Weekly Meal Plan

Use this weekly meal plan to get dinner on the table every night of the week! Plus, we have ideas for Cinco de Mayo and Mother’s Day this week! It is going to be a FUN and delicious week!

And we have some exciting news to share today! We are partnering with American Express and Hilton and are going on a family vacation to Maui, staying at the Grand Wailea – A Waldorf Astoria Resort! Before we move into our new house, we decided to go on an early summer trip. Monday (5/2): Spring Vegetable Zucchini Noodle Soup– This soup is loaded with spring vegetables and the noodles are made with zucchini! You will get your veggies in with this healthy and delicious soup! Serve crusty bread on the side!

Tuesday (5/3): Sausage and Potato Bake– My boys love this easy and hearty meal! Serve Greek Yogurt Biscuits on the side.

Wednesday (5/4): Creamy Butternut Squash Pasta– This creamy and healthy pasta is good in the spring too!

Thursday (5/5): Happy Cinco de Mayo! Celebrate with Creamy Spinach and Cheese Green Chile Enchiladas, Restaurant Style Salsa, Mango Guacamole, and Homemade Tortilla Chips! Make Key Lime Pie for dessert!

Friday (5/6): Eat leftover enchiladas for dinner! Make Toasted Coconut Kettle Corn for Friday night movie night!

Saturday (5/7): Start your Saturday with Crunchy Quinoa Granola, yogurt, and berries! Go out to dinner or eat leftovers!

Sunday (5/8): Happy Mother’s Day! Spoil mom with Raspberry Almond Scones for breakfast. Make Spinach and Artichoke Quinoa Bake for dinner. Serve a Strawberry Spinach Salad on the side and enjoy Strawberry Shortcake for dessert!
