Monday (2/2): Crispy Gnocchi with Basil Pesto-store bought gnocchi makes this dish a breeze! It is the perfect Monday night meal!
Tuesday (2/3): Fall Vegetable Quinoa Soup-this healthy, one-pot soup is perfect for a chilly day! We like to bake up a batch of Cheddar Rosemary Corn Muffins to go with the soup!
Wednesday (2/4): Stacked Roasted Vegetable Enchiladas-my favorite enchiladas! They are so easy and sooo good! If you happen to have any leftovers, re-heat for lunch or put them in the freezer!
Thursday (2/5): It’s my birthday so I am not cooking tonight! I deserve a night off..ha! You can eat leftover soup or enchiladas for dinner. Celebrate with me and enjoy Chocolate Cookie Ice Cream Bars for dessert!
Friday (2/6): Smashed Chickpea and Avocado Sandwiches-after a long week it’s nice to have simple sandwiches for dinner! Serve with orange or apple slices! Easy peasy!
Saturday (2/7): Orange Ricotta Chocolate Chip Pancakes-it’s my birthday weekend so we are having these decadent pancakes for breakfast! You should too! Eat leftovers or make a simple salad for dinner!
Sunday (2/8): Pasta with Kale, Kalamata Olives, Dried Cranberries, Toasted Garlic, & Feta-I could eat this pasta dish every day. It is simple to make and the flavors are outstanding. Serve with homemade Focaccia Bread and Apple Cake with Cream Cheese Frosting for dessert!
I was literally on your blog yesterday trying to get ideas for dinner this week! I didn’t even know you published meal plans. This makes it so much easier and I love that you give suggestions what to pair it with! I am total dunce when it comes to meal planning so thank you so much! I love your site 🙂

What I love most about these plans is how simple they are. I’ve gotten into a habit, or just have this idea, that we need a full on, elaborate supper every night. Seeing what you post gives me permission to simplify, which is what I need to do.
I also love all the vegetarian recipes b/c we are not huge meat eaters.
