Weekly Meal Plan

Happy weekend and happy meal planning! We hope you enjoy our picks for this week’s meal plan! Enjoy!

Week 7:

Monday (3/2): Mexican Rice Bowl-Mexican Rice Bowls are fun and easy to make. Let everyone top their bowls with their favorite toppings! I am topping my bowl with Green Chile and Roasted Tomato Guacamole.

Tuesday (3/3):  Brussels Sprout Pomegranate Citrus Salad-This salad is fresh, light, and easy to make! Josh is making Buttermilk Oven Fried Chicken for the boys to enjoy with the salad!

Wednesday (3/4): Butternut Squash Mac and Cheese-If you are a little skeptical about adding butternut squash to your mac and cheese. Don’t be. It makes the most creamy, flavorful mac and cheese ever! Have some Lemon Blueberry Bars for dessert!

Thursday (3/5): Potato Rosemary Soup-It is so easy to make and very comforting and filling. The potato soup is hearty and thick with a hint of rosemary. It also has feta cheese which adds a nice creamy texture. We like to make a big pot so we can enjoy leftovers for lunch or dinner the next day.

Friday (3/6): YAY! It’s Friday! Heat up leftover soup for dinner and make a simple Kale, Strawberry, and Avocado Salad to go with! Make a batch of these Chewy Coconut Oatmeal Cookies for a fun Friday night treat!

Saturday (3/7): Baked French Toast Muffins-Instead of making French toast in a big pan, make it in muffin tins for a fun change! Caleb loves these muffins! They are a real treat! Go out for dinner or make something simple.

Sunday (3/8): Baked Pasta with Spinach and Ricotta-This easy baked pasta is a family favorite and super comforting! We’ll be making a batch of Focaccia Bread to go with ours and S’mores Pie for dessert!
