Looking for dinner inspiration? You came to the right place! We have lots of delicious dinner ideas for  you this week! Enjoy!

Monday (5/18): Spring Pasta Salad-this simple pasta salad is loaded with all of your favorite spring veggies! Josh is making Honey, Lemon, and Rosemary Grilled Chicken to go with!

Tuesday (5/19): Green Chile Enchilada Quinoa Bake-this enchilada bake is a family favorite. Our 3-year old always asks for seconds! Serve Strawberry Mango Salsa and chips on the side!

Wednesday (5/20): Eat leftovers for dinner! Make No-Bake Peanut Butter Pretzel Chocolate Chip Granola Bars for a sweet snack! They are easy to make and better than store bought!

Thursday (5/21): Roasted Vegetable Pita Sandwiches-serve the sandwiches with Tzatziki Sauce and a simple fruit salad.

Friday (5/22): Three Bean Tacos-you can have these tacos on your dinner table in less than 20 minutes. A great meal for Friday night!

Saturday (5/23): Start your Saturday with Vegan Banana Blueberry Muffins. Make Greek Cucumber Noodles for dinner!

Sunday (5/24): Roasted Asparagus Risotto-a great dish for spring! Make a simple Kale, Strawberry, and Avocado Salad to go with and Rhubarb Berry Crisp for dessert!
