If you love a savory breakfast that will keep you satisfied all morning, this Sweet Potato Kale Breakfast Casserole needs to be on your menu! It’s packed with colorful vegetables, fluffy eggs, and plenty of cheese, making it a delicious way to start the day.
The sweet potatoes add natural sweetness and a hearty texture that pairs beautifully with earthy kale, red onion, and creamy eggs. Cottage cheese is one of my favorite ingredients to add to egg bakes because it boosts the protein and helps keep the casserole tender. Don’t worry if you’re not a cottage cheese fan; it blends right into the egg mixture.
The combination of mozzarella and feta is another favorite. Mozzarella melts into the eggs, while feta adds a salty, tangy bite that complements the sweet potatoes perfectly. Everything bakes together into a satisfying breakfast casserole that feels special but is easy enough to make any day of the week.
This sweet potato egg bake is perfect for weekend brunch, Christmas morning, Easter brunch, or a holiday breakfast when you want something hearty to serve alongside fresh fruit. It’s also a great option for Sunday meal prep. Make it ahead, refrigerate the leftovers, and you’ll have a protein-packed breakfast ready to reheat on busy weekday mornings.

Ingredients (with Helpful Notes)

- Olive oil: Helps the sweet potatoes and vegetables cook evenly without sticking to the skillet.
- Sweet potato: Peel and dice it into small, evenly sized pieces so it cooks through before the casserole goes into the oven.
- Red onion: Adds a little sweetness and savory flavor. Yellow onion works well, too.
- Water: A small splash helps steam the sweet potatoes in the skillet so they soften more quickly.
- Kale: Use fresh kale, remove the tough stems, and chop the leaves into bite-sized pieces. Curly or lacinato kale both work.
- Eggs: The base of the breakfast casserole. Large eggs work best for the right texture.
- Cottage cheese: Adds protein and helps make the egg mixture creamy and tender. You can use fat-free, low-fat, or full-fat, whatever you prefer!
- Mozzarella cheese: Melts beautifully into the eggs and gives the casserole a creamy, cheesy texture.
- Milk: Helps loosen the egg mixture and keeps the casserole tender.
- Garlic powder: Adds savory flavor without overpowering the vegetables.
- Crushed red pepper flakes: A small pinch adds gentle heat. Leave them out if you prefer a milder breakfast.
- Feta cheese: Sprinkled over the top for a salty, tangy finish that balances the sweet potatoes.
How to Make Sweet Potato Kale Breakfast Casserole
Soften the sweet potatoes. Give the sweet potatoes a head start in the skillet. They take longer to cook than the kale, and you want them tender before they go into the oven.

Add the vegetables. The red onion cooks alongside the sweet potatoes, adding flavor as everything softens. Stir in the kale at the end; it wilts quickly, so there’s no need to cook it for long.

Whisk up the eggs. Mix the eggs with the cottage cheese, mozzarella, milk, and seasonings until everything is well combined. The cottage cheese will give the finished casserole a tender, creamy texture.

Bring it all together. Spread the vegetables in your prepared baking dish, then pour the egg mixture over them. Finish with a generous sprinkle of feta.

Bake until set. Let the oven do the rest of the work. The casserole is ready when the edges are set and the center has just a slight jiggle. Let it rest before slicing so the pieces hold together.

Tips for Making the Best Breakfast Casserole
- Dice the sweet potatoes evenly. Smaller, uniform pieces cook faster and make the casserole easier to slice and serve.
- Don’t skip cooking the vegetables first. This gives the sweet potatoes time to soften and helps prevent excess moisture from the vegetables from affecting the egg mixture.
- Give the kale just a minute or two. It will continue cooking in the oven, so you only need to wilt it in the skillet.
- Season as you go. A little salt and pepper on the vegetables makes a difference, but remember that feta is salty, too.
- Whisk the egg mixture thoroughly. You want the cottage cheese, milk, seasonings, and eggs evenly distributed for a consistent texture.
- Watch the center, not just the edges. Ovens vary, so start checking around the 30-minute mark. The center should be set with only a slight jiggle, not liquid.
- Let it rest before cutting. Five to ten minutes gives the eggs time to settle, making cleaner slices.
- Use a 9×13-inch baking dish. This gives the casserole room to cook evenly without becoming too thick in the center.
How to Store
- Storing: Let the casserole cool, then transfer slices to an airtight container. Refrigerate for up to 4 days.
- Reheating: Warm individual portions in the microwave until heated through. For larger portions, reheat in a covered baking dish in a 325°F oven until hot.
- Freezing: You can freeze individual portions in freezer-safe containers for up to 2 months for best quality. Thaw overnight in the refrigerator before reheating. The texture of the eggs may change slightly after freezing.
- Make ahead: For the best texture, cook the vegetables, let them cool, and refrigerate them separately from the egg mixture. Combine everything in the baking dish and bake the next morning. You can also bake the casserole in advance and reheat portions throughout the week.

Variations
- Add more vegetables: Sautéed mushrooms or bell peppers are great additions. Cook vegetables that release a lot of moisture before adding them.
- Switch up the cheese: Try goat cheese instead of feta, or use cheddar in place of mozzarella.
- Add fresh herbs: Chopped parsley, chives, or thyme add a fresh finish.
- Make it spicy: Increase the crushed red pepper flakes or add a little diced jalapeño to the vegetables.
- Add more protein: Stir in cooked turkey sausage or crumbled breakfast sausage for a meatier casserole.
- Try a different green: Spinach or Swiss chard can replace the kale. Add them near the end of cooking since they wilt quickly.
- Use butternut squash: Replace the sweet potato with diced butternut squash, cooking it until tender before assembling the casserole.
