We have been picking A LOT of blackberries this summer. We’ve made jam and are still enjoying them in smoothies, with yogurt, ice cream, etc. BUT my favorite way to eat blackberries? Blackberry Cobbler! Oh, yes!

A cobbler is the perfect way to use up fresh summer blackberries. Cobblers are easy to make, a little rustic, and absolutely delicious, especially when served warm with vanilla ice cream. Summer dessert heaven!

Cobblers can have a biscuit topping (like our blueberry cobbler), pie dough topping, or a cake topping. This blackberry cobbler has a sweet, fluffy, vanilla cake-like topping that is absolutely delicious!

If you don’t have blackberries, you can use your favorite fruit. Blueberries, mixed berries, peaches, apples, or plums are all good options.

Cobbler Ingredients

Here are the ingredients you’ll need to make this incredible cobbler.

  • Blackberries – Look for blackberries that are deep black, plump, and juicy. If you can’t find good fresh fruit, you can use frozen berries.
  • Granulated sugar– to sweeten things up!
  • Cornstarch– to thicken up the berry mixture.
  • Lemon zest and lemon juice– you will love the hint of fresh lemon!
  • Flour– use all-purpose flour.
  • Baking powder– make sure it’s fresh!
  • Salt– always salt!
  • Milk– I recommend using whole milk for this recipe so the cobbler topping is nice and rich!
  • Unsalted butter– bring on the butter!
  • Vanilla extract– vanilla makes everything better!

How to Make Blackberry Cobbler

Use my step-by-step instructions for this easy and tasty cobbler recipe! Everyone at your table will love it and come back for seconds.

  • First the filling, then the topping! We’ll start by prepping with an oven at 350 degrees and a greased 9×13-inch pan or a 12-inch cast iron skillet.
  • Make the filling by adding blackberries, sugar, cornstarch, lemon zest, and lemon juice in a large bowl. Gently stir everything to combine it and set it aside while you make the cobbler topping.
  • Whisk the dry ingredients! Flour, sugar, baking powder, and salt all go together in a medium bowl. 
  • In a separate small bowl, whisk milk, melted butter, and vanilla together, then pour it all over the dry ingredients. Stir until everything is smooth, and don’t worry if the batter looks thin!
  • Now we put it all together! Add the blackberry filling mixture to the prepared pan in an even layer, then pour the topping over the berries. Finish it off with a sprinkle of granulated or turbinado sugar!
  • Pop it in the oven for 50-60 minutes. The filling will be bubbly and the topping will set to a beautiful light-golden brown. Let it cool for a full 30-60 minutes before serving so the cobbler can set up. I know, it’s hard to wait, but I promise it will be worth it!

How to Serve

Our favorite? A la mode! Top with a big scoop of vanilla ice cream for the ultimate cobbler experience. You can also serve the cobbler with a dollop of whipped cream or vanilla yogurt.

And of course, you can enjoy it plain, grab a spoon and dig in! You will not be disappointed!

  • Preheat oven to 350 degrees F. Grease a 9×13-inch pan or 12-inch cast iron skillet and set aside.
  • In a large bowl, add the blackberries, sugar, cornstarch, lemon zest, and lemon juice. Gently stir to combine. Set aside.
  • In medium bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a small bowl, whisk together the milk, melted butter, and vanilla.
  • Pour the liquid ingredients over the dry ingredients and stir until combined and smooth. The batter will be thin.
  • Add the blackberry filling to the prepared pan, making sure the blackberries are in an even layer. Pour the topping mixture over the berries. Sprinkle with turbinado sugar or granulated sugar.
  • Bake for 50 to 60 minutes or until bubbly and topping is set. Remove from the oven and let cool for 30 to 60 minutes before serving.
