It’s a good thing I eat a lot of salads during the hot summer months because I also eat a lot of ice cream. They balance each other out:)

My current favorite ice cream treat is this Twix Ice Cream Pie. You guys, it is all kinds of wonderful. Here is the low down, shortbread cookie crust with a layer of chocolate, vanilla ice cream, chopped up Twix candy bars, and salted caramel sauce. Sounds heavenly, right? Yep, it is and you need to make it ASAP!

I don’t buy candy bars very often, only when I want to make a special dessert. If they are incorporated into a recipe that somehow makes them better for me. I think it takes away the calories. Shhh. I know that is crazy thinking, but I don’t care:)

Our family loves Twix candy bars so I thought it would be fun to use them in a fun summer dessert.

I started with shortbread cookies. I didn’t make my own, I just used store bought cookies. Sometimes it is ok to cheat:) I combined the shortbread cookie crumbs with melted butter and pressed them into a pie plate. I baked the crust for 10 minutes and had a perfect pie crust. Easy peasy!

Next, I added melted chocolate to the bottom of the shortbread pie crust. Shortbread cookie crust with chocolate? All kinds of YES! I let the chocolate harden in the freezer while I stirred up my ice cream.

I added chopped up Twix candy bars and salted caramel sauce to softened vanilla ice cream. I wanted to eat the entire bowl with a spoon, but I knew the pie would be worth the wait, so I poured the ice cream mixture into my crust. I garnished the pie with more Twix candy bars and a drizzle of salted caramel sauce. Swoon!

I put the pie in the freezer for a couple of hours so the ice cream could set up. The wait seemed like FOREVER! I kept pacing back and forth by the freezer. I couldn’t stand the suspense. I wanted a piece of pie!

When the pie was ready, I took it out of the freezer and cut it into slices. I took a few quick photos for all of you and then I sat down with my glorious piece of pie. It was well worth the wait. This Twix Ice Cream Pie is AH-mazing! I loved every single bite.

Twix Ice Cream Pie

Twix Ice Cream Pie-shortbread cookie crust with a layer of chocolate, vanilla ice cream, chopped Twix candy bars, and salted caramel sauce. This ice cream pie is almost too good to be true!

Ingredients
  

For the Crust:

  • 2 1/2 cups shortbread cookie crumbs (about 22 cookies)
  • 1/4 cup melted butter

For the Ice Cream Pie:

Instructions
 

  • Preheat the oven to 350 degrees F. In a medium bowl, combine shortbread cookie crumbs and melted butter. Press into an ungreased 9-inch pie dish. Bake for 10 minutes. Let crust cool on a wire cooling rack.
  • In a microwave safe bowl, melt the chocolate chips, stirring occasionally. Pour melted chocolate in the bottom of the pie crust. Put the crust in the freezer until the chocolate hardens, about 15-20 minutes.
  • While the chocolate is hardening, remove your ice cream from the freezer to soften. Once softened, stir in the salted caramel sauce and 1 cup of the chopped Twix candy bars.
  • Remove crust from freezer and pour ice cream mixture into the crust. Smooth the top. Garnish with the remaining 1 cup chopped Twix candy bars and salted caramel sauce. Carefully cover pie with plastic wrap, making sure it doesn’t touch the pie. Place pie in freezer and freeze until ice cream hardens, at least 2 hours.
  • When ready to serve, remove pie from freezer. Run a sharp knife under hot water. Cut the pie into slices and serve immediately.
  • Note-to make the cookie crumbs for the crust, place the cookies in a zipped plastic bag and crush with a rolling pin. Alternately, you can use a food processor.
