Tomatillo Salsa

Tomatillo Salsa-you only need 6 ingredients to make this easy blender salsa. It is a perfect match for tortilla chips, tacos, burritos, quesadillas, enchiladas, and more!

Fresh tomatillo Salsa in bowl

Tomatillo Salsa, sometimes called salsa verde, is one of our favorite salsas to make during the summertime, along with pineapple, peach, and mango salsa! We love making salsa!

While most salsa verde recipes call for roasting or charring the tomatillos first, this raw recipe is much easier and preserves the tart flavor and bright green color of the tomatillos. The flavor is a little more sour, but so good with salty tortilla chips and all of your favorite Mexican dishes.

Tomatillo Salsa in bowl with cilantro

The Tomatillo

Tomatillos are the star ingredient! You can find tomatillos at most grocery stores in the produce section. They look like small green tomatoes, but have a husk around the outside.

Picking The Right Tomatillo

Look for tomatillos with a husk that covers most of the fruit. Make sure the husks aren’t torn or damaged. The husk should be relatively tight, and the fruit inside should be firm, but not rock-hard. If the tomatillos are squishy, they are overripe.

How to Peel Tomatillos

Tomatillos can be eaten raw, they are a little tart and have a sharp flavor. When roasted or grilled, their flavor mellows out and the flavor is a little sweeter.

To remove the husks, simply peel them back from the smooth green skin. Make sure you wash the green flesh to get rid of the sticky film left by the husks.

Fresh Tomatillo Salsa

If you prefer a tart salsa, you don’t have to roast the tomatillos. Place the tomatillos, onion, garlic, cilantro, lime juice, and Serrano chiles in the blender and blend! Season with salt and pepper and you have the most amazing fresh salsa!

The color will be super bright green and you will want to grab a bag of tortilla chips and start dipping ASAP!

Tomatillos cut in half for tomatillo salsa

Roasted Tomatillo Salsa

If you want to make a roasted salsa verde, you can roast the tomatillos before blending.

  • Preheat the broiler.
  • Line a large baking sheet with foil. Cut the tomatillos in half and place cut side down on a baking sheet.
  • Place the tomatillos under the hot broiler for 5 to 7 minutes or until the skins are lightly blackened.
  • Let cool to room temperature before blending.

I have an older Roasted Tomatillo Salsa Recipe that you can check out too.

Serving Suggestions

Serve the tomatillo salsa with tortilla chips, tacos, burritos, quesadillas, taquitos, enchiladas, tostadas, use it as a dressing for taco salads or burrito bowls…the options are endless!

This easy Tomatillo Salsa is going to be a staple in your home! You can blend it up in no time and it’s SO good! Enjoy!

How to Store

Keep the salsa in a jar or container, covered, in the refrigerator for up to one week. Ours usually doesn’t last that long because we like to put it on all of the things!

Wow I never knew making my own salsa Verde could be so easy and painless, thank you! I will be making my own going forward.

  162. I am obsessed with your blog and the This and That emails every Thursday. I read them every week! I feel like we are friends. Thanks for the great job you do on this site. Lovely work. I can’t wait to make this salsa.

  163. I would LOVE a copy of this book. Even if I don’t win I will try and find it online. Side note, your recipes are spot on and foolproof. Thank you so much. I have used your recipes many times but my fav is the chickpea guacamole. I spread it on toast and use it for tacos.

  164. This looks great and so simple!  Once I get my hands on some tomatillos, I will be trying this!

  165. This looks yummy! Can’t wait to make it and add it to my list of favorite recipes that I have gotten from you!

  166. Dear Two Peas, I have followed you from the beginning. You always have fresh and inviting recipes and posts. Very sweet family. Thank you.

  175. I was just looking at blenders at Target because mine died, so I could use a new one–a Vitamix!!!!! And my daughter needs the cookbook (but only after I read it and try out a few recipes first!)

  176. This looks so good. I have never made salsa but I would love to try. Thank you for the opportunity to win!

    **T H A N K S ** for the giveaways! Good Luck to ME!!!

  182. I have never worked with tomatillos, so I am excited to try this salsa! Looks so fresh and tasty! Thanks, Maria!

  191. 5 stars
This is my favorite salsa! Looks a lot more uniform using your vitamix compared to my blender!! I could literally drink this stuff! (It’d have a lot less carbs that way than the bag of tortilla chips I normally eat this with!) 🙂

  192. Looks so fresh and tasty! I used to live in Texas and am now in the PNW. Hard to get authentic and good Mexican food around here. My husband and I make it ourselves, even fresh flour tortillas! This will be a perfect addition to our repertoire! Thanks, Maria…we have made many of your recipes and they are always fantastic!

  197. That salsa looks amazing, what a gorgeous color!! All I need are the tomatillos and peppers to make it. Maybe this weekend! Also, I have been wanting a Vitamix for so long. I’m still using an ancient blender that JUST WON’T DIE, but it’s not the best at blending things up well…still some chunks. I would be over the top excited to win one!

  198. We’re making tacos for dinner tonight… wish I had the ingredients on hand to make your tomatillo salsa tonight! Thanks for the chance to win a Vitamix – that would be awesome!

  199. I have been eying the Vitamix but haven’t been brave enough to go for it. It would be so great to win one. Thank you for doing this giveaway.

  216. Great timing for this post. I recently returned from a Mexico City and have been missing the amazing street food. Salsa Verde was on my list to make!

  217. Years ago, when my husband and I were just out of college and had no money, a good friend of ours bought a Vitamixer. We made so much fun of him for wasting his money, but now in a different place in our lives, with a house and a family of four, our blender gets used much more frequently and the idea of spending that much money on a blender seems a little more justified.

  218. #1 – That salsa looks and sounds amazing! Def want to try it!
#2 – Wouldn’t love to have a Vitamix! It would be great for all of the fruit-base ice pops we make!

  219. I wish I had a huge bowl of that right this minute…Friday afternoon and all! It looks beautiful…
