Is there anything more summery than watermelon? Add in sweet mango, crisp cucumber, and a little heat from jalapeño, and you’ve got yourself a salsa that screams sunshine.
This Watermelon Mango Salsa is one of those recipes I make again and again as soon as the temps rise. It’s super simple, insanely refreshing, and it’s a total crowd-pleaser whether I’m entertaining friends or just snacking at home with the fam.
I’ve taken this to BBQs, pool parties, and even just spooned it over grilled chicken or salmon for a light and flavorful dinner. Trust me, once you try it, you’ll find excuses to make it every week.
If you’re new to fruit salsas, this one is a fantastic place to start. It’s balanced, vibrant, and not overly sweet. The watermelon and mango are juicy and soft, but the cucumber adds a perfect little crunch. The jalapeño gives just the right kick, and the herbs and lime tie everything together.
And the best part? No cooking. Just chop, mix, and dive in.
Ingredients (with Helpful Notes)
- Watermelon: Use seedless, and dice it small for scoopable bites. Chill before chopping for extra refreshment.
- Mango: Choose a ripe one—it should give slightly when pressed. Ataulfo or Kent mangoes work beautifully.
- Cucumber: I like English cucumber for its thin skin and minimal seeds.
- Red onion: Dice finely to avoid overpowering bites.
- Jalapeño: Remove the seeds and ribs for milder heat, or leave a few in for more spice.
- Cilantro: Fresh is key. Chop just before using for best flavor.
- Mint: Adds a cooling twist that makes this salsa pop.
- Lime juice & zest: Use fresh lime juice and don’t skip the zest, it brings out the best lime flavor!
Tips for Making the Best Watermelon Mango Salsa
- Chop everything evenly. This makes the salsa easier to eat and ensures every bite has a bit of everything.
- Don’t skip the herbs. Cilantro and mint really bring this salsa to life. If you’re not a cilantro fan, you can omit and use more mint.
- Let it chill. If you have time, let the salsa sit for 15–30 minutes in the fridge to let the flavors meld. This salsa is best served chilled!
- Taste before serving. Adjust salt, lime, or jalapeño to your liking.
Ways to Serve the Salsa
- With tortilla chips: Classic, and always a hit!
- Topped on grilled chicken, shrimp, or salmon: Adds freshness and flavor.
- Tucked into fish tacos or shrimp tacos: Next-level taco night.
- Spoon it over burrito bowls: A bright, juicy contrast to beans, rice, and protein.
- As a side for BBQ dishes: Think pulled pork, ribs, or burgers.
- With cottage cheese: It may sound odd, but it’s SO good! My favorite!
