Chocolate Chip Zucchini Bars

One of my super powers is turning zucchini into delicious desserts. If you’ve tried my chocolate zucchini cake, zucchini brownies, or zucchini cookies, you know it’s true. I have a gift for making the green vegetable taste super decadent and super delicious.

These Chocolate Chip Zucchini Bars are my latest and maybe greatest zucchini dessert. I made them for a cookout last week and our friends LOVED them. The pan was gone by the end of the night and even the kids gave them two thumbs up. They had no idea they were eating vegetables for dessert!

Zucchini Bar Ingredients

  • Butter– I brown the butter to bring out the BEST flavor. I promise the extra step is worth it.
  • Flour– I use regular all-purpose flour, but if you need the bars to be gluten-free you can use gluten-free flour. I like Cup4Cup.
  • Baking powder– make sure your baking powder is fresh!
  • Spices– ground cinnamon, nutmeg, and ginger! The perfect trio!
  • Sea saltthis is my favorite sea salt to use.
  • Sugar– I use brown sugar and granulated sugar.
  • Eggs– you will need one large egg AND one egg yolk. The extra egg yolk makes the bars extra chewy.
  • Vanilla extract– a must!
  • Zucchini– you need 1 cup of shredded zucchini. You can grate the zucchini using a box grater or food processor. Give the shredded zucchini a good squeeze, but don’t squeeze out all of the liquid. You want the zucchini to have some liquid to keep the bars moist.
  • Chocolate chips– I prefer semi-sweet chocolate chips, but you can use milk or dark chocolate chips.

Easy Chocolate Chip Zucchini Bars

I love these zucchini bars because they are easy to make and the recipe makes a 9×13-inch pan, which makes them perfect for sharing! I love taking these bars to cookouts, potlucks, picnics, and parties! They are the perfect bar for sharing!

Plus, they help me use up some of our garden zucchini during the summer months!

Let’s get baking!

  • First, brown the butter. Place the butter in a medium saucepan and melt over medium heat, stirring often, until it foams, smells nutty, and browns. This will take about 5 to 7minutes. Scrape the browned butter into a large bowl. Let cool while you get your other ingredients ready.
  • In a medium bowl, whisk together the flour, baking powder, cinnamon, salt, nutmeg, and ginger. Set aside.
  • Add the sugars to the large bowl with the cooled brown butter and whisk until smooth. Add the egg, egg yolk, and vanilla extract.
  • Stir in the shredded zucchini. This is where the magic happens! The zucchini will make the batter super moist!
  • Add the dry ingredients and stir until just combined, don’t over mix. Fold in 1 cup of the chocolate chips.
  • Pour the batter evenly into the prepared pan and sprinkle with remaining chocolate chips. I love adding a little extra chocolate chips to the top, you can never have too much chocolate!
  • Bake for 25 to 32 minutes or until bars are set and a toothpick comes out clean when inserted into the center.
  • Remove from the oven and let cool. Cut into squares and enjoy!

  • Preheat oven to 350 degrees. Grease a 9×13-inch baking pan and set aside.
  • Place the butter in a medium saucepan and melt over medium heat, stirring often, until it foams, smells nutty, and browns. This will take about 5 to 7minutes. Scrape the browned butter into a large bowl. Let cool for about 10 minutes.
  • In a medium bowl, whisk together the flour, baking powder, cinnamon, salt, nutmeg, and ginger. Set aside.
  • Add the brown sugar and granulated sugar to the cooled brown butter and whisk until smooth. Add the egg, egg yolk, and vanilla extract. Stir in the zucchini and mix until well combined.
  • Add the dry ingredients and stir until just combined, don’t over mix. Fold in 1 cup of the chocolate chips.
  • Pour the batter evenly into the prepared pan. Top with remaining chocolate chips. Bake for 25 to 32 minutes or until bars are set and a toothpick comes out clean when inserted into the center.

    I made these bars for Sunday dinner and they were a hit! I put them in a 7×11 pan to increase thickness & added 2-4 additional minutes of baking time. These will be added to the family recipe book!

  2. I just made these bars hoping to take them to a church gathering. They are horrible. What did I do? The batter was thick when I put it in the pan and the baked bars taste like flour.
