Monday (3/23): Lemon Orzo Salad with Asparagus, Spinach, and Feta– we love this salad and it’s perfect for spring!
Wednesday (3/25): Creamy Polenta with Roasted Mushrooms– creamy polenta is good by itself, but the roasted mushrooms make this recipe extra special.
Thursday (3/26): Taco Salad with Homemade Tortilla Bowls– Jazz up taco salad night by making Homemade Tortilla Bowls! They are fun to make and fun to eat too!
Friday (3/27): Lemon Arugula Pizza– a thin crust pizza with fresh mozzarella, parmesan, arugula, and a splash of fresh lemon juice-who wants a slice? Make Triple Chocolate Chunk Oreo Cookies for dessert!
Saturday (3/28): I love making special breakfasts on weekends and these Cinnamon Streusel Pancakes are definitely special! They are our very favorite! Josh would eat them every Saturday if I let him:) They are a real treat! Eat leftovers or eat out for dinner!
Sunday (3/29): Asparagus, Spinach, and Feta Quiche – we like making this quiche for dinner. Serve Kale, Strawberry & Avocado Salad with Lemon Poppy Seed Dressing on the side and Meyer Lemon Pudding Cake for dessert and you’ve got a fabulous spring meal!
