Cookies are usually my dessert of choice, but this Chocolate Bundt Cake holds a special place in my heart. It’s our go-to homemade chocolate cake recipe. It never disappoints and always cures my chocolate cravings.

- Bundt Pan (I use this one from NordicWare)
Ingredients
For the cake:
- 1 cup unsalted butter plus more for the pan
- 1/3 cup cocoa powder we use Dutch process
- 1 teaspoon kosher salt
- 1 cup water
- 2 cups all-purpose flour plus more for the pan
- 1 3/4 cups granulated sugar
- 1 1/2 teaspoons baking soda
- 2 large eggs
- 1/2 cup sour cream or plain Greek yogurt
- 1 teaspoon pure vanilla extract
For the chocolate glaze:
- 4 ounces bittersweet chocolate finely chopped
- 1 1/2 tablespoons corn syrup
- 1/2 cup heavy cream
- 1 1/2 tablespoons granulated sugar
Instructions
- Position a rack in the center of the oven and heat to 350 degrees F. Butter and flour a 10 or 12-cup Bundt pan and set aside.
- In a small saucepan, combine the butter, cocoa powder, salt, and water and place over medium heat. Cook, stirring, just until melted and combined. Remove from the heat and set aside.
- In a large bowl, whisk together the flour, sugar, and baking soda. Add half of the melted butter mixture and whisk until completely blended. The mixture will be thick. Add the remaining butter mixture and whisk until combined. Add the eggs, one at a time, whisking until completely blended. Whisk in the sour cream (or Greek yogurt) and the vanilla extract. Whisk until smooth.
- Scrape the batter into the prepared pan and bake until a toothpick inserted into the center of the cake comes out clean, 40 to 45 minutes. Let the cake cool in the pan for 15 minutes and then invert onto a rack. Let cool completely before glazing.
- While the cake is cooling, make the chocolate glaze. Place the chopped chocolate and corn syrup (or agave) in a medium bowl and set aside. Combine the heavy cream and sugar in a small saucepan and put over medium heat. Stir until the cream is hot and the sugar is dissolved. Pour the hot cream over the chocolate and whisk until smooth.
- Generously drizzle the glaze over the cooled cake, allowing it to drip down the sides. Cut into pieces and serve.

Help! I used hersheys cocoa in this recipe recipe instead of the Dutch processed ! The Hersheys says unsweetened. Will this work out?

The only changes that I made: sprayed the pan with Pam for Baking, used a mixer, cake was done in 40 minutes, used 1 tablespoon of maple syrup instead of the 1.5 tablespoons of corn syrup.

I cut the recipe in half used a mini Bundt pan cooked it in my air fryer at 3:20 for 25 minutes it was perfect

As so many of your other reviews, I have to say, this is truly one of the best chocolate cake recipes I’ve ever made. And, the glaze is amazing. My husband was licking the bowl (which he never does)! Very yummy! I made some changes because I LOVE chocolate– instead of regular unsweetened cocoa powder I used Hersheys Special Dark Chocolate unsweetened cocoa powder. For water I made strong coffee and substituted. For the bundt pan I added some cocoa powder to the flour after buttering.
For the frosting I used 70% bittersweet Ghirardelli chocolate.

If anyone is wondering about Gluten Free, I used America’s Test Kitchen 1:1 Gluten Free Flour mix and added 1 tsp Guar Gum. As well, I didn’t have Dutch processed cocoa but my cake still turned out great. We used store chocolate frosting to make things easier and served it with chilled Cherry Pie filling. It was amazing! Thank you so much for sharing this easy, delicious recipe. It is going straight in my recipe book and will be my go-to Bundt Cake now, possibly even my go-to Chocolate Cake – it’s that good!

I made this today and after I waited 15 minutes to invert onto to a cooling rack it would not release. After finally getting it out the top of the cake was stuck to the pan. I used a baking spray could of that been it ? The flavor was delicious though. I plan to remake it. Any tips ? I would greatly appreciate it.

This came out way more dense than I expected. The only thing I did differently was use a mixer instead of a whisk. Don’t get me wrong, it was still amazing and my co-workers absolutely inhaled it. I will say I did use one of the comments to make a slight adjustment to the recipe, instead of water, I use coffee to bring out the chocolate flavor more.

I baked this cake today. Delicious. Only problem for me was that I sprayed my bundt pan with coconut oil and the cake stuck to the pan a bit. Will try it again using butter and dusting with flour. Other than that, the cake really was light, moist and perfect with cold glass of milk. Thank you.
8/19/2023 – This was my second time making this Bundt cake and it came out exactly like the first time… PERFECT! Love this recipe. The only thing I do different is skip the glaze; we’re more of a whipped cream family.
