Easy Cucumber Salad that is gluten-free and vegan

Easy Yet Complex Cucumber Salad

This cucumber salad is perfect for summertime. It is cool, crisp, and so easy! Plus, it will help you use up your garden cucumbers. The salad is simple, but the flavors are not. You will be wowed by one bite!

The flavors are amazing! For the salad, you need:

  • cucumber
  • rice wine vinegar
  • sesame oil
  • cilantro
  • scallions
  • garlic
  • ginger
  • sesame seeds
  • crushed red pepper

Slice the cucumbers thinly with a sharp knife. You can use garden cucumbers or store bought cucumbers.

Make sure you use fresh ginger, you can buy it in the produce section of any grocery store. I always keep ginger in the freezer so we have it on hand at all times. I use a mircoplane to grate the ginger. If you don’t have a microplane, you can finely chop it.

If you don’t like spicy, you can leave out the crushed red pepper flakes. There will still be plenty of flavor.

This easy cucumber salad goes great with any summer meal. We like to serve it with Instant Pot Honey Sesame Chicken in the summertime. You don’t have to heat up the house with the Instant Pot or this easy salad.

Make this easy and refreshing Asian Cucumber Salad today! It is sure to be a summer favorite!

  1. This looks delicious and reminds me of a jazzed-up version of a cucumber salad my granny use to make with fresh cucumbers from her garden. I try to avoid cane sugar. Do you think maple syrup would work as a good substitute in this recipe?

    1. Delish! I subbed SWERVE for the sugar as I’m watching my carbs and it’s yum.

  2. hey girl this looks really tasty! and I would love to help if I lived closer! Y’all try to enjoy getting things organized and the way you want them! Love ya’ll!

  3. Trading cookies for unpacking boxes is the way to go! Love this easy recipe for these hot days we’ve been having.

  4. I love all tangy cucumber salads! They’re so refreshing! I love that you added some spice to this 🙂

  5. Made this refreshing salad as a side dish this week. It was delicious and I really don’t love cucumbers. Will definitely make this again. Thanks.

I just skip the sugar on many recipes and this recipe is a keeper. Served COLD its delish. I also made it without the cilantro once since I didn’t have any and still very good!!!

  7. Delicious salad! Make sure to eat it right away or the cukes will get soggy. I always add a little fresh minced mint to it.

To hear my husband clanking the bottom of his dish is a 1st, I believe, in our marriage and my cooking. Kudos to you! Absolutely delicious!

I made this recipe tonight and it’s a keeper! I used powdered swerve instead of granulated sugar. Sweet, spicy, tangy, and refreshing. I will be making this again. Thank you!

  10. This is fantastic! I used 1 cucumber and kept the dressing ingredients the same. Swapped truvia for sugar. It is great on its own or on an Asian tossed salad with chicken and snow peas.

  11. How long can the dressing keep in the fridge? I want to make this as a lunch for myself, spreading the portions out for 2-3 days.

  12. 5 stars
We LOVE this recipe. I add shredded carrots for color and black and beige sesame seeds. Thank you! It’s a light crunchy side to “Chinese” night at our house.

  13. 4 stars
Very good!! I had to tweak just for personal preference. Added more sugar and a drop more sesame oil (a little too vinegar-y for me). Also added paper-thin slices of radish for a bit of a bite instead of red pepper since grandchildren would be eating them. Thanks for sharing!

  14. 5 stars
So refreshing and delicious! Worth the extra time it takes to finely dice the FRESH cilantro, garlic, ginger, and scallions.
