these snickerdoodles look delicious! These are by far my favorite cookies. The only thing I like as much as snickerdoodles are firearms in easton pa. Unfortunately you can’t eat those, but they’re still good.

  38. I didn’t think this recipe was too great. First, there was way too much baking powder. I expected the cookies to be flat like the picture – instead they were very rounded. When you put two together, they are huge – almost too big to take a bite, and certainly too big to pack in small gift packages.

    I also thought there was too much butter and milk in the icing. The icing was very loose, and the cookie sandwich halves slid around as a result.

    The snickerdoodle cookie itself was delicious on its own, and if I weren’t trying to sandwich them, I’d be fine with the roundness. I’d skip the biscoff icing entirely – it didn’t add anything but work to the cookie.
