Monday (6/1): Orzo Salad with Chickpeas, Cucumbers, Lemon, Dill, and Feta-serve with watermelon and dinner is done!
Tuesday (6/2): Whole Wheat Blueberry Granola Pancakes-it’s a breakfast for dinner kind of night. Make scrambled eggs and bacon to go with, if you wish. My boys always wish for bacon:)
Wednesday (6/3): Fettuccine Alfredo-you only need 4 ingredients to make this classic and comforting pasta dish!
Thursday (6/4): Power Salad with Lemon Chia Seed Dressing-this salad gets topped with all of my favorite healthy ingredients!
Saturday (6/6): Baked Blueberry Coconut Oatmeal-make this easy baked oatmeal for breakfast! If you have leftovers, they reheat well. We like to make a big pan to eat during the week. Eat leftovers or eat out for dinner!
Sunday (6/7): Get out the grill and make Grilled Ratatouille Pasta Salad and Honey, Lemon, and Rosemary Grilled Chicken. Serve Deep Dish Biscoff Oatmeal Toffee Cookies for dessert. Don’t forget the ice cream!
Tip-several recipes include lemons and blueberries this week! Stock up when you are at the store.
