Zucchini Cookies with Chocolate Chips and Dried Cranberries

Is your garden producing obscene amounts of zucchini right now? We didn’t plant any zucchini this year, but I knew we wouldn’t go without. Our good friend is kindly sharing his never ending supply. I decided to make good use of the zucchini and bake a batch of zucchini cookies with chocolate chips and dried cranberries.

These cookies have oatmeal, cinnamon, chocolate chips, dried cranberries, and of course the star ingredient-zucchini.  I only had to use four tablespoons of butter because the zucchini kept the cookies nice and moist. You will never know there is less butter involved because these cookies are delicious! I personally think these cookies are best when eaten frozen. Maybe I am weird, but try it, you might like it:)

If your garden or neighbor’s garden is overflowing with zucchini, make a batch of zucchini cookies with chocolate chips and dried cranberries. You might have to hunt down extra zucchini after taking one bite of a cookie. They are that good! You will want to make batch after batch.

Zucchini Cookies with Chocolate Chips and Dried Cranberries

  • Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
  • In a medium bowl, whisk together flour, baking soda, salt, and cinnamon. Set aside.
  • In a large mixing bowl, combine butter and sugars, mix until smooth. Add egg and vanilla extract. Next, add the shredded zucchini. Mix until combined.
  • Slowly add flour mixture until just combined. Stir in oats, chocolate chips, and dried cranberries.
  • Drop cookie dough by heaping tablespoonfuls 2 inches apart onto baking sheets that have been lined with parchment paper or Silcone baking mats. Bake for 15 minutes or until golden. Remove cookies from pans; cool completely on wire racks.

  5. I wonder what it is about zucchini that it adds something special to breads and cookies, but it does and there is a feeling that it somehow transforms that treat to something a bit more healthy…lowering the fat is a great idea.

    I see Mags mentioned it but I’ll repeat as so many of my friends have never thought of it; shred your over abundant zucchini and store in portion sized bags then thaw and dump into treats in the winter when you wish you had some of that zucchini lining your counter now!

  11. What a great way to use up zucchini! I am a huge fan of dried cranberries in my cookies too. Re: your comment, we should definitely chat! I did my graduate assistantship in worksite wellness, then moved on to public health via cooperative extension. That’s what I”m going back into now. I’m sure we would have lots of stories to share! I’d love to know what is going on in your area as well. The good things always seem to start on that side of the States first. 🙂

  12. Oh man these look GOOD! I don’ t have any zucchini this year! The ones I planted were seeds leftover from last year and none sprouted. My neighbor’s zucchini hasn’t done as well so he hasn’t had extra. I guess I will have to go buy some so I can make these.

  16. I just came across your blog and I love it! I can’t wait to try this recipe. When I was first married 12 years ago, my mother-in-law used to bake a chocolate cake for me, which I loved. What she didn’t tell me was that it was a chocolate zucchini cake (I never ate vegetables until recently). She knew that I wouldn’t eat it if she told me that there was zucchini in it! The zucchini definitely kept it moist.

  26. Would using frozen shredded zucchini from last summer work? When it defrosts there is quite a bit of liquid. When I make bread, I throw it all in and it works but I’m not sure with cookies if I should drain the liquid first or not. Any ideas? This recipe looks great! Thank you!

    1. Squeeze the zucchini in a paper towel before using, then you should be fine. Enjoy!

    1. I used a grater, but a food processor would work too. I did it on the medium grate. I didn’t peel the zucchini either.

  28. The cookies have a wonderful flavor. However, mine came out flat as a pancake. I ‘ll make again, but the next time I’ll squeeze out most of the water from the Zucchini before I add it to the mix. I had to add another 3/4 cup of flour in order for my cookies to come out like the picture.

  33. One question. I see flecks of green in your cookies. I peeled mine before shredding. I’ve never baked with Zucchini and I don’t think the recipe said one way or another. Did I do it wrong? Ooops. And I’m not even blond. lol

  34. These are absolutely wonderful! I made a different cookie recipe last year with zucchini which had no oats, but had a lemon glaze, they were pretty good, but these blew them away! Beautiful soft chewy/cakey cookie, I didn’t have quite enough cranberries for the double batch I made, so I added a bit of coconut, which worked out well, I think I might keep that addition. Fantastic! Thank you =)

    1. Hi-glad you liked the cookies! I put them in a freezer bag and freeze! You can eat them right out of the freezer or let them come to room temperature. They are good both ways!

    2. I freeze them on a cookie sheet then use my food saver to freeze them. I bundle the in 4 per pack. Or use small freezer bags then put them in one large one for easy grab and go.

  44. Do you use kosher salt, sea salt or table salt? I made these with 1 tsp of kosher salt, but I thought it needed more. Please advise.

    1. Table salt, but you can use kosher or sea salt. If you want a salty kick, you can add more salt to your liking. You can also sprinkle the cookies with flaky sea salt.

    This is a great mix of flavors (I made the cranberry ones) and we all enjoyed them. Mine didn’t look nearly as pretty, they came out of the oven without rounding out at all. But flavor-wise, these are awesome and a great use for zucchini!

    Loving different ways to use up zucchini this season. I eliminated the white sugar but these were still a bit too sweet for my taste. I zested a lemon as an experiment and thought they were improved. I will make these again and reduce the choc chips and cranberries by half and zest 2 lemons into the mixture. Texture of cookies is nice and soft on day 2. My husband has eaten 5, so maybe they are great.
