  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or Silpat baking mat or parchment paper. Set aside.
  • In a medium bowl, whisk together flour, cocoa, baking soda, and sea salt.
  • With a mixer, cream butter and sugars together until smooth. Add in eggs, one at a time. Next, add in vanilla extract and mix until combined.
  • Gradually add flour mixture and beat until just combined. Stir in the pretzel pieces and chocolate chips.
  • Form the cookie dough into balls, about 2 tablespoons of dough. Place a caramel piece in the center of the dough ball, making sure the cookie dough completely covers the caramel. This will prevent the caramel from oozing out in the oven. Place on prepared baking sheet, about 2 inches apart. Sprinkle cookies with sea salt.
  • Bake cookies for 10 minutes. Remove from oven and let cookies cool on the baking sheet for 2-3 minutes. Transfer to a wire cooling rack and cool completely.

  2. These look incredibly tasty! Shame I went on a diet yesterday…sigh…I will save them for my cheat day…

  3. I am a chocaholic, sweet and salty fanatic, and a cookie monster, so I guess I will be forced to make and eat these 😉

  4. Did you notice that one of the cookies has  eyes and a smile? If you look at the first picture you can see it. It’s super cute!  Cookies look great! Can’t wait to make them.

  5. I’m fairly new to salty caramel (the past couple of months) – I absolutely love it and these cookies look gorgeous!

  6. Perfection. Seriously. A soft, cakey chocolate, gooey caramel and just the right touch of saltiness. I need these in my life, and SOON!

  7. You can also use Rolo candies for these! I make these (minus the pretzels) every year for Christmas and I’m mos def going to be including the pretzels and salt in the future!

  8. I added these ingredients to my grocery list as soon as you posted this recipe, and was finally able to make them this weekend. My roommate and boyfriend loved them, as did I! I frequently make your cookie recipes and love knowing that they will always be reliably delicious. Thank you for sharing!

    1. Mine did, too. I even used the Kraft brand like the recipe stated. I loved everything else about the cookie except the caramel bit. 🙂

I made these this evening. Great recipe. Very tasty EXCEPT the caramels in the center. I used the Kraft caramels and cut them in half per the recipe. It’s not so bad when the cookies are piping hot, but after they’ve cooled the caramels return to hard and super chewy. I’m not a fan. I will definitely make these again but I will omit the carmels.

I just made these (with a few twists) for a cookie contest at work . These are amazing.

For those commenting about the caramels, I used a homemade caramel sauce instead…which sort of worked, when it didn’t ooze out of the cookie. It wasn’t as gooey as I hoped, but didn’t harden after cooling as a result.

I really liked these. After reading reviews, I decided to soften the caramels in the microwave first, which really helped. Also, 10 minutes was too long for me. But I live in Colorado, so maybe that’s why.

  12. I work in a camp far from any stores I don’t have any caramel can’t  would love to make them as cookies are the most popular in camp something different than chocolate chip everyday    Can I add anything else and still get the same results please

Delicious fudgy cookies! I used dark brown sugar, chocolate chunks and Werther’s soft caramels for the center. Even when cool the caramel is soft and melted into the cookie. I initially thought 2 cups of sugar would be too sweet so I used only 3/4 c white sugar and I wish I had used the full cup. With the salt of the pretzel and topping you can really use a punch of sweetness to balance it out. Mine didn’t spread as much so I flattened them slightly before baking. The 2 Tbps serving size was perfect for 36 cookies too!

I’ll definitely be making these again!

Loveeeddddd how these came out. A few of them spilled but I think that may have been the result of where I placed the caramel. I also want to know how to reheat these after a day or two, to make the gooey caramel gooey again! Super chocolatey soo for those chocoholics this is for you!

  15. Well we’ve found a new favorite cookie!
We decided we need a few more pretzels too! I also added 1 tsp of espresso powder to make the chocolate POP!

    YUMMY! Thanks for sharing!

Love the sweet & salty! I am normally not a chocolate cookie person, but these were delicious! It reminded me of a brownie in a cookie. Would these do well baked as a brownie instead?

My cookies stayed a bit risen and didn’t spread like the picture, which was why I didn’t give this 5 stars. What wasn’t I doing? Should I have flattened them before, is there a technique I am missing? Anyhow, would make these again for any chocolate lovers! Thanks for the great recipe!

    1. Sounds like too much flour. Did you pack your flour? I always fluff my flour, spoon it into the cup and then level. Next time, reduce by 1/4 cup to be safe. That should help. Glad you liked the cookies!

I love these cookies and so does everyone in my family. I have been making them for a couple years now. I have altered it and not used the Caramels. I use caramel chips or Hershey’s salted caramel chips that I buy in the chocolate chip isle. They are super yummy!!!!

  18. Absolutely delicious!! Definitely the perfect cookie for a chocolate lover! A few things to consider : 2 tbsp. of dough with a caramel inside makes for an enormous cookie. My cookies didn’t spread out, like other reviewers, and were a bit stiff – which made for the caramel to remain hard and solid inside. About halfway through, I tried it with about half the dough and half the caramel and they were better. Just made for a large, stiff cookie. Not to mention, I had to double the cook time to make sure they were cooked all the way through… Although it tasted GREAT! Would love to know how to make these so they look like the picture – they’re definitely delicious!
