Baked Oatmeal is a comforting, satisfying, and delicious breakfast. I love making a pan so I have breakfast ready to go for the week. This is a great meal prep recipe. Just reheat and breakfast is done!

This Apple Cinnamon Baked Oatmeal recipe is seasoned with cinnamon and filled with lots of fresh apple chunks. The apple cinnamon combo is a classic and perfect for fall or anytime of the year.

You can garnish your bowl with toppings to make the oatmeal extra special. I always like putting out several options for the family to customize their bowls.

Start your day off right with apple cinnamon baked oatmeal. It is warming, wholesome, and good for the soul.

Oatmeal Ingredients

  • Oats– use old fashioned oats and not quick oats. If you need the recipe to be gluten-free, make sure you use gluten-free oats.
  • Cinnamon– cinnamon is SO good in oatmeal.
  • Baking powder– to give the oats a lift in the oven.
  • Salt
  • Milk– I use unsweetened vanilla almond milk, but you can use any milk.
  • Applesauce– use unsweetened applesauce.
  • Pure maple syrup– for naturally sweetening the oatmeal. You can use honey, coconut sugar, or brown sugar.
  • Butter or coconut oil– use whatever you prefer, both work well.
  • Eggs– use large eggs.
  • Vanilla extract– adds great flavor.
  • Apple– I don’t peel the apple, but you can. I love Honeycrisp apple in this recipe, but you can use your favorite apple.

How to Make Apple Cinnamon Baked Oatmeal

  • Preheat oven to 350 degrees F. Grease an 8×8-inch baking dish with nonstick cooking spray and set aside.
  • In a large bowl, combine the oats, cinnamon, baking powder, and salt.
  • In a medium bowl, combine the milk, applesauce, maple syrup, butter or oil, eggs, and vanilla extract.
  • Add the milk mixture to oat mixture; stir well. Stir in the diced apples. Pour the oatmeal mixture into prepared pan and bake for 30 to 40 minutes or until oatmeal is set and golden brown.

Toppings

You can jazz up your bowl of oatmeal with a variety of toppings. Here are some ideas!

  • Whipped cream
  • Yogurt
  • Nut butter
  • Drizzle of maple syrup or honey
  • A sprinkle of brown sugar
  • Dash of cinnamon
  • Splash of milk
  • Dried cranberries or raisins
  • Apple slices

How to Store

Baked oatmeal is a great recipe for meal prepping. It will keep in the refrigerator in an airtight container for about a week. Make a big batch on Sunday so you can enjoy a healthy and delicious breakfast all week long.

Reheat in the microwave or I even like the oats cold. I know that sounds weird, but try it:)

Ingredients
  

  • 2 1/4 cups old fashioned oats
  • 1 3/4 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 3/4 cups unsweetened vanilla almond milk, or milk of your choice
  • 1/2 cup unsweetened applesauce
  • 1/3 cup pure maple syrup, can use brown sugar or honey
  • 2 tablespoons melted butter or coconut oil, slightly cooled
  • 2 large eggs beaten
  • 2 teaspoons pure vanilla extract
  • 1 cup diced apples, I like Honeycrisp
  • Optional toppings: whipped cream, yogurt, nut butter, drizzle of maple syrup/honey or sprinkle of brown sugar if you want it sweeter, dash of cinnamon, splash of milk, apple slices, or dried cranberries

Instructions

You can easily double this recipe. Make in a 9×13-inch pan.

  8. 5 AM is my wak-eup call too. I love getting my workout in and having a few moments of peacefullness before house gets up! Do you think I could cut the recipe in half for our weekday morning breakfast routine – 20 min is just enough time for me to gets kids dressed, coffee made and backpacks packed!

    1. If you put the oatmeal into individual serving dishes it would cook faster. You can also make it the night before and just reheat in the morning. It reheats really well. I sometimes make a big batch on Sunday so I have it to eat during the week.

    1. Yes, it reheats well. I like to make a big batch so I can eat it all week. Just reheat in the microwave, you might need to add a splash of milk, but that is it!

    1. I have made it with one large egg instead of egg whites and it works well. The egg whites maybe firmed it up a bit, but not much. I didn’t mind the texture:) If you try omitting them, let me know how it works! Enjoy!

    1. I haven’t tried making it the night before, but I am sure it would work. I have reheated it the next day and it is great. I just add a little milk before reheating it to “freshen” it up. Enjoy!

    1. I usually make it in an 8×8 dish, but I made it in a smaller dish for the photos:) It is more pretty in that dish..ha!

  57. I have made this so many times and it always disappears so fast. Sometimes I even munch on it as a dessert. I usually throw in some raisins and crushed up sliced almonds as everyone in my house likes them. And I usually just use 2 whole eggs because I’m lazy and it seems to come out fine.

    It’s great hot or cold and it does keep well for several days (if it lasts that long). I love having a quick and filling breakfast on hand and I love that we are eating more oats. Thank you so much for this recipe.

  58. Would this recipe work with Gluten Free oats? Also, I need to make this recipe for a crowd. if I double or even triple it and put it in a 13 x 9 pan, how long should I bake it? Would I double the time?

    1. I am sure GF oats would work. Yes, you can make a large batch. I would set the timer for the original time and then check it. If it is not close to being done, bake for longer. Enjoy!

Almond milk for the milk, and 1/2 cup canned pumpkin because I only had 1/2 cup applesauce. Love it! I usually make it on the weekends, then warm it up during the week. I actually mixed this up and baked it last night, so I just reheated a small portion for breakfast this morning and added my toppings.   66. This is delicious! Today is the 3rd Sunday in a row I’m making it for grab-and-go breakfasts for the week. But I do have to say it takes more like 30 minutes to set the oatmeal- it could just be my oven (but this is the only recipe where I have to cook it for significantly longer than the recipe suggests).

    I’ve really been enjoying your food blog, recipes and cookbook! I am wondering if you’ve experimented with deleting the eggs in the apple cinnamon baked oatmeal recipe? My husband and I love the original but my grandson has an mild egg allergy and I’m trying to decide if the recipe would turn out ok without the eggs?
    BTW, my husband is originally from SLC so we enjoy reading about the local restaurants you visit

    This is going to sound silly but this recipe says it serves 6 but you have 9 pieces cut in the pan…..is the calorie count for a piece and a half perhaps? Im doing the dreaded counting of calories and just need to know what size the serving is.

    1. We cut it into 9 for photos, but when we eat it, we usually have a heartier portion, but you can adjust the portion size to your liking. The nutritional info is an estimate.

    My granddaughter (8years) and I made the apple cinnamon baked oatmeal. It was delicious! Recipe works great as written. We used unsweetened canned coconut milk as our milk of choice and olive oil as our oil of choice when mixing recipe together.
