Crispy Black Bean Tacos for an Easy Weeknight Dinner

If you’re a fan of my crispy chicken tacos, you’ll love this vegetarian version. These Crispy Black Bean Tacos have the same crispy, cheesy goodness, but with a flavorful black bean filling that makes them perfect for an easy meatless dinner.

The black bean filling starts with onion and red bell pepper, then gets seasoned with chili powder, cumin, smoked paprika, and garlic. Salsa adds a little moisture and flavor, while fresh lime juice and cilantro brighten everything up at the end. I like to lightly mash some of the black beans so the filling holds together when you fold the tacos, but you still get plenty of whole beans in every bite.

And the best part? You don’t need to fry the tacos. A light brushing of avocado oil and a hot oven are all you need to get them beautifully crisp. Just make sure you don’t skip warming the tortillas first, it makes them soft and pliable so they fold without cracking.

These tacos are a great easy weeknight dinner, but they’re also fun for Taco Tuesday, casual entertaining, or any night when you want a meatless meal that doesn’t feel like you’re missing anything. Put all of the toppings on the table and let everyone build their tacos just the way they like them.

Ingredients (with Helpful Notes)

  • Avocado oil: I use avocado oil for cooking the filling and lightly brushing the tortillas so they crisp up beautifully in the oven.
  • Yellow onion: Adds savory flavor and sweetness to the black bean filling.
  • Red bell pepper: Adds color, flavor, and a little sweetness.
  • Garlic: Fresh garlic gives the filling a nice savory boost.
  • Chili powder, cumin & smoked paprika: This trio gives the black bean filling warm, smoky, taco-seasoned flavor. Taco seasoning will also work if you don’t have all three spices.
  • Black beans: Canned black beans make this recipe quick and easy. Rinse and drain them well before using.
  • Salsa: Adds moisture and extra flavor to the filling. Use your favorite salsa.
  • Cilantro: Fresh cilantro adds a pop of freshness.
  • Fresh lime juice: A little acidity at the end brightens all of the flavors.
  • Corn tortillas: Corn tortillas are perfect here and get wonderfully crisp in the oven. Warming them first keeps them from cracking.
  • Monterey Jack or cheddar cheese: Both melt beautifully. You can use one or a combination of the two.
  • Toppings: Guacamole, pico de gallo, and jalapeño ranch are my favorites, but you can use whatever taco toppings you love.

How to Make Crispy Black Bean Tacos

  • Make the filling. Sauté the onion and bell pepper until tender, then add the garlic and spices. Stir in the black beans and salsa, lightly mashing some of the beans so the filling holds together.

  • Warm the tortillas. A quick turn in the microwave makes the corn tortillas soft and easy to fold. Don’t skip this little step!
  • Fill and fold. Add the black bean mixture and plenty of cheese to each tortilla, then fold them over. Give the tortillas a light brush of avocado oil to help them get nice and crispy.

  • Bake until crispy. Bake until the tortillas are golden and crisp and the cheese is melted. Flip them halfway through so both sides get perfectly crispy.

  • Add the toppings. Pile on the guacamole and pico de gallo, then finish with a drizzle of jalapeño ranch. These are best served hot and crispy!

Tips for Making the Tacos

  • Warm the tortillas first. This is the easiest way to prevent corn tortillas from cracking when you fold them.
  • Don’t overfill the tacos. A thinner layer of filling crisps better and makes the tacos easier to eat.
  • Lightly oil the tortillas. You don’t need much oil—just enough to help them turn golden and crisp.
  • Leave space between the tacos. Give them room on the sheet pan so the tortillas can crisp instead of steaming.
  • Lightly mash some of the beans. This helps the filling stick together while still giving you plenty of whole black beans.
  • Use freshly shredded cheese if you can. It melts especially well and gives you those delicious cheesy, melty centers.
  • Serve them right away. They’re at their crispiest straight from the oven.

How to Store and Reheat

  • Store leftover crispy black bean tacos in an airtight container in the refrigerator for up to 3 days.
  • For the best texture, reheat the tacos in a 375 degree F oven or in an air fryer until hot and crisp again. I don’t recommend the microwave if you’re trying to keep the tortillas crispy.
  • Store toppings separately and add them after reheating.

Crispy Black Bean Tacos

Ingredients
  

For the tacos:

  • 1 tablespoon avocado oil, plus more for greasing and brushing tortillas
  • 1/2 yellow onion, diced
  • 1/2 cup diced red bell pepper
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1 (15 oz) can black beans, rinsed and drained
  • 1/4 cup salsa
  • 2 tablespoons chopped cilantro
  • 1 tablespoon fresh lime juice
  • 12 corn tortillas
  • 1 1/2 cups shredded Monterey Jack or cheddar cheese

Instructions
 

  • Preheat the oven. Preheat the oven to 425°F.
  • Cook the filling. Heat 1 tablespoon avocado oil in a large skillet over medium heat. Add the onion and red bell pepper and cook until softened, about 5 minutes. Stir in the garlic, chili powder, cumin, smoked paprika, and salt and cook for 1 minute, until fragrant.
  • Add beans and finish filling. Add the black beans and salsa. Cook for 2–3 minutes, stirring occasionally, until warmed through. Lightly mash some of the beans to help the mixture hold together. Remove from heat and stir in cilantro and fresh lime juice.
  • Warm tortillas. Warm tortillas until soft and pliable (wrap in a damp paper towel and microwave for 30–60 seconds).
  • Assemble tacos. Lightly grease a large sheet pan with avocado oil. Brush both sides of each tortilla lightly with avocado oil. Place the tortillas on the prepared sheet pan. Spoon the black bean mixture onto one half of each tortilla, then top with shredded cheese. Fold the tortillas over and gently press to seal.
  • Bake. Bake for 15–20 minutes, flipping halfway through, until the tacos are golden and crispy and the cheese is melted.
  • Serve. Serve warm with guacamole, pico de gallo, and a drizzle of jalapeño ranch.

Notes

  • Warm the corn tortillas before assembling to prevent cracking.
  • Don’t overfill the tortillas. A thin layer of filling will crisp up better.
  • Leave space between the tacos on the sheet pan so they can get crispy.
  • Leftovers can be refrigerated for up to 3 days. Reheat in the oven or air fryer for the best texture.
  • You can use Monterey Jack, cheddar, or a combination of both.
  • For a spicier taco, use spicy salsa or add diced jalapeño to the filling.
