Baked Zucchini Fries Recipe
I am not a French fry kind of gal. I love baked sweet potato fries, but the deep fried French fries don’t appeal to me. I had some zucchini that needed to be used, so I decided to try baked zucchini fries.
I asked Josh if he wanted some of my fries and he turned up his nose. I was kind of surprised because he loves baked sweet potato fries too and most vegetables. He didn’t like the idea of baking zucchini and calling them fries though. They sounded “too healthy” to be good. So I went along my merry way preparing the fries. He decided to make some zucchini fries too-but he fried his in olive oil on the stove.
When we sat down to eat dinner together, he asked if he could try one of MY healthy fries. I already tasted one, so I knew they were down right delicious, so of course I shared:) He tasted one, and then another and another. He loved them! He thought they were much better than his fried fries. Ha! The healthy fries win! Yahoo!
If you are looking for a healthy alternative to fries, give these a try. We dipped them in homemade marinara sauce. You can use store bought if you wish. These fries make a great side to any meal or a fun snack! Don’t forget about this recipe-I know it will come in handy when you have summer zucchini growing out your ears:)
Baked Zucchini Fries
Ingredients:
3 medium zucchini, sliced into skinny sticks
2 large egg whites, beaten
1/2 cup whole wheat bread crumbs (we make our own)
2 T grated Parmesan cheese
1/4 tsp dried basil
Pinch of dried oregano
1/4 tsp garlic powder
Salt and pepper, to tasteDirections:
Preheat oven to 425°. Spray a baking sheet with cooking spray. Set aside.
In a small bowl, beat egg whites with a fork until frothy.
Put the breadcrumbs, basil, oregano, garlic powder and cheese on a plate-I used a pie tin. Mix well.
Dip the zucchini sticks in the egg whites and then into the bread crumb mixture, make sure all sides get coated well. Place the sticks on the prepared baking sheet. I did the sticks one by one.
Bake at 425° for about 20 minutes or until golden brown and a little crispy. I turned over the fries half way through. Serve warm. We like to dip ours in marinara sauce.

I’ll definitely be back to this recipe! We always end up with more zucchini than we know what to do with at the end of summer. My husband will love these! If he’ll eat carrot fries, he’ll eat anything
What a nice healthy alternative to fries!!!
I have made this recipe quite a few times; it has become a staple in my home! I love how versatile these are, and as you experienced, they win over even the biggest fried food lovers
Oh i definatly need to try this. My bf has crohns and this might work, of course omitting the cheese.
These look delicious! I can’t wait to try them. – mary
Love the idea of making fries out of zucchini. And I love even more that the healthy version won!
Maria, what a great, healthy alternative to french fries! I love the marinara sauce dip as well!
What a fun way to use up zucchini!

I don’t know if I’ve ever had zucchini.
Oh I am SO making these tonight with some burgers! This is a great idea and I WILL remember it when I have zucchini growing in droves out in my garden! They look delicious!
What a great idea…I’m going to have to try and get my husband to eat these.
Yum! Carrabba’s has some fantastic zucchini frites (but very fried), these would be a great alternative.
These look delicious! I’m always looking for fun vegetable sides, and this one looks great (fun appetizer, too!) I’m going to remember this one – I’m sure I’ll be looking for it often this summer!
I will take these over french fries any day. Much more addictive, in my opinion. I think I will make some over the weekend, so thank you for the inspiration!
Baked zucchini fries are one of my favorites (although, I admit that I have eaten my share of french fries, too)… Yours look great!
I made these lastnight and they were awesome! Thanks for another great recipe!
I love sweet potato fries and the girls do too, but I will have to try these this weekend for the girls. Any way to get the veggies in! Thanks Maria!
I made these last night. My kids (ages 2 & 4) were my sous chefs and so we made our first batch with everything according to the recipe, but we used panko bread crumbs instead of whole wheat. For some reason we had still had half a bowl of zucchini left, but we ran out of the breading mixture. So we made a second batch of breading mix, except this time we used the whole wheat. Both of the batches were delicious! We also made your marinara sauce and had quite a bit left over, so that will turn into a lovely sauce for a homeade pizza!
Thanks for the delicious and healthy recipe. The huzzband and I ate the “fries” as dinner!
I’ve been wanting to try to make something like this…will follow your recipe when I get some zucchini! They look great with the sauce to dip in!
I need this.. I really do! It sounds so good!!
I have always love breaded fried zucchini and if I can have them just a tad healthier by baking them then more for me! Great recipe! And love the marinara sauce with them. Beautiful!
We make these every summer… and they are the best!!! Thanks for sharing yours!
Blessings-
Amanda
Oh dear, I got behind in my reading. But I’m glad I didnt miss this recipe, They look delicious and I know my family would love them. Bookmarked and thumbs up!!!
maria! this sounds amazing!
I love those fries. Been looking for a good baked zucchini fry recipe for a while now. My 14-year old claims to NOT like zucchini. Let’s see what he thinks of these. BTW, do you think a whole egg would work just as well? I don’t have the heart to toss out the yolk!

Liz-I hope you like the fries. Yes, you can use a whole egg instead of the egg whites.
I just love zucchini, and use it quite a lot, but never thought of making fries with it. And I love that you baked the fries for a healthier option. A must try.

I love zucchini I will have to try this recipe this summer when my zucchini come up in my garden.
Oh yes, this is something I’d definitely like. I would love to dip them in garlic sauce, I wonder how it would taste. This is a nice and easy recipe, I will try it for sure.

I made these tonight. My 2 year old (and I) loved them! However, I didn’t think they were crispy enough after 20 minutes. I let them bake on one side for 20 minutes, flipped them and baked them for 15 more minutes and they were fantastic! And I agree with Tristan, I ran out of bread crumbs after 2 zucchinis and had to make more for the 3rd zucchini. I also needed 2 baking sheets to fit all the fries. The flavor balance was really great and I didn’t add any salt.

I know I already mentioned it on Twitter, but I made these for dinner last night and we loved them! I put the breadcrumb mix into a baggie, added the zucchini after it had been dipped in egg and gave it a shake because I was short on time. It seemed to work pretty well! Can’t wait to make them again

Love these… I make a recipe very similar to this one. Delicious!
