Are you excited to see what is on the menu this week? We are making the most of our zucchini supply! We hope you enjoy dinner this week!
Monday (8/24): Lemon Arugula Pizza– No one in our house ever says no to pizza night and tonight I’m making one of my favorites! Serve fresh peach slices on the side.
Tuesday (8/25): Zucchini Ribbon Salad with Sweet Corn and Avocado-Trying to get my fill of fresh zucchini while summer is still here! We love this fresh and simple salad!
Wednesday (8/26): Take a break and eat leftovers or get takeout! Make a loaf of Zucchini Banana Bread for breakfast or for snacking on this week!
Thursday (8/27): BBQ Chicken Salad– If you think salads are boring then you have to try this one! I leave the meat off of my salad and it’s still plenty flavorful! Make Three Cheese Zucchini Drop Biscuits to go on the side!
Friday (8/28): Quinoa Salad with Mango, Currants, Almond and Mint– It’s not summer in our house without this salad being made. This is definitely a flavor packed favorite! Treat yourself to a Salted Caramel Brownie Milkshake!
Saturday (8/29): Orzo Salad with Chickpeas, Cucumbers, Lemon, Dill, and Feta– This salad is perfect on a hot day. Serve watermelon slices on the side!
Sunday (8/30): Creamy Basil Polenta with Roasted Tomatoes – I’m using up some garden tomatoes for this creamy polenta and serving it with a side of Melon Salad with Mint, Lime and Sea Salt. For dessert, serve Chocolate Zucchini Cupcakes-I promise you won’t know these rich and decadent cupcakes have zucchini in them! They are SO good!
Note-stock up on zucchini this week, if you don’t already have a pile on your counter:) Several recipes use zucchini! I am trying to make a dent in our supply:)
